The What's For Dinner Thread - May '09(recipe index in OP)

I just got in from work, we are as ready as we'll be for Day Camp. I have to get some stuff done tonight but that's it. We don't have any food... I will either run to the store and buy some things or drive through someplace later.

I was in the ER & I have viral bronchitis. Of course when I was there I had no fever now I'm over 102....they gave me breathing treatments & chest xrays.
The pain in my body is unbelievable. The 1st think they asked me was have I flown:confused3
I'm on steroids, Motrin an inhaler

Oh my gosh!! I'm so so sorry :hug: You must feel horrid to brave the ER on a holiday weekend. I hope you get some relief soon :hug:

It was all yummy, but after a Sangria disaster, there was no time for pics. I made the whole pitcher of red Sangria in my plastic/looks like glass picture. As I lift it to pour a bit to taste, I hear cracking :eek:& the handle came off! Sangria flowed everywhere! It took 3 of us about a half hour to get it all cleaned up. But then I really needed that drink, so I made another batch in my iced tea pitcher.

Bethany, I'm glad that you are able to laugh at the heat! We all thought it was pretty awful here yesterday. Even getting in the pool didn't help the water temp was at 94!

As for the heat...it's not really bothering me... (yet?) If it gets humid you'll hear about it. :lmao: Last year in mid-July we played 18 holes of mini-golf on a course with no shade in 107 degrees. :confused3

Kathy -- I hope your stomach is feeling better.

Lauren -- I hope you're feeling better too. You have your hands full with Tom away. I know Andrew is such a big help though.

Maria -- I'm sorry you are so sick. Take it easy, take the meds, and make sure you call again tomorrow if you feel worse or the fever spikes.

Ann -- I'm so sorry you had to go through all that.

Janice -- Your menu sounds amazing!

Sheryl -- I would be so mad about the sangria! I would need more than one drink after that.

Bethany -- I'm so glad you're having fun. You must be so excited to get your new dog tomorrow.

Speaking of pets, I don't think I mentioned that Greg and Liam walked in the other day after their boys' day out with two frogs and 30 crickets. Greg thought it would be a good idea to get Liam a different pet since his fish died, so Greg picked the frogs that only eat crickets. I hate crickets. When I was a kid, I lived in a cricket-infested house. We spent most of the summer killing them or hunting them down in the middle of the night. Needless to say, the frogs and the crickets went back to the pet shop.

We had another fun day. Liam had his first practice with his summer team this morning, then we went to see a vintage baseball game. They play 1880's style ball. It was entertaining, but we left after one inning because Caili was broiling in the sun. After that we went to my ILs for clam chowder (I made it), and take-out steamers, fried clams and fried haddock. Yum! I don't want to get too optimistic, but we have had two sunny days here in a row. :yay:

Maria--so sorry that you are so sick! Take care of yourself and get better.

Ann--glad to hear that the nurse thinks the swelling is nothing to worry about. Take care of yourself too.

Sheryl--OH NO on the Sangria! Glad you had enough sense to have enough supplies for a backup!;)

Aimmee--good luck with Daycamp. My kids start a weeklong camp at church tomorrow! I can't wait! 9-1 all week long--I get a bit of a vacation.

I made a really easy yummy recipe tonight. DH gave it 2 thumbs up.

Easiest Indian Stew
from Everyday Food

1 cup long grain white rice ( I made jasmine)
2 tbsp vegetable oil
1 medium onion, minced
2 garlic cloves, finely chopped
Coarse salt and black pepper
1 tbsp curry powder, plus more for garnish
1 tsp ground ginger
3 cups best-quality tomato sauce
2 cans chickpeas, rinsed and drained
1 tbsp fresh lime juice, plus lime wedges for garnish
1/2 cup plain yogurt

Cook rice according to package directions, cover and keep warm

While rice is cooking, heat oil over medium heat. Add onion and garlic; season with salt and pepper. Cook, stirring frequently, until onion is tender, 4-6 minutes. Add curry powder and ginger; cook stirring until fragrant, about a minute

Add tomato sauce, chickpeas, and 1 1/2 cups water. Bring to a boil; reduce to a simmer, and cook, stirring occasionally, until thickened, 8-10 minutes. Stir in lime juice; season with salt and pepper. Serve stew with rice and yogurt, garnished with lime wedges and a pinch of curry.

We had it with Naan. Yummo!

Sheryl I can't believe I forgot to put out the sangria. Here I was so proud of myself remembering everything today and you start talking about the sangria. :rolleyes1

I need some good vibes... it appears as though the air conditioning in our children's building may have a serious issue. It was blowing hot air this afternoon and the building admin just confirmed with me that it was set to go on and cool down so something must be wrong. He said he 'has a bad feeling' that we are having issues again. He told me to think ahead about Plan B if that's the case. All my volunteers worked HOURS to decorate their room and set up. :headache:

We are both getting there bright and early to survey the damage. :scared1:

Hi... feeling okay today. I have a call into my OB/GYN to see if they want me in to check swelling. It seems to be down slightly. I feel great other than that. Nights are gradually getting better. Getting them both down is the trouble right now. DS got a little dependant on me being my first.

Ron was off for 4 days. But he is now back to work, which I know he hated to do. It was very hard with him just starting his new job. With his old job he was there so long he could take as much time as he wanted, we were spoiled.

I have been on the phone all morning making appointments and speaking with billing everywhere regarding our COBRA insurance. The timing on our insurance really was awful. Everything will be back dated to June 7 but just a headache to make them all aware of transition. DH's new insurance takes three months to start.

Emma just spit up all over swing...BBL

Ann- :scared1: on your delivery!!!!!!!!!!!!!!! Ad me to the gals who were teary reading about your Dad, I know that he wanted to visit his brand new Princess and must have been heartbroken. Vickie is so right, he is going to have plenty of time with your beautiful babies. I pray that his pain decreases.

Maria :headache: I cannot believe that you needed to ask an adult to cover up when coughing! Try to rest so that you can get rid of this nastiness, maybe you can relax in the sun that is finally peeking out for another day, it will feel good!

Kat- how are you feeling today? Better I hope

We had BBQ's all weekend, I am glad to be sort of back to normal today. Dinner is going to be burgers and fries, Buddy has been craving them but has not been able to jpoin me on my burger and dog fiestas this weekend. He stayed home to relax yesterday adn ended up taking in hay with Welby and Brian....he was in his glory! He misses baling so he was one happy camper :thumbsup2

I had sad news after i posted my Mrs B story last week. About an hour after talking about her I got the call that she had passed on :sad1: SHe had been on my moind for days and after calling Donny, he told me that he had been thinking of her a lot as well. She had passed on Friday but her friend lept it quiet until she could reach the niece.....now that is a long story! I have been asked to write some stories about her, she was a very quiet and shy woman so only her closest friends got to know how special she was.

My best friend in New Jersey (Sharon), we met in college & I was actually her birthing partner when her son was born lost her father in law Thursday, she doesn't have a relationship with her father so she thought of him as her own father.
Of course I planned on being there for the wake yesterday & funeral this morning but was told by the doc yesterday 3 days I could easily spread this virus so of course I didn't go.
I texted her last night she asked why I was in the ER I told her & that was that.
I feel so guilty not being there for her & her kids who I'm very close to.......what should my next step be? How can I make it up to her me not being there for her? Can I ever make it up to her?
I'm very concerned & worried. Thanks:hug:

Maria, a true BFF will completely understand without a question. I think you are worrying yourself for no reason. Get yourself better and when you are up to it, just be a great friend and have a strong shoulder for her. She is going to need her true friends in the coming months, not just as support through the funeral. You are a thoughtful person and I am sure you will find a way to express your love to her. Sorry about her loss.

Maria -- I am sure your friend will understand why you couldn't be there. In fact, I would be very grateful that you didn't show up and pass the illness around. My neighbor lost his mom in the spring, and I cooked a meal for the family one night after the initial grieving period was over. His wife was really grateful and said it helped cheer him up to have some good food and company. Our kids all play together, so we joined them for the meal. I am sure your friend will appreciate any kind gesture.

Liam has his first summer baseball game tonight...it doesn't start until 8 and it is two towns away. :eek: I hope it is a fast game. I think I might make fajitas for dinner. I have an avocado I need to use.

Thanks for all the good thoughts my friends. I'm doing a bit better today, good thing, as I have to go to work tomorrow. My employee will be attending a funeral. Johnny managed to get all the grilling done yesterday so we have plenty of food. I am now holding down some food finally, sorry if TMI, lost 6 lbs. Now to try and catch up....

Aimee - Hoping the A/C issue was resolved, can't imagine being without it with the extreme heat y'all have had.:scared:

Hello all. Lots of :hug: needed here today.

Ended up going to my cousins house for the 4th, he has a huge backyard with a pool. Didn't end up getting in though because it was to cool and breezy. From there we could see fireworks all around, there were at least 5 differant places at the back of his yard alone. Most of them were people setting them off themselves, I was a little worried about the house two doors over because some of theirs were a little close to the ground. :scared:

Went to the farm on Friday and picked black raspberries, tart cherries, blueberries and beets, I have a lot of canning to do!
