We went to my inlaws today for Easter. It was my sister in law's birthday also so she picked the menu, and she wanted Chinese food. UGH. They only like the pupu stuff--you know, the fried appetizers? It's just too much of a belly bomb for me! But, I learned years ago not to rock the boat over food while visiting the inlaws, so I ate it, and now I am suffering. Oh well.

The good news for me is that we stopped at my favorite farmstand n the way out and now I have lots of beautiful fresh vegetables to eat this week.

I don't know why fried Chinese food bothers me so much--it's not like I cook low fat food all of the time at home! But it really does kill my stomach. :confused3
 
Becky - I'm the same way since I changed my eating habits. Whenever I eat fried foods or even PF Changs, I suffer all night long....:sad2:

Back from my sisters. Dinner was good but I forgot to make the eggs and my DM was in charge of bringing the cold stuff and forgot the strawberry dip. :headache: And after we spent 10 minutes looking for the lid to the bowl it was in. I ended up making more at my sister's house, it was pretty good.

Had a little bit of a laugh till you cry at dinner. My DN was talking about her Disney pins and was talking about her "Pooh pin" which she said several times then said "wait that sounds bad" :rotfl: We were dying.

Aw, see - you're holding out on us! I bought the dried porcini mushrooms at the grocery store. They were $5 for a teensy package. I don't have a grinder so we wacked the heck out of them until we got enough to use. Do you grind them yourself or do they sell poricini powder?

Maria, thanks for sharing your pics! The baby (I could squeeze those cheeks), the puppy (is adorable), and what a nice spring dessert table!

We had a nice day yesterday. My DSD(23) and DGS(3) decided to come with us very last minute. My family always invites them but generally she says she feels funny and declines. My extremely large family can be a bit overwhelming. DS was thrilled to have DGS there as his sidekick. They had a ball at the Easter egg hunt. DGS feel in love with one of my DN, and asked his mom when he left ,"does Lucy already missed me"!:rotfl: So darn cute.

DS was being so well behaved all day until he decided to fall on cement face first. :sad1: My poor little guy scaped his mouth and nose all up! His little cute face is a mess. He is a boy and I know this won't be his first injury, fortunately, he missed his teeth when he landed. His lips looked like he got Botox injections, poor baby.

My DB and SIL did a nice job hosting. Way to much food as always. It was also my DM 74th birthday so we had a cake. It was nice to all be together for it. My DPs are so proud on Easter and we pose for family photos every year. They love taking pics especially with the grandkids...22, and 23 on the way. I would be proud too! Okay enough about my day...how was everyone else's?

Aimee, I grind it myself. I have a coffee grinder that I use exclusively for spices. I mix the porcini powder with brown sugar, salt, black pepper, red pepper flakes, and olie oil to make a thick paste, and then slather it on the steaks and let it sit overnight. John says it makes the best steak ever. I'll put up the exact proportions later, after I re-read the recipe. It's from Mario Batali.

WFD tonight: I think I am going to make a Barefoot Contessa recipe that John and I love. You pound chicken very thin, then coat it in a mix of fine breadcrumbs and parmesean cheese. Saute til just cooked through, and then pile high with an arugula salad dressed with lemon juice, olive oil, and parmesean cheese shavings. I found some decent looking tomatoes at the farmstand yesterday, so I am going to take my chances and slice one up for a side dish. It won't be as good as a summer tomato, but I can pretend.

I have leftovers from yesterday for my dinner tonight and I have leftover pizza for the kids. Monday is leftovers day here.

Good morning! Today is Easter Monday for me - our offices are closed. :lovestruc DH did not take a sub assignment so we can paint our kitchen today.

I think we're just going to do leftovers tonight. I'm still not feeling well, and cautious about eating much, so I asked DH and he went for leftover filet.
 
Hi ladies, let me introduce myself,

My name is Ellen and I am one of the "older" ladies. I am 51, OMGoodness I hate the sound of that. Ugh!! I have been married to my HS sweetheart Doug for 32 years.

I live in Lexington, Nebraska, pop. 7,000. Smack dab in the middle of the United States. I work for our Methodist Church. I was a SAHM until our youngest was in Middle School. Doug has worked for a Natural Gas Co. for 32years. We live and work our own farm raising cows. We totally live the midwestern way. I am always in awe of all of you with your seafood. The way that you all cook is totally foreign to me. We are more of a meat and potato kind of family. The closest mall to me is 45 minutes away. We do have a McDonalds and Subway though. LOL

We have 3 children -
Elizabeth who is married to Jay, and they have our one and only grandbaby, so far - Ethan (4years old), who is the apple of his Nanny & Poppy's eye (that is what he has decided to call us). Jay is, as I type, on his way to California for 2 1/2 weeks of battle training, then on the 15th of May is going to Georgia and will deploy to Iraq for his 2nd tour of duty. So hard on Ethan, as he just doesn't understand. They live in the same town so it is great that we can be a help when needed.
Stephanie who just was married in November to Marty. They live about 35 miles from us and have just bought their first home. They will move in on June 1st. I love having them close to us also.
Matthew is 19 and is in College. We miss him terribly. This "Empty Nest" thing is NOT all it's cracked up to be. The house is very quiet. He will return to the ranch once he graduates. He is only about 60 miles away and is home every weekend. He is with - 3 years - a very nice girl, Ali. We love her like our own.

We are planning a trip to WDW June 15 - 23. Anyone going to be there at the same time?

Well that is it for me. Like I said before, I love this site. I have prayed for you, laughed with you, cried with you and feel like I know you all. I am glad to now be a part of you all here.

Oh ya, WFDT ~ LEFTOVERS!! I am on strike for a few days. I fed 18 people yesterday so I feel justified. :rotfl:

We are having leftovers :thumbsup2 I am too tired to think of anything else. It is rainy and cold.

My strawberry pie was a messy thing tasted ok but it didn't hold it's shape. Anyone have a secret they want to share. I think next time I will use gelatin but I didn't use it since it involved going to the store again :laughing:

When we make fairy(cup) cakes over here we put icing on them but OMG frostin is just sooooooooooooooooo good,I would love to now how.

Im guessing(hoping) even I could manage.....but if not my wee niece is a dab hand !! :laughing:

Scotlas what kind of frosting are you wanting to make? A special flavor? Cooked, buttercream? The choices are endless. Cooked turnes out something like a marshmallow frosting BTW.
