The What's For Dinner Thread - Feb '09(recipe index in OP)

Oh - btw - my granddaddy is back in the hospital. I learned last week that he is passing out DAILY and is not stable at all. He's also decided that since he can't drive, he'll ride a bike to the grocery store. He lives in a bad part of town and passes out daily!! Why the heck does he think that's even remotely safe?! Most stubborn man I know. I can take him to the store but he refuses to ask for help.

Anyways, we think he had another heart attack so off to the ER he went (this time my uncle took him) and he's been admitted.

He's a walking timebomb. I adore him, he's my only living grandparent, but how many times can someone defy the odds? And how happy is he being so unstable without much independence? He's so worried about his finances. Medicare won't pay for 911 calls unless they transport him to the ER which we didn't know at the time so he owes thousands in calls and has told us to not call them anymore. I hate that money has to be considered over health. Grr.

I plan to see him tomorrow and/or Sunday. He's getting settled in a room tonight and I have Ace here so I'm not going to go tonight. He's in good hands now.

If and when they release him back home, I think I'll start showing up everyday around lunch to take him wherever he needs to go. He doesn't live far from my work; I just thought he was doing better so I didn't hound him.

Ann Pregnant or not swim suits are NOT my friend, but as everyone said have fun forget what you think you look like. You may not may not see these people again I don't think anyone ever looks at you the same way you look at yourself. We are our own worst enemies.:hug:

I bring my mystery car back into the shop on monday. At least this time we may have a better idea what is going on. I think it is electrical hopefully it is a fast cheap and good fix. I need this car to last for another million miles since I don't think I am going to win the lottery anytime soon.:rolleyes:
 
Lindsay I almost forgot to mention I went to Target last night and bought the apple streusel pancake mix. Alex is looking forward to them. Archer farms thing are on sale.

Good morning! I am sorry that we did not get to you yesterday, I was not myself all day long. The anesthesia acted weird with me and I was very dizzy and nauseated so I slept. This morning Buddy took us to breakfast but the car ride made me dizzy so I am in for the day. I feel good though, thank you for the well wishes, I appreciate them!

Sheryl, I found the information on T Tee very interesting. Thank you for sharing that. We are calling him Thomas or Tommy and I am sure the Tee thing will stick too so I am glad that it has real meaning.

I had my staples out yesterday and feeling a bit better. I am now glued together...Yay! ;) I didn't realize that I have hundreds of stitches in like 5 layers. I still have numbness...the doc said that I may have that all the time. Did you ladies here that had sections get feeling back?

Baby is good. He is eating good and sleeping good. I am still adjusting but having a pretty easy time so far.

The animals have adjusted pretty well to the baby. The cats are no longer allowed in the bedrooms (they jump) and Riley is not allowed in the bed anymore. They like to be around the baby but we are still being careful.

We have some house stuff to do today and dinner will be whatever. Tom is picking up the groceries in a little while so we will see what looks good. Oh and the BEST thing is, we found a really good Chinese food that delivers!!! Now we have pizza and chinese delivery!!! WE found them when we had chinese delivered in the hospital for Andrew's birthday.

We are going to a family wedding shower today that's 1.5 hours away, I will be so sick of the car at the end of this weekend! :laughing: I am bringing deviled eggs. Tonight, I'm making a hot sauce chicken with green beans from the latest Rachael Ray magazine.

Lauren - with the twins I had quite a bit of numbness, but it did eventually get feeling back. With Timothy, it was numb for a couple of weeks, but as of today, it's pretty much back to normal.
 
I've been in such a funk for the last few days, and it wasn't until yesterday that I realized why. Yesterday was my mom's birthday. She would have been 77 years old. I've been missing her a lot lately. Alan realized it and called me from work yesterday to say he was taking me out to dinner to celebrate mom's day. What a guy!

We went to IHOP and I had something that didn't agree with me, AT ALL! We had to come home immediately! Poor Alan. I think he was hoping for a much bigger celebration (if you get my meaning). Instead, I passed out in bed at 7:30 and didn't wake up until 2:00 when Timothy wanted to eat. Yikes!!!!

Dinner tonight will be soup and sandwiches. Most likely tomato soup and grilled cheese.

Just got home from funeral for a lady who worked in one of our programs. Was interesting to say the least. They had a wake first, I have never been to one, so I had no idea what to expect. Basically we sat in the church and looked at the open casket, then right before the funeral the family said their last good-byes and they closed the casket up. :eek: In all of the funerals I have been to the family leaves and then they do that.

Last night I made a recipe from this week's New York Times. It called for you to roast a chicken on a bed of ciabatta croutons. Supposedly, the juices from the chicken would mingle in the bread, creating a crispy, juicy bread dressing that you could serve the chicken on.

Well.

That's not exactly what happened. Here is the chicken, nice and peppery. Looks fine, right?

Houston, we have a problem!!! So, I ended up cutting off all the burned parts and salvaging what I could, which was not very much. I was so irritated that I did not even want to eat the chicken. So I made myself an omelet. Here are the final plates, with arugula "crouton" salad, roasted beets, and braised fennel with parmesean. John's plate, with chicken:

Everyone should be arriving soon for Liam's party. I am making fish tacos for the adults, with guacamole, crema, tomato salsa, and cabbage slaw. I am also making some rice on the side. The rice has roasted corn, black beans, tomatoes, chiles, cilantro, and lime in it. I am making the kids tacos the way they like them: just lettuce, cheese, carrots, and corn. I think I will make some plain white rice for them also-they won't eat the other kind, it is too spicy. I was thinking about making margaritas, but decided against it. I'm not in the mood for tequila today. Liam picked an apple pie for dessert instead of a birthday cake this year.

I'll try and get photos if I can--there are some extra people coming today so it might be too crowded.

Not sure what is for dinner yet. We had delicious pizza today from my market. They make their own...mine had zuchini, spinach, broccoli, red pepper, yellow pepper and mushrooms. DH had pepperoni. I did a big shopping and got a good deal on shrimp:woohoo: .

I can't believe in 2 weeks we will be in WDW at this time. :cool1:
