The What's For Dinner Thread - Feb '09(recipe index in OP)

Then we get hime, have dinner and Marisa is calling me, Trouble is panting, crawling and crying! All in a 5 minute span. The emergency vet is 45 minutes away, Marisa and Jeff took him. Hhad thrown a clot. He is 16 and was not going to make it so they had to have him euthanized, both were a mess and i guess Jeff was worse coming home. Trouble is really their cat. I cannot wait for Monday

I just got word from my BFF that her cat had to be put to sleep this morning for the same thing. :sad1: Klifton was 6 or 7.
 
That is so hard, losing a pet is so difficult, they provide more than pet hair. Kids are so different in how they express themselves, your DD was wishing him back. :sad1: Kady said "You know, he was not just a pet, he was like you know family." She had a nightmare last night and cried several times. This morning she told me she was dreaming about Trouble.

I am really starting to FREAK out about the possibility of a move. New babies coming & I move away from my family, so backwards & it's becoming upsetting to say the least.
 
I wonder if we can request Uncle Tommy? I had a dud of a waitress last time.

You can try, never hurts to ask. I wonder though if he is even a waiter, he has never been ours, but he always seems to be wandering around causing trouble.

The first time we saw him he actually came and sat in the booth between our table and the one next to us and was trying to get a tan with something metal (can't remember what it was). Later on he actually climbed through one of the windows between rooms. :rotfl:

Dinner is pan seared garlic chicken, carrots, boiled potatoes for Buddy and Kady and WW shells for. It is also eat when you want, Marisa and Kady are off to buy a UV light for nails and Buddy and I are going to see Chris when he wakes up. He has been in teh woods all day setting taps and running lines for maple sap.

Laura- I just finished making the cookies for kiddo's valentine's day party. Now I have 47 heart shaped cookies dripping in royal icing all over my kitchen.

Luckily, I didn't have to frost mine. I just had to make the cookies. They said they should be large. Here is one:

Mighty quiet tonight. I was good and sat on the couch and watched my shows. Getting ready to head to bed. Dinner ended up being chicken strips, again, and a few frozen appetizer things. :sad2:

I wish the Dis would have a mobile setting - it is a huge page to download onto a phone. Not that I won't sit and wait to get my fix on occasion :rolleyes1


I think there IS a mobile setting, but when I switch to it, it never stays like that. It always switches back. The other odd thing is that I think the DIS is set to Central time...but only on my phone, not when I'm looking at it on the computer. :confused3

I've been freaking out about the possibility of a move...and I don't have a baby on the way! Actually not the possibility, I'm freaking out how things will work out because there's a lot of things that have to happen and right now it does not feel like anything is happening....and I don't want to be here another year. :headache:

Anyways, despite my 3.5 hour nap this afternoon (yes, still sleepy a lot :upsidedow ), I'm going to head to bed now. Goodnight!

Good Morning! Quick check in...gotta go...where you ask? The doctors...:rotfl: Andrew is home today (they have a 5 day weekend) so I have to drop him off at a friends first.

We are having lasagna, tossed salad and garlic bread. I made a variation of the Tutto Italia yesterday when I had to make the white sauce for the chicken ala king so I used the Tutto sauce I had in the freezer with meatballs from the freezer and the mozz and romano cheeses...should be good.

TGIF:cool1: Hope everyone is feeling well. I am going to take my little man for a haircut this morning. Then we will most likely end up at my parents for dinner after he (I mean we;) ) have our nap.

I have made a promise to myself to keep up on this thread, because you all are my daily therapy!:rotfl: And if I keep whining you may all put me in a freezer next to the husbands!!!!

Laura- I didn't HAVE to frost the cookies, I just have a tendancy to get carried away. I was going to make them into valentines with the kids' names, but I ended up just doing pink royal icing coating with red squiggles. They came out pretty cute. If you get a chance could I have your cookie recipe. I really liked the crisp edges you got. Mine spread a tiny bit, but I would have preferred them like yours. Our hearts were a bit puffy.
As I was packing them up, I told the kiddo to be carefull bringing them to school. She told me "Of course, there shouldn't be broken hearts on Valentine's day." She was quite pleased with herself after that one.

Don't know what's for dinner tonight, today is my grocery shopping day so we'll se what looks good.

My husband has some vacation days he has to use up, so since next week is school vacation week he'll be using them. I probably won't be on much so behave while I'm gone. Speaking of gone, has Lindsay been around?

That is cute! Hopefully, Caili made it to school without breaking hers. It is so windy today, she was having trouble just getting the box on the bus without everything blowing away. Have fun next week!

Here's the recipe (I really think the key to them not spreading or puffing is that there is no egg.):

Simple Sugar Cookies

3 cups flour
3/4 tsp baking powder
1/2 tsp salt
1 cup butter
1 cup sugar
1 tbsp vegetable oil
1 tbsp milk
2 1/2 tsp vanilla extract
1/4 tsp almond extract (optional...I usually put it in, unless the cookies have to be nut-free)

In large bowl, mix the flour, baking powder and salt together. Set aside.
Cream together the sugar and butter using a stand mixer or electric mixer until light and fluffy. Add the oil, milk, vanilla and almond extracts and beat together until smooth.
Stir in the flour mixture until dough is smooth.
Divide the dough in half, and roll it out between sheets of wax paper until 1/4 inch thick.
Refrigerate the rolled out dough for at least 45 minutes. (I put mine in the freezer to speed things up.) It should be well-chilled and firm before cutting out.
Preheat oven to 375.
Using the cookie cutter of your choice, cut out cookies and put on parchment-lined baking sheets.
At this point, you can add sprinkles or colored sugar, if you want, or leave them plain if you plan to frost them.
Gather up the scraps of dough and reroll it once to make more cookies. (The rolled dough will probably need to be refrigerated again before cutting.)
Bake for 8-11 minutes until starting to brown slightly on the edges. Let cookies firm up for a few minutes before transferring to wire racks to cool.
If frosting, let cool completely (overnight is best).

These freeze really well and the recipe doubles easily (I can fit the doubled recipe into my stand mixer), so you can make them in advance.
 
last night, dh ended up going to his parents for dinner so I took the opportunity to work late (7pm) then go to the mall to see about a vday gift. we haven't exchanged gifts since we were dating but he's been discourged and I know he really wanted a new watch. I found one I think he'll like orig 250 marked down to 60 at dillards. since it was 830 when I finished, I just got crack in a cup (w a side of cx strips and fries) for dinner.

we r having the pizza tonight - its a rachael ray recipe I believe so I will post it if its tasty.

I am on the golf course w dh. he made me breakfast in bed (eggs and bacon) and invited me to drive him around. he knows I love driving golf carts!
 
I had a VERY nutritious dinner, mini cupcakes and Kettle corn. :sad2: Actually I had a cheesesteak sub and fries for lunch and I am just not that hungry.
