The What's For Dinner Thread - Feb '09(recipe index in OP)

Hey...

Keep meaning to ask,any of your kiddies got ANIMAL CROSSING CITY FOLKS for the wii ?

The boy has it and would love to swap Codes for wi-fi fun.

Nope. Sorry. We're Wii newbies, so we don't have many games, yet.

Dinner last night was yummy!

I call it cranberry pork chops. I browned pork chops in olive oil, and when they were browned, I mixed together one can of whole berry cranberry sauce, and 1 tablespoon balsamic vinegar. Then I poured that over the chops and let them simmer for another 10-15 minutes. I made some stuffing (from a box), and added a handful of dried cranberries to that. Served with brussels sprouts, it made for a very satisfying meal!

Dinner tonight is sun-dried tomato chicken over pasta. Yummo!

This really is a fun game.Great for all ages.
The boy got it but Ive been playing while hes been at school...:rotfl2:
Its very light nice family stuff.
the reason we got the wii was so we could all play together and this game hits the mark.
It also has wii speak so you can talk to folks you play with....i was fishing with a wifey from Kansss the other night and we had a right good chin wag.

I would highly recommend it but be aware its VERY addictive.:)

Spoke too soon. Started feeling horrible pain while getting ready for work, another stone. Asking for prayers for Greg in my place, I'm worried about Maria.

I'm so sorry! I really hoped you wouldn't have more than one. Have you had your stones analyzed? You might want to see if they are the kind that can be avoided with medication.

Prayers for you, Greg and Maria! There's room in my prayers for all!

Kathy  I really hope you start to feel better

Maria praying for Gregg and yourself. Keep us updated

Scotlas Alex has the game. I'll pm you later when I'm home.

Back to work :rolleyes1

I logged on earlier today but Nola is sick so I just left my window open. I missed a lot but am here to add prayers for Greg, Maria and Kathy. :grouphug::grouphug: As Glynis said, no one needs to be left out of a prayer.

Glynis- I hope that the bullying is over. That age for girls s awful at best, this would be much too stressful for Katie.

Aimee- talk to to town social services office or the elder care specialist that the senior center can refer you to. The town hall would have that info, social Security generally sends a representative on a regular basis to each town. The senior center in town will have referrals or volunteers who know what services are available. I hope that there is financial assistance for your GF

Gotta run for now, I'll check back in in a few/

Please pray Greg was just admitted to the hospital with chest pain & vomiting.

Oh no, I hope everything is OK!

I used my grill for the first time of the season last night. Hamburgers:

I am saying a prayer for everyone who is sick :sad2:

I need help on dinner. I want to make something with chicken I bought. I bought some chicken breast strips on sale. I dont know what to do with them other than grill them, but I dont have a grill yet:sad1:

Any ideas?

Hey y'all,

I'm so worried about Greg & Maria! I hope we hear something soon.

Kat, More prayers for you!

Laura, Glad you & your girl had a nice afternoon! Liam has already reached "that age" hasn't he. ;)

Nan, Sorry little Nola is sick! Hope she gets well soon!

Glynis, Good for Katie!! :thumbsup2 Your meeting today should be interesting! Let us know how that turns out. Your pork chop dinner sounds yummy!

Vickie, That is some dream! Aren't you glad to learn that Glynis doesn't have a basement!

Becky! MMMM-mmmmnn!:thumbsup2

Aimee, I wish I had some advice! We've learned with grandparent's, Bob's Mom & now with Bob, there is a lot that isn't covered by any govt. programs! It makes me so mad , we pay SS for years & then can't get any services.

Dinner tonight will either be chicken or shrimp. I'm not sure, I started getting a bad headache last night (something I haven't been having lately). I took ibuprofen & it passed, woke up okay, but now it's coming back again. :confused3 Probably sinuses.

p.s. I posted a cute/funny video of Alexis singing on FB.

What about a stir fry with lots of veggies?

Stir fry would be great!!!! (how do i do that?)

I have the strips, 3 different color peppers, and onions. What kind of pan and how do i do this?

Maria -- I hope all is well with Greg.

Kathy -- I hope you are feeling better.

Vickie -- What a dream! Happy Anniversary!

Glynis -- Hopefully, things will improve for Katie now. Good for her for sticking up for herself.

I use a nonstick skillet. Cook the veggies first, then set aside. Then cook the chicken. You can season it any way you like. For an Asian stir-fry, I usually use garlic, grated fresh ginger, scallions, sesame oil, hot chili paste and soy sauce, but you can flavor it however you like. I serve stir fry over rice.

I went to get Caili's skates sharpened today, so I stopped at the Cheese Shop nearby, so we're having cheese plate tonight.

I was searching for easy WW recipes for you, here's one I found:

Pineapple & Peppers Chicken Stir Fry Recipe
Ingredients:
- 8 oz skinless, boneless chicken breast, chopped into small chunks or stir fry shaped pieces
- 1 chopped green bell pepper
- 1 chopped red bell pepper
- 1 chopped yellow bell pepper
- 1 chopped orange bell pepper
- 10 oz of canned pineapple tidbits or chunks in their own juice (NOT in syrup), drained; this is about half of a 20oz can
- 1 tbsp Frank’s Red Hot Sauce
- 1 tsp paprika
- 1 tsp garlic powder
- salt and pepper to taste

**Feel free to add more or less hot sauce as you desire, as it does NOT affect the Points value. I like mine super hot and tangy, so I use about 1/4th cup of the hot sauce ;)

Directions:
Start by spraying a large frying pan with a bit on non-fat cooking spray. Add chicken pieces, garlic, paprika, and salt and pepper, and grill until chicken is cooked through. Then, add pineapples and hot sauce, and cook on Medium for about 5 minutes. Then, add all peppers and stir fry for about 10-12 min, or until peppers are cooked through and softened. Serve immediately. Makes 2 big servings. Enjoy!

Serving size is one half of recipe
Each serving = 5 Weight Watchers Points

Hi everyone! Believe it or not, I've read all nine million pages I missed, but now I don't have the energy to respond to everything.

Maria - I've said a prayer for you and for Greg. Please let us know what is happening.

Sheryl - I saw the post about the aide not showing. Is that situation resolved?

Marisa -:banana: No more food allergies!!!!! That is wonderful news. And a new house too. Congrats to all of you.

Nancy - Congrats on reaching your goal. Tell Buddy I'm sorry Marisa didn't leave his princess there with him. ;) I know you are both having adjustment issues.

Kathy - I'm so sorry about the kidney stones! My boss keeps having those and they are horrible. This is going to sound crazy, but the doctor told him to drink a lemonade every day. Something about the acid helping to keep them from forming. :confused3 Also, I hope Kyle gets better soon.

Wendie - Sure, go ahead and check in while I'm MIA and then disappear. ;) Come back girl. We've missed you.

Sorry about not hitting everyone. Please forgive me as my mind is certainly not quite up to par. I've been full with appointments, phone calls, etc.

Dad is in Houston now but is coming home tomorrow. Those aggravating doctors had him fly all the way there, did NO additional tests, reviewed the findings of his previous tests and told him they couldn't do any more for him than the hospital here. :scared1: WHAT!?!? I'm so glad I wasn't with him because I would probably be in the Houston Jail right now.

I mean come on. Do they not have a telephone, email, or carrier pigeon they could have delivered that news by? My poor Daddy flew, in pain, through a horrible storm Tuesday evening, had to make an emergency landing in New Orleans because the storm was too bad to continue, wait an additional 2 hours - IN THE PLANE - navigate around the flooded streets and collapse in the hotel bed at 1:00 a.m. All this joy only to have them do nothing but further delay his treatment. Can all of you now tell I'm a little miffed? :sad2:

Anyway, the first flight back home they could get arrives tomorrow night. The local doctor has been wonderful. Dad still needs an MRI of his brain before begining treatment, so he has that scheduled for 7 Friday morning, a dr appt after that, and chemo mid day.

I'm doing better, but have developed a facial rash that the lovely little physican's assistant and the dermatologist's office said may be due to stress. You think?!? Anyway, I'm medicating that now, but the red rash on my face is temporarily distracting people from the gray hair on my head so I may need to leave it alone.

Dinner tonight is a crock pot roast (not Glynis's - sorry dear, I almost feel like I am cheating on you ;) ) with potatoes and carrots. And rice. For the gravy. Even though we have potatoes too because my husband thinks all gravy should come with a side of rice.
