The What's For Dinner Thread - Feb '09(recipe index in OP)

Hello all! Been a busy couple of days. WFD tonight is probably scrambled eggs, have a class tonight. My first recipe from the Ellie Kreiger cookbook turned out really well, with a little addition. I'll have to post it when I get home tonight.

Now off to catch up.
 
Poor Gretchen....please let her know her Dad remains to be in my prayers, I'm so sad for her.

Glynis, what kind of steak did you use in the crockpot? That sounds good:)

I used a few sirloin steaks that were on sale. I bet you could use any cut of meat. This might even be good for a chuck roast. Hm, I'll have to give that a try.

Glynis & Ann I sure hope your little guys start sleeping better. That was the part of new babies that I did NOT like. I am sort of grumpy when I don't get my full 8 in.

Thursday Doug's Dad is having surgery for a Macular Hole in his eye. Not a fun recovery. He has to lay flat on hs tummy for around 2 weeks - maybe more, but we aren't telling him that. No way. If you have some spare thoughts we could really use them. We are all close so between all of us I hope he gets along ok. Actually it will probably be his Mom we will want to kill. ;)

Hi Ellen, It's nice to "meet" you. ( I skimmed back & read your introduction.)

I'm Sheryl (the lucky one with all of these friends thinking of & praying for me). I live in the 'burbs of New Orleans. I'm one of the old girls here also, I'm 50, married to Bob for 32 ??!!!! years! (Yikes that's a shocker) We have one daughter Angelina who is 26, married to Josh. They live nearby which is nice. I became Nana to my sweet niece 6 yo old Alexis after "retiring" from an insurance related job. I've also been a Mary Kay consultant for 20+ years.


I am sorry to hear about your FIL.:sad1: I will be praying for him, the recovery sounds very hard.

I'm waiting for the dr to call me & discuss it. I will be honest with him about the symptoms & see what he says. I'm ready to do it, but July would be easier for Angelina & Chris to give us as much help as possible. So that's why I'm hoping to be able to wait til July.
 
Spoke with Gretchen just now, they're meeting with the oncologist tomorrow. Her Dad is already in pain, things aren't looking good. Her sister came in and says Dad has deteriorated fast. Prayers please. She will call me back tomorrow with the oncologist update.

My heart is breaking, not just for her. What about people who have no family to advocate for them when they cannot speak for themselves? :sad1: We have been caring for my Aunt for years, we know how she reacts and can see the pain in her face. The staff there is so caring for her but they cannot overrule the DR, who only knows her as a patient for less than one year. Her nurse told me she had to fight for the ativan :sad2: So, we are not leaving her alone, one of us is there all day and all night.

It's horrible, isn't it, that we can't always trust medical personnel to be the advocate for people in these kinds of situations. I'm glad your family is willing to stand up to the doctor for the proper care of your aunt. :hug:

I have good news with Angelina! :goodvibes Her back is feeling better & the pain down the leg is improving too! She also has a job offer, but terms aren't firmed up yet!:banana: She also got a call from that company she had interviewed with about another position.

As for me, The dr office didn't get back with me until yesterday about scheduling the surgery. I was hoping for early May but they now don't have anything until the 25th. I am thinking about holding off until July. My niece's wedding shower is May 30th & her wedding is July 11. The nurse said I still might not be in great shape for the wedding if I have surgery on the 25th. So I am waiting to speak with the dr, to see if he thinks I can hold out until mid July.

Just when I think I have my decisions all worked out in my brain, the aide didn't show up last night. No phone call either. DH tried to call but had to leave a message. She left a message on his phone sometime during the night that she thought we changed from Monday to Tuesday. :confused3 Nooo, last week she called & asked if she could come on Tues instead of Monday. Aargh!

Tonight I am finally making that sausage and egg pie I wanted to make last week. I think we'll have crescent rolls with it.

I got good news yesterday! My labs came back and my iron has finally dipped low enough for another infusion :woohoo: I've been dragging so I knew it was really low again. I meet with the hematologist next week and then we'll schedule an infusion time.

I have just just 2 food porn pics from my MIA missing weeks.

Weeks back I mentioned trying out doing pizza on store-bought Naan. It was very good, I think I had proscuitto, feta & the asparugus that I can see in the pic.

Over the weekend I fixed that halibut & salsa dish I do pretty often. I bought the fennel & halibut but forgot to buy grapefruit. I found blood oranges in the fridge and decided to try it with that. It was tasty & added some pretty color.

Last night I cooked cuban, black beans, white rice & avocado-onion salad (recipes from May's food & wine mag). Angelina was visiting & stayed for dinner. All three of us ended up adding Bob's seasoning to the beans, the rice & avocado salad was very good. We might have the leftover beans & rice with some tamales I bought at the local market. Although I've gained a few pounds the last couple of weeks & should be cooking something a bit more diet friendly. :sad2:

Aimee, hope your infision gives you that added boost. You truly amaze me, you are one busy woman.

Ellen, sorry to hear about your Doug's Dad. The recovery does not sound like fun at all. Prayers to him and those caring for him during recovery, lots of patience needed.

Kathy, thanks for updating us on Maria. I know she appreciates you as well as we do! Tell Kyle no more fooling around, he is to big for ouchies (as DS calls them).

It is pouring here, so a bit of nesting has finally kicked my in the butt. I did some decoratoring I have wanted to do for over a month. Helps when I get some sleep.

Ann -- Sunday was my parents' anniversary as well...their 40th. I guess that is a good day to get married.

Ellen -- I am sorry about the loss of your friend. I hope all goes smoothly with your Fil's surgery and recovery.

Nancy -- That is such great news about Kady! She must be having a great time eating everything she hasn't been allowed for a couple years.

I am sorry about your aunt, and I hope she finds peace soon. She is fortunate to have you and Gail to advocate for her.

Aimee -- I am glad everything went well with the baptism. I knew you would do well.

Maria -- I wish you a quick recovery and some much-needed relief. Thanks, Kathy for the update!

Sheryl -- I am so happy to hear that Angelina is feeling better and may have not one, but two job offers! Now things need to fall in place for you.

We're having roast chicken tonight. I'm not sure what else yet, so I better get cooking!
 
Spoke with Gretchen, she's pretty shaky & upset. I told her that we are all praying. Her Dad will begin chemo on Monday and since it's spread to the bones he will undergo bone treatments as well. The prognosis right now is 1 year, but as I told her that could mean three or more years with the power of positive thinking and prayers.

She was considering not going on her vacation but Kenny talked her out of that and I think I made a case for that as well.
 
Poor Gretchen I think she really needs to regroup. A vacation will help her in that. :hug: Just because the doctors put a number out there it doesn't mean her dad has to live with it. Postive thinking and prayer can make miracles happen.

Nancy I wish your Aunt peace and a restful passing. :hug:

My allergies are acting up too. Badly. I've been coughing constantly. :sad2: And I can't take anything involving sudafed because my blood pressure is high.
