The What's For Dinner Thread - Feb '09(recipe index in OP)

I haven't really read back but wanted to thank y'all for your prayers. I'm going to wait until tomorrow to call Lauren. The saddest part is that Charlie has a young daughter, I want to say 10 or 12. This has really hit me very hard.

Thank you for wanting me to stay around! I definitely will. I lurk on this page everyday, lol, and have been since the beginning of it. I have benefited so much from the recipes and tips, and I ALWAYS enjoy the pictures of the food.

I am not the greatest of cooks, though I do try. So if there is any way I can contribute, I will. :)

So if you've been lurking, you know that I am also not the greatest of cooks!

He y'all, I was on my way to the gym and got a call from Lauren, crying, she's heading to the hospital. They're letting Charlie pass.:sad1: Apparently the tumor burst and he was bleeding internally and on a breathing tube. Please keep Lauren and her family in your thoughts and prayers today.

Update - Lauren called on her way back from the hospital. Charlie's wife decided not to remove vent but he is not expected to make it through the night, his organs are starting to fail. Lauren did get to say goodbye.:sad1:

Good Morning,

I just wanted to thank everyone...you guys are so wonderful.

I have not heard as to how the night went for Charles but when the doctor was talking to us he was not sure that he wound make it through the night. He is bleeding internally (he has a hole in his stomach) and his vitals were pretty low. My sister in law wanted to see what the night brought before making any decisions. She did talk to their daughter, Melanie, 9, so she is aware of what was happening. It was decided not to bring Mel to the hospital since Charles is hooked up to the vent and they are pumping his stomach. She had read to Charles and he had a good day the day before so that is the memory that they wanted her to hold. A nurse/therapist that deals with cancer and death has been talking to the family for a while and has been such a big help.

I am not sure if I ever mentioned, my brothers and sisters are technically my half siblings (although never referred to that way)...Charles a different mother than me and the others a different dad...so they all lost a parent very young too...as well as Charles' wife, Nancy who lost her Dad at about 12 years old. This has helped us realize what it will be like for Melanie and bringing back those horrible memories for everyone.

I am not sure what today will bring but I am glad that I saw him last week and had a chance to say goodbye. Thank you all again. I can't tell you how much your friendship means to me.

I will call Kat later and let her know. It is hard for me to type all this as I sit here in tears.

Kathy, I am sorry for my frantic call yesterday. I wanted to let you know what was going on and just lost it. Thank you for taking care of all of us.

Morning y'all,

I've been marinating a boneless leg of lamb in greek seasonings. I'm going to cook it on the grill with wood chips. Then hopefully slice it very thin for gyros. Lamb for gyros was Angelina's request. I've never tried doing it this way before, so wish me luck.

Angelina was having some leg pain yesterday & was kind of bummed out about that. Even though she knows it will take time.

Dinner tonight will be simple and fast: Tuna salad. I'm doing all the laundry and cleaning the house since we're leaving on Friday to go to my Dad's for Easter. With all the packing, etc., we need fast stuff.
 
Here are the recipes I promised:

Coconut curry corn sauce

1 tbsp. peanut oil
1 clove garlic, minced
1 tbsp. freshly grated ginger root
2 tsp. curry powder
2 tsp. thai red curry paste
2 tsp. paprika
1 tsp. cumin
2 tbsp. soy sauce
2 tbsp. tomato puree
2 tbsp. light brown sugar
1 can coconut milk, regular or lite
1 cup corn kernals
½ cup sliced scallions, white and green parts divided
¼ cup golden raisins

Heat peanut oil and sauté garlic and ginger for a minute or two.
Add all spices and cook for two minutes.
Add soy sauce, tomato, brown sugar, and coconut milk, stirring well after each addition. Bring to a gentle simmer and let cook for 10 minutes. Do not let boil or the coconut milk will separate and get all grainy!
Stir in the corn, raisins, and white parts of scallions and cook five minutes longer

Ladle sauce over fish and sprinkle with reserved green scallions.


Kaluha colada

2/3 cup kaluha
2/3 cup cream of coconut (not coconut milk!)
2 tbsp. rum
3 cups ice

Combine all in blender and blend until smooth. Makes two drinks.

Last night I had the rest of the penne in a broccoli saice (actually, I ended up not eating it--I have it with me for lunch today), a piece of leftover fried chicken, and cornbread:

Not sure about dinner tonight. I have a hair appointment after work, so it will have to be something fast.

Not sure of dinner tonight. I have a going away party from 5 to 7 and a birthday party at 8. They are serving "light refreshements" at the going away party which will probably be cheese and fruit and crackers. May need to make a stop at McD's.
