The What's for Dinner Thread - August 2014 (recipe index in OP)

..once they get the Church, the reception, and band booked the rest will be easy and a heck of a lot more fun. Right now they are a bit stressed!! :hyper2:

Feeling much better today. Really glad I took the time off to rest up a bit. I don't really want to go back to work tomorrow but I know I'm going to have to. Not that I don't feel up to it.....I'm not looking forward to checking my email box!

WFDT? I think we're doing Japanese ramen noodles at the local ramen restaurant. We have a school thing to get to so it'll be an early dinner. I'm looking forward to a bowl of hot soup and noodles.

I really shouldn't be in here this morning, but I just had to sneak in. I have so much to do. Hopefully by this time next week I should get a break for awhile. With Pastor's Mother passing, our Charge Conference was pushed back to Nov. 3. so that gave me more time, but now I am panicking again. The budget was set yesterday so that is good.

The proposal went perfect. Matthew had taken a pumpkin to work on Thursday to carve. On Saturday evening they carved their pumpkins and when they were done, they took pictures of them with them lit and the lights out. Matthew asked Katlin if she would like to see the pumpkin that he carved for the Bank's Halloween competition. She said sure, so he made her close her eyes (which she kept complaining about :scared:), he lit his pumpkin that said, "Will you Marry Me", opened the ring box and was down on one knee when she opened her eyes. Long story short - she said yes!! They are so excited and trying to get the church reserved as we speak. Once that is set then the other things will fall into place. They have set June 4th as their date.

Brandi ~ I am so relieved that vacation went so well. I was worried that you would be in a lot of pain. I love the fact that you are doing this drug free. That makes such a difference.

PIO ~ oh bless your heart. I feel so sorry for you. I hope you feel better real soon. I hate getting a cold and spring colds are the worst. Rest up my friend.

I am getting my tooth fixed today. They are going to place a crown so I will be in the dentist chair for 1 1/2 hours. Oh joy!! I absolutely HATE going to the dentist. YUCK!!! :mad: Wish me luck!

Vacation was awesome and I wish I was still there. :)

90 minutes in a dentist chair does not sound like fun. Prayers for a speedy recovery.

But butternut squash soup sounds divine, do you use dairy?

Sad news at our house last night. I worked out at the Y after work (thank God I did) and I got home kind of late. Doug was sitting in the living room looking like death warmed over. I knew immediately that something was wrong. Then he told me to sit down. He had come home from work and found our cat Neika dead on the kitchen floor. He was devastated as was I. There wasn't anything visibly wrong with her and he had cuddled with her at lunch time. We have no idea what happened. We are so sad!!

Brandi ~ Yes I use dairy but I suppose you could omit it. It just wouldn't be as decadent. I usually make a big batch and freeze it. It freezes wonderful. It's very easy!! I peel the squash and cube it in about 1" pieces. Place in a large pot and add water. Cook till soft. Sometimes I pour some of the water off and sometimes I add some. Just eyeball it. I add cream (but you could leave it out, salt and pepper and I love to grate fresh nutmeg in it. Then I use my emulsion blender till smooth. YUM!!

PIO ~ Your noodle soup sounds like just what you need. I wonder why when we don't feel good we want hot spicy soup. I hope work didn't tire you out too much. Please take care of you!!

We are on our way to Lincoln today at noon. The kids are beside themselves trying to find a Venue and Church for their dates. I feel so sorry for them. Hopefully we can help - I have no idea how - but maybe just being there will prove good. We are playing Northwestern tomorrow. Last year we went to Chicago for this game. We had so much fun. GO BIG RED!!

So sorry for your loss. That is very sad news indeed. How old was Neika?

the best part was hiking below the rim, no one was there! on the north rim, we did not see people for miles.

I went back and looked. Yes, I did see some of the pictures but not all of them...so it was good that you pointed me in that direction. Great pictures.

DH and I want to do the north rim at some stage. I think the solitude suits us better.
 
Still coughing over here. The good news is that I'm down to every 10 minutes or so; rather than every 5 minutes.

I'm trying to keep to wholesome meals here. WFDT? I'm probably doing a quick stir fry of chicken tenderloins with vegies. No rice or carbs.
 
I'm making a pot of spaghetti sauce with meatballs & sausage. Can't forget about the fresh italian bread. MMMmmm
 
tonight is quinoa, corn on the cob, bell peppers, cucumbers and David will have Salmon.

I am doing this Monday night but it will be vegan meatballs, spaghetti squash, and home made red sauce.
 
Well I've been out of it!

Ellen, so sorry to hear about your cat. That is just so sad. We had the same thing happen to one of our cats, but he was older.

I have to get back into the swing of things. Friday night I made sausage and rice casserole for dinner, but last night Fran wanted to order Thai food so I'm not really back to cooking yet. Tonight I hope to make some kind of fish for dinner. I ate way too much red meat on the cruise so I'm craving variety.

WFDT? We're going to do homemade burgers. I got some organic beef burgers from the butcher and some organic vegie pattie for DH.
