The What's For Dinner Thread - August '09(recipe index in OP)

Good morning, everyone! Timothy is feeling much better, but like Nola, he has a monstrous cold! His nose is running and running! It doesn't seem to bother him, though.

Leslie's teacher is still being a bit of a pill. Luckily, the principal called me and we talked things through. He understands that the cough is not contagious, and promised to talk to the teacher. If all else fails, we'll move Leslie and Mary into another class. I told him I was very unhappy that the teacher would tell Leslie not to come to school. She should have contacted me, first, and not said something like that to a 7 year old!

Dinner tonight is up in the air. It depends on how everyone is feeling. I am thinking taco soup might hit the spot!

WFD- looked in my fever ;) and took out chicken. Going to make some cutlets and have chicken parm subs and onion rings.

Dinner last night was left overs...tonight might be take out because I have a 3 o'clock hair appointment.
I have to share that yesterday I went to Walgreen's & got my flu shot! It was great! One form to fill out 10 minute wait & done. When my doctors told me they wouldn't have the regular shot until the middle of October that worried me. So the $24.99 made me feel much better.

Did I miss a post from Janice? I couldn't find anyhting:confused3

I didn't make pizzas yesterday because Alexis came home with her tummy hurting. I'll make that today. I'm going to try my hand at sourdough pizza crust.

I need to crow about my littlest one, she's had nine tests/quizzes to make up due to her absence. Her lowest grade was a 95!!! :yay::banana: She's doing really well, even with the spelling & reading. Now if we can just figure out why she finds homework to be such an awful chore, when the work seems easy enough for her.

I also like to ask for some good thought & prayers for Angelina today. I can't say much but it's for her possible business venture.

I sure hope your angel's tummy settles down and good for her on her make up work. That is outstanding!!:banana:

Actually there for a while I thought maybe I was going to get to. I tried!! But there is something in the works with Matthew. I can't say yet (I don't want to jinx it) but I might have to use my vacation time to go to Virginia. We shall see. Someday my friend - someday.

Aimee--looks like this system moved your way a bit overnight. Unfortunately, we are still getting rain too. Enough already!

What is the deal with this weather system? I woke to miserably drizzling weather again and they say it'll hang out for another day or two :confused3 I have two pieces of furniture I really wanted to paint (with a sprayer) but can't if it won't clear out!

I also like to ask for some good thought & prayers for Angelina today. I can't say much but it's for her possible business venture.

Absolutely - completely unprofessional to comment to a 7 year old about that. I hope the principal is able to handle the situation without uprooting the girls.

My iron infusion this morning went well, no reaction! They did dope me up on Benadryl so I feel blah (thanks to Crohns) and drunk :laughing: AND we're having a big luncheon today with city leaders that I have to mingle at :laughing:

If I start feeling better, we are planning to go out for sushi tonight. If I still feel like this, I'll order in chinese and veg and go out tomorrow or Saturday.

I'll get my flu shot next week. Our office building brings in nurses from one of the large hospital/medical groups here and the law firm I work for picks up the cost. So its really easy for me to get it. But I am a big chicken with needles!!

I have to stop at the grocery on my way home so dinner tonight will be rotisserie chicken, mashed potatoes and salad, courtesy of their deli!

Ron & I both got our flu shots at our recent Dr. appointment. My DM was worried because her Dr was not offering them till October either. Her and dad went to Walgreens for theirs too. I have been calling DS's pedi every other day. They do not have the flu shots in yet for children under 4. As soon as they have them I need to get him in for one. (EDIT) I just called they are finally in, he is scheduled for 9/28.

Yes, feeling better thanks for asking. I took Luke on the deck for some fresh air and ended up washing my kitchen windows and french doors. I have my self cleaning oven on now also. DH yelled at me and told me not to push myself...it was the first burst of energy I have had all week.

Tuesday night's dinner. These were 2 easy recipes I found hunting online that I thought should be shared. Dh said they should definitely go in the Do Again category!

Here's the recipe I used, with notes on any changes. Surprisingly for me, these to had very little Nanatizing done to them!:laughing: I had everything ready to put together, when I couldn't find any capers, so I used calamata olives instead.

Salmon with Lemon, Capers, and Rosemary
Recipe courtesy Giada De Laurentiis

Serves:
4 servings. Ingredients
•4 (6-ounce) salmon fillets
•1/4 cup extra-virgin olive oil
•1/2 teaspoon salt
•1/2 teaspoon freshly ground black pepper
•1 tablespoon minced fresh rosemary leaves
•8 lemon slices (about 2 lemons)
•1/4 cup lemon juice (about 1 lemon)
•1/2 cup Marsala wine (or white wine)
•4 teaspoons capers ( I used calamata olives)
•4 pieces of aluminum foil
Directions
Brush top and bottom of salmon fillets with olive oil and season with salt, pepper, and rosemary. Place each piece of seasoned salmon on a piece of foil large enough to fold over and seal. Top the each piece of salmon with 2 lemon slices, 1 tablespoon of lemon juice, 2 tablespoons of wine, and 1 teaspoon of capers. Wrap up salmon tightly in the foil packets.

Place a grill pan over medium-high heat or preheat a gas or charcoal grill. Place the foil packets on the hot grill and cook for 10 minutes for a 1-inch thick piece of salmon. Serve in the foil packets.

My notes: Preheated Gas Grill, turned temp control to medium. Placed one sheet of heavy duty aluminum foil on grill, placed salmon foil packet on top of that. I did one larger salmon fillet , it was probably about the size of three six ounce fillets. Definitely a do again recipe! Easy!

Fresh Green Beans, Fennel, and Feta Cheese

Servings: 4

"Fresh green beans and fresh fennel, cooked until crisp-tender are then briefly sautéed in extra-virgin olive oil, along with fresh basil and crumbled feta cheese."
Ingredients:
1 pound fresh green beans, trimmed
1 fennel bulb, cut into thin slices
1/4 cup extra-virgin olive oil 2 tablespoons chopped fresh basil leaves
salt and pepper to taste
1/4 cup crumbled feta cheese

Directions:
1. Fill a saucepan half full with water and bring to a boil. Heavily salt water then add the green beans wait one minute and fennel slices; cook until just beginning to become tender, about 4 minutes. Pour into a colander to drain and run under cold water to stop the cooking process.
2. Return the empty pan to the stove and set heat to medium. Pour in the olive oil and let it heat for a minute. Return the green beans and fennel to the pan. Season with basil, salt, and pepper; cook and stir until coated and warm. Transfer to a serving dish and toss with feta cheese.

I only made one change to that one & it was to salt the water!

I served it with slices of grilled sourdough garlic bread. Yummy!

Sheryl, those look right out of 'Gourmet' magazine. Very impressive! Thanks for sharing. I would have never thought of feta with beans, I may have to try that. I never buy fennel, but I always loved it when DM did. It has now been added to my shopping list.

I don't buy fennel often, but everytime I do, it seems to be a memorable dish. These green beans tasted different than any I've done before, very light & had an italian flair. But my favorite fennel recipe is one I posted many times for halibut with fennel & grapefruit salsa. That's one I think really taste & looks gourmet!
 
DH does not like salmon but halibutI may be able to talk him into...now just to come up with an idea how to hide grapefruit on him. I can hear it now why is there fruit in my food ...much to healthy for my neat and potatoes guy. I am off to find that recipe on our link.

To add insult to injury, we received a notice that our health insurance was going up because "one of the covered members is moving to a different age bracket" :mad: Thanks Blue Cross. I may end up going to the doctor and getting an inhaler for Leslie. She really doesn't need it, but if it's going to cause problems at school, I'll get her one.

That actually may help a lot with the cough. I have a friend who does have asthma and allergies and gets a cough like that and the inhaler helps her A LOT!

Asking for good thoughts for Kyle. Today is day one of walk-on try-outs and he is sick, maybe cold or flu, not sure yet. Poor kid can't catch a break.

Can you tell I am excited to be going soon??? Funny thing is I really don't like anything to over the top Disney. I love my two MM watches, my country x-mas mickey stockings and my ornaments. My DH is to blame...he started my WDW love. Now the shopping addiction I blame DM.:rotfl:
