This afternoon I'm meeting up with a few local dis friends to look over the new DVC store opening maybe if I get lucky I'll win a raffle prize (night in Cindy's castle?) Then I hope lunch at PF Chang's since we will be a few steps away.

Not sure what we will have for actual dinner, looks like it might be rain later. Hopefully the rain will be overnight though.

I almost forgot to mention. Yesterday I was touring World Market looking for rice noodles and I found the most wonderful chips. Red beans and rice flavored tortilla chips by Plocky's. They actually have red beans and rice in them.


I have to do double exercises to undo them from my hips.
 
Speaking of baseball camp, here's my proud mom story. Liam's team was in the championship game this afternoon, so Caili and I went to watch. It was the last inning and the score was 22-17 (not exactly a defensive game), and Liam's team was behind. They rallied and scored four runs. Liam came to the plate with two outs and two on base. I was so nervous he would make the last out and the team would lose because he hadn't had a very good day at the plate. (Two outs and hit into a fielder's choice.) First pitch, he hit a line drive to right field and the score was tied. The coaches then yelled, "That's the game! You all win!" (They can get away with that with eight year-olds.) Anyway, Liam was so excited that he got the "walk-off single." :)

Wish her luck, she works nights and is just getting home now so she is going to be in rough shape after a bit.

Good morning everyone! Yesterday's game turned out perfect. Kyle pitched very well, allowed only three hits through eight innings. We were leading 2-1 and coach pulls Kyle out and the relief pitcher gave up 5 hits in the ninth inning. We lost 4-2. So one more loss and baseball will finally be over.:yay: :yay:

Dinner tonight will be the Mahi-Mahi recipe Laura posted for me, jasmine rice and grilled veggies.

I got a big thumbs up from DH on the margarita I posted the picture of yesterday. It's going into the permanent recipe book. Try it! (if you like foo-foo drinks, that is)

We ended up not having the dinner I planned last night. Instead, we made a picnic cheese plate:

Tonight's dinner is going to be everything I meant to serve last night: grilled eggplant with brandywine tomatoes and fresh mozzarella cheese, sauteed corn and zucchini with mint and cumin, and grilled cornell-style chicken.

The kids and I are going over to a friend's pool with my ILs this afternoon. I don't know what we're having, but I am guessing hamburgers and hotdogs, although I am really hoping for something different. I am still recovering from last night's hamburger.
 
Our dinner last night at Texas de Brazil was worth the hype. I ate way way too much but couldn't help it. If you haven't been to one and have one close, sign up for their email coupons and go sometime. We will def go again (with a coupon!!).

For dinner, we are having buffalo chicken lasagna. New recipe for us but one that came highly recommended by several people so I hope it's good!!

Kathy- she and my BIL worked all night, they work 12 hour shifts but somehow she got a second wind. I called Buddy's cousin to help, Gail had not packed one thing, and she and Mike have more stuff than I have ever seen! We hope to get a lot done tomorrow and at least have most moved out so that we can clean, Then Dan and Erica can start moving their things in.

I told my niece and we are going to make them when we finish moving her Mother, who went from being the most organized woman on the planet to :confused3. I hope that she never has to move again!

Me too! DH didn't want to stop for dinner on our way back from the game last night so I had a fast food burger for the first time in over two years.:scared:


I wish I had the self control that you ladies have, I love them!

Here are photos from last night's dinner. I made a sweetcorn-zucchini saute, and really terrific roasted curried sweet potatoes. I also made DH a ribeye steak with cilantro-chili butter, and I had a piece of chicken with chipotle bbq sauce. The toasts are spread with a mixture of chopped artichokes, brie, and parmesean. Laura - The Mahi-Mahi ended up in the trash. Whoever cleaned and packaged this fish had no idea what they were doing, it smelled awful and was FULL of bones. I had already prepared the mango salsa, which was excellent, so I grilled some chicken and topped it with the salsa.

I'm under the weather, again, so DH will be heading to Baton Rouge without me for today's game. We won last night so I'm still hoping for a loss:ssst: to get this season over.

Not feeling too creative today so I think we'll have breakfast for dinner.
 
Morning all. Last night ended up being a treat for me--dsis invited me out with her girlfriends and we ate at PF Changs. Had some Ahi Tuna and some steamed shrimp dumplings! Yummo. But the best part of the meal was the Asian Pear Mojito! :thumbsup2 DH is heading out this afternoon to the PGA Championship-he scored free tickets to the Monday Practice round, so we'll see what's for dinner later

Thanks for the compliments! Dinner really was yummy. Sorry you are not feeling well! That's too bad about the mahi. I can never get fresh mahi around here. I do love it though, and eat it all the time when we are in FL or St. John. That's so weird that is was all bony! I mean, it's a big fish, really easy to fillet.

Laura's here helping me organize today's linner. The main course is a repeat from a couple of weeks ago--the grilled littleneck clams with garlic butter and grilled striped bass with garlic mustard sauce. Additional items are a grilled eggplant dish layered with heirloom tomatoes, fresh mozzarella, and parmesean, roasted asparagus tossed with lemon and garlic, creamed corn (from scratch!), and...I am forgetting something. Spinach, maybe. Plus, we are going to have some of one of my favorite wines--alban estates viognier. Photos later!
 
Hi Everyone,

We're having spaghetti with (mostly) a home made sauce. Added some medium salsa for a little kick. It's been simmering all day. Ummm.

We're also having a salad, garlic bread, and maybe a cake. I have enough dark chocolate brownies for everyone so that will probably do. :)
 
Hi y'all, I know I'm days behind with my quotes here. But if I don't just go day by day, it'll get all messed up!


I haven't found a good boxed seafood stock. The last time I used one, I had to throw out all my chowder because it was inedible. I have had better luck with the bottled clam juice or the fish bouillion cubes (or both!)

Thanks! I'll pick up the clam juice instead of the stock! I'd be sick if I would have to throw a whole seafood meal out because of the stock!:thumbsup2

Also, thanks for the jalapeno cream sauce recipe!

I don't know.....I see the food you ladies turn out and then see some pictures and wonder how that poor woman on that thread a while back missed out on such wonderful food!

I tease the dickens out of my DH but everytime he watched foodtv with me he compares chefs like Emeril and his personal demon Bobby Flay to his hero....Justin.

She's really missing out isn't she?! ;) Yep, Bob's hero is still Justin Wilson, if there isn't any car racing on Saturday's & I'll often find him watching PBS and old Justin shows! Then I have to hear over & over his " Pooh yi yi, I guarantee dats good, cher! " for the rest of the day!:laughing:

Just thought I'd share the "healthy" fried green tomatoes, Breaded with nonfat milk, egg beaters, panko, and reduced fat Kraft parmesan cheese-stuff. Fried in skillet with PAM.

Last night I did a take on filet oscar- trimmed round steak with crab meat and bernaise sauce(bottled). With bake potato topped with onion, roasted red pepper, garlic, kalamata olives, mushrooms. I halved(and halved again!) all that so that's what's for dinner tonight, again! If I remember to take the camera home I'll get a pic.

Girlfriend, Those "diet" fried green tomatoes look delish!!! I'm very impressed!:thumbsup2

I made this recipe up...it's a raspberry margarita....1 1/2 ounces silver tequila, 1/2 ounce framboise, 1/2 ounce couintreau, juice of one lime, shaken until very cold and then served over crushed ice in a glass lined with lemon sugar (from today's farmer's market haul), and garnished with raspberries, lime slice, and blue plastic mermaid (if available).

Erm, I better go figure out dinner before I drink this thing.

That's looks & sounds great! As does everything else you've posted in the last couple of days! We went to a crab boil yesterday & I brought watermelon margaritas! That would have been so cute with those little mermaids! And Alexis would love those in her drinks! Where did you find them?

Kathy, so sorry you had to throw out the fish! Was it frozen or fresh? Girl, on Friday I bought the nicest ahi tuna at a really decent price at Dorignac's on Vets. I marinated it & cooked it on the grill, it was so yummy. The only other cooking I've done this weekend was belgium waffles this morning. Have to find something for dinner, now.

If I missed anyone I'm sorry, so much to catch up on, just missing a couple of days!

It was given to Johnny by a co-worker, frozen. It was awful.:sad2: I never make it out to Dorignac's, but that may change soon.;)
