Lauren---my dear friend.......go to bed..................we will all be with you tomorrow...........looking forward to seeing the wedding pictures...............and please let the chocolate cool a bit before you do **whatever** with it....we don't need to hear of any chocolate burns on your honeymoon!!!! ;)

I am loving all of the pictures on here today!!! I really need to figure out how to post them, plus get one in my sig. I want to be one of the cool kids tooooooooo, lol.

laura&liamsaunt----you guys do look like you could pass for twins!! Congrats to caili.....what a precious little girl....a doll like all have said!!

Kathy---what a great picture of you two!!! Now I see why Kyle is so darned goodlooking!!!
I am not ready for the day of Ross being gone more then here.....I miss my boy when he is off on a busy day of activities, and I am the one who is dropping him and picking him up!!

I have a ways to go though as we will be the house of choice for awhile I think.....we live very close to the school so that is a big factor on it, plus the kids do love me as I have been class mother, and sub teacher to them for 5 years now.
Ross' friend who slept over left at 10ish this morning when his mom picked him up, and then about 40 min later we hear knock knock on the door and another was here for the day, along with 2 others who showed up to hang around for a bit. Moments like this make it worth while for the money it costs to have the "toys" for Ross. I never regret Ross being an only cause he is rarely alone here, lol. Though when they all left he was ready for some down time, and headed out back to the swing with the dog to read, and as he put it "chill for a bit".

Tomorrow Kris doesn't have to work so we are heading to a little animal rehab place a few towns over we always talk about going to. We were going to go away this weekend to Bar Harbor, but the weather is quite chilly this weekend so I switched our hotel reservations until the end of July. Something to look forward to for sure!

We had nice evening at the party. Our friends renewed thier vows, it was so beautiful, I cried!
 
Today we are going to my mother and stepfather's house for lupper. :) She is making chicken tetrazini and I'm not sure what else. They just got some squash from their garden so I'm sure we will have some of that somewhere. I made a derby pie to take for dessert. I added a handful of chopped hazelnuts in it this time, mmmmmmm! :)

Our cookout/get together last night was really fun. I'm paying for my overindulgence this morning, however. That sangria was really good!:rolleyes1 Gotta remind myself that I'm no college co-ed anymore:confused3 Besides the sangria, we had a spicy grilled shrimp with black bean and corn salad (recipe I'll post--super yummy), Jenny's Spinach Bruschetta (big hit), burgers and dogs, with some brownie ice cream sundaes for dessert. Yummo!

So here's the sangria recipe
Sangria Blanca
2 bottles dry Riesling
1 cup cherry flavored brandy
1/2 cup lemonade concentrate (thawed)
1/2 cup superfine sugar
12 ounces stone fruit
1/2 cup fresh mint

Combine all ingredients through fruit in a bowl and mix well. Place in fridge overnight. Place in a large pitcher with ice and mint right before serving.

Here's the shrimp recipe
Spicy BBQ Shrimp with Black Bean and Corn Relish
1/4 cup vegetable or olive oil
1 tablespoon minced garlic
1 tablespoon fresh thyme
1 tablespoon chopped cilantro leaves, plus more, for garnish
1 jalapeno, seeded and minced
1 teaspoon paprika
1 teaspoon salt
1 teaspoon light brown sugar or honey
1 teaspoon ground cumin
1/2 teaspoon Worcestershire sauce
1/2 teaspoon cayenne pepper
1/2 teaspoon red pepper flakes
1 lime, juiced
2 pounds large shrimp, peeled
Black Bean Relish, recipe follows

In a large bowl, combine all ingredients except the shrimp and the relish mix well to combine. Add the shrimp to the seasoning paste, and toss to thoroughly coat with the seasoning mixture. Let the shrimp sit in the seasoning mixture while you prepare the grill.
Prepare a grill and thread the shrimp onto 4 or 6 metal skewers (depending on their size)*. Place shrimp skewers on the grill and cook for about 3 minutes on each side, or until the shrimp turn pink and are lightly charred on both sides. Do not overcook!
Serve the shrimp with Black Bean Relish
*If you don't have metal skewers for grilling, bamboo skewers will work just fine. Simply remember to soak them for at least 30 minutes in warm water before threading them with ingredients, this will keep them from burning.

Black Bean Relish:
4 cups cooked black beans, drained and rinsed
2 cups cooked corn kernels, cut from the cob
1 red bell pepper, finely chopped
2 large cloves garlic, minced or 1 teaspoon minced garlic
2 jalapeno peppers, seeded and finely minced
1/2 bunch scallions (green onions), minced
1/4 cup chopped cilantro leaves
2 limes, juiced
1/2 cup extra-virgin olive oil
Salt and freshly ground black pepper

In a large bowl combine all of the ingredients and stir to mix well. Season the black bean relish with salt and pepper, and set aside at least 1/2 hour before serving with the shrimp. Finish the black bean relish with the chopped cilantro.

Wendie - As my tag says, would you please blow some of that cool air down here? I was the same way with Kyle when he was younger, room mom every year, house full of kids. He's already gone for the day - tubing with his buddies and all of their girlfriends.

Today I'm making shrimp etouffee, rice and a salad with Ohana's honey-lime dressing.

Kathy I wish I could give you a little of our cool weather. We never made it out of the 60's yesterday. Tuesday we are supposed to be in the high 90's.

I have no idea WFD here probably just grill some steaks maybe some grilled veggies too.

Laura & liamsaunt I have to chime in too you two do look like you could pass for twins at least in that picture. Calli is too cute. Congrats to her on her medal :cool1:

That shrimp and black bean recipe sounds really good. I will have to try it one day when Liam is not around.

Today I am going to my inlaws for dinner. I had been planning on going to see Caili's ice show and Liam's baseball game, but DH told me Friday night that today was his parents' 40th wedding anniversary and they flipped out when he said we were not coming to visit. So, of course, we changed plans. Sometimes I get a little irritated when DH does not remind me about his family stuff like birthdays and anniversaries, etc. in advance, but I suppose it is partly my fault too--after all we have been married for 10 years so I should probably know all the dates by heart by now. But I don't! :rolleyes1

We are taking them to a little seafood place by their house. They have a screened outdoor seating area and the fried clams are not too bad.

Gretchen- I have not been brave enough to get on a scale. I keep buying the magazines, you know the ones at the supermarket...."Lose 20 lbs in one week" but on the same cove there is a fabulous dessert! Guess which one prevails in my home :confused3

Anyway, I would not mind a "healthy" Buddy if you want to try with me, I have no staying power of my own.

Nancy - I'll take all the encouragement I can get. I have also joined a thread on the WISH forum. Everyone weighs in and reports the net change each week. I'm hoping that knowing I'll have to admit my success/failure each week will keep me on the straight and narrow. We'll see.

I have about 15-20 lbs I want to lose before we go to WDW in Oct. Hopefully I can lose it the easy way. The last time I lost a large amount of weight was when I had a jaw infection, I so don't want to do that again.

OMG. You're absolutely right. I have no desire to lose it that way. I can't imagine how horrible that was for you.


As for Caili, she was very excited about her first place finish today. However, she has won this particular event every time she has entered it this season, so it wasn't a surprise to me. Tomorrow is the big event -- her individual program -- and then her team event. I am WAY more nervous than she is. When people ask her if she is nervous, she looks at them like "What is nervous???"

What a cutie. I like that attitude. Congrats to her.

Yell if you need any moral support! I have no willpower either. My motivation is mostly lacking too. However I can hold down that spot in front of the tv real well!:rotfl2: I've been craving a chocolate milk shake today. But I'd have to walk in the heat to get it. So maybe that lack of motivation isn't so bad after all!

We are leaving in about an hour to take DS to his last camp of the summer. The kids loved 4-H camp and said they wanted to return next year. This camp is run by the SC Waterfowl Association and it teaches safe hunting, how to build a duck blind, how to throw a cast net, etc. DS is over the moon excited. I'm sure he is going to have a great time. My boss sent all three of his children in past years and they all loved it.

Dinner tonight will be steaks on the grill when we return along with steamed green beans and boiled red potatoes.

I am so glad this weekend is almost over. I am exhausted. Caili added two more medals to her collection. She placed third in her program and her team placed second, so she got gold, silver and bronze. Competition season is over now until the fall, and she will move up at least one level before then.

We got to see the last inning of Liam's baseball game -- the last of the season, as well -- so I was happy I didn't miss it entirely.

After all that, I just made pasta with store-bought marinara sauce for dinner. I wasn't much in the mood for cooking.
 
Congrats for a good season to both Liam and Caili! Take a well desreved break!

The Alli took a Rick break over the weekend so there's an extra pound or so to work off next week. But it was good having him home.

All the healthy stuff I got will be carried over for this week, it might hurt DH to ingest it. LOL

And the chocolate shake was sucessfully averted. Thank goodness!

ETA: Giada De Laurentis made a delicious looking Limoncello cheesecake sometime back and I have been wanting to make them. So I went and picked up a bottle of limoncello. Oh. My. Word. That stuff is so freakin' delicious!! Where have I been all this time that I have never tried it before?!?!

I hope there will be enough left over to make these cheesecake, hee hee!
 
Aimeedyan- OMG your food looks so good, but I have got to tell you that the German chocolate cake has my mouth watering and it is only 7 AM! Did you boil the milk or bake it? I wondered how you decided to doo that step.

Lindsay- I also bought a bottle on Lemoncello, and I liked it as well. I made the Cosmo posted on this thread and it was so nice for a summer cocktail.

Great pictures, aimeedyan! I can never remember how to actually put the photo in the post, so I can only do links. I don't usually like chocolate, but your cake looks gooood!

Tonight I am making cornish hens. I am going to do something different and try and cook them on the rotiserrie attachment for my smaller oven. I've had this oven for years but have never tried the rotisserie attachment. Needless to say, the odds of you all getting to read a "dinner gone horribly wrong" post tomorrow are pretty good. But, I figured, what the heck, I'll give it a try.

Sides are going to be a tomato-mozzarella-basil salad, and sugar snap peas.
