I'm home! We had a great time and awsome food. We walked so much. I think I at least kept ahead of the caloric intake.;). I have to get back to the laundry I'll catch up on all the posted tomorrow.

Welcome home, can't wait to hear all about it, especially the food!;)

It means my iron has gone up! So the infusion did something, not sure how long it'll last but I'm so glad it's improved some.
Downside is now I'm dehydrated because I'm not drinking ANYTHING. I was getting lots of fluids through the ice. I do well if I drink water from a bottle so I may start investing in those again. They are just $$ but if it works...

Tonight we're having roast beef po-boys!! I'll post the dessert recipe in a bit.

German Chocolate Cream Cheese Bars

Base:

1 package chocolate cake mix
1 1/2 c. quick cooking oats
1/2 c. margarine, melted
1 egg

Filling:

1 container coconut pecan frosting
8 oz. cream cheese, softened
2 eggs

Preheat oven to 350. Grease a 13 x 9 inch pan. Combine base ingredients and mix at low speed until crumbly. Reserve 2 cups for topping; press remaining crumb mixture in bottom of prepared pan. Combine filling ingredients and beat at high speed for one minute. Pour over crust. Sprinkle reserved crumb mixture over filling. Bake for 45 minutes or until firm when pan is lightly shaken. Serve warm or cool.
 
Good Morning Everybody!

Wow is it great to have a moment to myself so I can check in here. I'm getting ready to go back and try and catch up on what I have missed but I wanted to post to let everyone know my life should be back to normal, or as close to it as my life gets. :lmao:

Tonight's dinner is Kathy's mexican stuffed shells, comfort food for my wonderful husband who has held up through all of last week's trials including all of the visiting family and his visiting college roommate who left this morning.

Today is my daughter's 10th birthday so after dinner we are doing the Birthday song with a candle in her favorite, a cinnamon Krispy Kreme doughnut. She doesn't really like cake and it is her birthday, so...... Anyway, Kenny's mom and my parents will stop by for dessert and the present (and candy) overflow. We are trying to keep it low key because the crowd upset her last year and we figured it was her birthday so we would do what she liked best. The rest of my family has been trickling in all weekend bringing presents so she could enjoy them one at a time.

Anyway, I'll post later after I catch up, but I was so excited to be back I had to say Hi first.

ETA: Gretchen, you were in my thoughts this morning. Diet Coke was my absolute first stop after security. Hope you're holding up girl!

I know this is a really late response, but Sheryl, I'm so very happy for you! I know how hard it is to get anything done with the state DSN so this really is reason to celebrate.

Janice - Glad to see you back. Looking forward to your report.

Wendie - So sorry I couldn't wish you well before the surgery. I hope everything goes smoothly and you are able to type soon. Let me know if I can do anything (I can ship some fruity pebbles to Kris if necessary).

Nancy - I didn't realize your trip was coming so fast. With all the commotion, I know you are really looking forward to it.

Sorry to everyone I may have missed. My mind is still not 100% yet. As a matter of fact, I was almost ready for work this morning when I realized I hadn't gotten the kids out of bed. :sad2: Hopefully, a couple nights of rest with a couple bottles of wine will take care of it.

Dinner tonight will be cornbread chicken tenders and a green salad.

This is a short week for me. On Thursday morning, DH and I are leaving for New Mexico for a storyteller's convention. He's doing some freelance work for the sponsor, and I get to tag along!! I'm really excited to be getting away from the kids for a while. Not to mention, not having to cook, clean, etc., you get the idea!

With Lindsay & Aimee improvements with iron, I am really going to have to try the supplements again. Glad you both are doing so well.

Nancy, I made it to the fest Sat. evening! SIL helped me get the big den closet cleaned out, then she & Alexis went with Bob & I to the local fest! We caugt Irma Thomas & some of the Beach Boys but had to watch our Tigers on the big screen too! The Gumbo from Prejean's in Lafayette was as good as I remembered! Bob & I shared 2 bowls, it was Pheasant, Quail & Andouille this year in a really delicious dark roux. They also had crabmeat/crawfish stuffed mushrooms with a cream sauce on top that was sooo wonderful. They have a cookbook out, I'll have to go buy it!

Everyone's favorite Contractor will be coming out tonight for a final planning meeting! ;) Tomorrow we'll go to the cabinet shop to order the vanity. Today, back to cleaning & errand running. Tonight's dinner will be Red Beans I have in the freezer.

I bought a flat iron steak at the store yesterday. Another shopper was telling me how good they were and they were on sale so I bought one. She suggested to do a dry rub and throw it on the grill. I'm a little cautious since I don't do well with anything but filets but this didn't have much visible fat on it.

I'm going to grill it up tonight with whatever veggies I can find at Target when I go to run errands today for work. Kroger's veggies were sad yesterday. They had squash/zucchini for 99 cents a pound and the THREE pieces of zucchini they had left were brown and squishy. Gross.

Hopefully Target will have a better selection!

Hey ladies! Really need to get the kiddos down for a nap, but you see where my priorities are!;) The sausage and peppers last night was really good. I read a recipe on the Food Network where they added Balsalmic Vinegar at then end to the tomato sauce. Made it really yummy! Just had some leftovers for lunch. Not sure wfd tonight. I have to make a grocery store run this afternoon--so we'll see what I come up with. We're down to one grocery store in our town right now. But in a few months we'll have a Walmart Supercenter, a Walmart Neighborhood Market, and later next year a new prototype Super Kroger. It's either feast or famine around here.

Okay, it's really naptime now! Bye! Oh, and Hersey, welcome back! Can't wait to hear about the trip--wanting some pointers for ours in a couple weeks!
 
Becky, do you have a fry daddy or something like that? I have a hard time getting the breading to stay on my fried stuff when I fry things in a pan.

Yesterday, we used Mom's deep fat fryer for the food. If your coating is falling off, your oil probably isn't hot enough. That happened to us yesterday when we tried to fry some calamari. The coating slipped right off and turned all slimy, and of course, the calamari immediately turned to rubber. Not that we needed more food!

Glad to hear your iron levels are better.

We're back! We had a great time. Glynis- Thanks for all the tips. Rick told me if he heard your name again he was gonna slap me- so you became "she" and "her".:rotfl: Nothing he could do about that! And Bengal Barbeque was our favorite by far! Had to eat there both days.

The Haunted Mansion was all decorated up for The Nightmare Before Christmas- I wish they did that at WDW. It was sooooo cool! And we couldn't believe how much more there was to Pirates at DL. We will definitely be going back next year. I think later in November though so we can see Small World decorated for Christmas!

I'll post some pics when I get the camera unpacked.

And the TSA guy said the pvc was a good idea when I asked him. I had to explain it, but he caught on pretty quick.;)

I didn't even think about it when I was packing, but Rick pointed out that it was a good thing I didn't bring my Red Sox hat to wear. :rotfl2: Yeah, that'd be good- right in the middle of Anaheim!:eek:
 
Tonight I am either making the mutter panner I keep meaning to cook, or else I am doing a soup with noodles, tofu, bok choy, water chestnuts, etc. I have way too much food in the fridge right now and we are leaving for vacation on Thursday. Laura is going to have to come over and take my fridge contents home to her house!

I am not excited about our trip yet. I have a gazillion things to get done and I cannot figure out how to do them. This is stripping time and I don't like leaving it to Buddy. I was gone last year becasue my Mom was sick and he told me to take care of her, he would worry about the crop but here we are and I am getting ready to take off. I have to pick guys up tonight for 5Pm and then bring them back when they finish and will do this up til Wednesday. Hopefully a lot will get done before I leave on Thursday.

I'm so glad you had a good time!!! Pirates is AWESOME at DL!!! I was so disappointed in it at WDW. I think you'll love going back at Christmas time! The Haunted Mansion keeps it's holiday overlay up through October, November and December, so you'd be able to see it again that way.

I love Bengal BBQ!!! Did you try the asparagus??? Rumor has it that it may be closing. I'm hoping it's just a rumor, but not too hopeful.

I know what you mean about not getting excited with so much to do! It started pouring outside so instead of errand running I went back to closet cleaning. My linen closet is super narrow but very deep, the stuff back there was yuck! So I was down to the wire cleaning before picking up Alexis from school, jumped in the shower to get all the dust off. Stepped out of the shower & her daddy calls to say he's rained out & will go pick her up from school. Ugh now everything left to do is still yucky & dusty but I'm all cleaned up now! Hopefully I'll get it all done before the weekend & then I can start packing & getting excited.

But Woooohooo my SWEEEET HUSBAND just skyped me that he called dining & we have a ressie for the BISTRO!!!! :banana:

Well, actually Rick asked if we could try something Glynis didn't recommend, in his sarcastic, testy tone. My response was "You love all the food that comes from HER recipes why would we not go with what SHE suggests?!? SHE obviously knows some food!";) And you'll get excited, just give it a day or two. As your to do list gets smaller the excitement goes up!

I think we had one of everything. But yes, the asparagus was my favorite. I had it twice on Friday and once on Saturday..:rolleyes1 I think the counter service food in general was much better at DL than at WDW. And I would be extremely sad to see Bengal go. Oh, and I got my first Dole Whip float at DL. You'll see pics.

I told Rick next time I wanted to do Blue Bayou. So it's a go on that. He wants to get more DVC points at the Grand Californian when they start selling those. I think I should just sign over my paycheck to Disney...:sad2:
