Good morning!

Sorry, I've been MIA lately. Down in the dumps for a while, gotta pull myself up and get back into the swing of things. I probably missed a lot, haven't read back.

WFD tonight - Spaghetti and Bolognese sauce, eggplant sticks, salad and garlic bread.

Are you ok? Do you need to talk? We really missed you around here! Please take care of yourself! We need you!!!
 
Today we are having a bunch of different things. Spicy fried calamari to start, then a fritto misto (cauliflower--we are going to use Kathy's recipe!), mushrooms, eggplant, and zucchini. Then, a plate of italian meats, artichoke salad, and a white bean salad with basil.

Then, for the main course (ha!), we are making a bunch of pizzas. Six different kinds--a margharita, a gorgonzola-fig, a meatball one, a white pizza with prosciutto and truffle oil (DH's favorite!), one topped with arugula and parmesean...and one more that I have not decided on yet. Plus, we are making garlic butter dipped breadsticks!

So, if any of you guys are in the area, feel free to stop by, because we are making enough food to feed an army! One caveat: you can only come if you are a Red Sox fan. ;) :rotfl:

Wow! That sounds incredible!!! The gorgonzola/fig combo sounds to die for!!! If I were anywhere near Boston, I'd be over in a heartbeat! I'll root for whoever you tell me to, if you feed me like that!!
 
Don't know what's for dinner. Alan is cooking tonight, and so far, he's still in bed! I'm not going to nag, even though I know we'll end up with something like cold cereal for dinner. I'm just not up to cooking today. I've spent the weekend, decluttering all the toys in the house, and I'm pooped!!! Our local thrift store is going to get a windfall come Monday morning!!! I just told the kids that if they wanted Santa Claus to bring them new toys, then they had to make some room!

Glynis - Thanks for asking, I'll be OK. This month is the two year anniversary of my Dad's death. I thought after reliving it last year I would be a little better this year, but not. I know I did the right thing by removing him from life support, but I still blame myself.:sad2:
 

Good Morning All! I am making a quick dinner tonight of pasta and salad...maybe ravioli.

We went to Home Depot yesterday for some plumbing supplies and decided to totally gut the small downstairs bathroom. We bought the vanity and sink yesterday and will go back today for floor tile, mirror and order a shower...:cool1: :cool1: :cool1: I am thinking to paint a wedgewood type blue and white trim...I will share pics as well...oh, and I picked up some lime green mickey heads...:thumbsup2 :thumbsup2 :thumbsup2

I am so jealous! I wish we had enough knowledge to do that to our bathrooms. We have new construction but I'd love to "personalize" a lot of it by adding tile, new vanities, etc but neither of us are handy at all and are afraid of ruining it.

Can't wait to see pics!

Tonight I think we'll have carmelized chicken with something on the side. I need to hit the grocery store this afternoon, I guess. I'm still at work for another hour or so.

What I REALLY want is just a big bowl of Chili's queso and chips for dinner. Perhaps I'll just eat that! =)

Yum. Your Jerk Chicken Sandwiches sound good! Can you tell me how you do the chicken???

Hope you enjoy the roast!!!

Here is my Jerk Marinade Recipe I use:

Put the following in a food processor:
1/2 Cup chopped onion
2 Seeded Jalapenos - chopped
3 Tbsp white wine vinegar
2 Tbsp soy sauce
2 Tbsp canola oil
1/2 tsp ground allspice
1/4 tsp garlic powder
1/4 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground pepper
1/8 tsp ground nutmeg

Blend until well chopped and mixed. Put in a ziplog bag with 2 chicken breasts or 4-6 chicken tenders. (double the recipe for 4 breasts) I pierce my chicken with a fork so it will soak up the marinade better. Let marinate in fridge up to 4 hours. Then throw them on the grill and cook until chicken is done.
We also grill the pineapple slices - and coat the sourdough bread with butter and olive oil and put those on the grill too to toast.
I serve my jerk chicken on the grilled sourdough bread with grilled pineapples, pineapple cream cheese, lettuce and tomato for me and some swiss or provolone cheese. Delish!!!
We had ours with a bottle of 2004 Goosecross Chardonnay - it was a tropical chard - and worked perfectly with the sandwiches!

I got my pot roast going today. It smells great. I love to cook and have the house all smelling good! I'm just gonna have it with some biscuits. Can't wait!

My Sis IL is taking credit for the Sox win on Friday and the Yankees loss! It seems that the Sox do not win if they are watching the game while at their club for dinner.....so they left. The rest is history


They are at the Patriots game today. We'll have to see weather or not they are good luck or must stay away after today.

Last night Dan called and asked us to join him and Erica for dinner so that we could meet their friend from Fl. It was a good thing because I did not even get home from the store until 5 PM, so dinner was going to be pretty shabby.

Did anyone see Ramsey's Kitchen Nightmares where the chef drowns everything in parsley? That was Erica's and my dinner last night!@ Parsley encrusted portabella mushrooms, parsley encrusted tornedos, and parsley encrusted everything else :scared:. FOr the most part, everything else was good, and our server was the best, so it was a nboce evenoing.

My dinner is a little changed today. Still having ham and turkey, sausage and apple stuffing, pineapple bake, the sweet potato gratin, mashed potatoes and gravy, steamed green beans,and corn. Marisa is picking up some kind of rolls. I bought a pumpkin pie and an apple pie from Costco and made the derby pie.

Chris called his Mom and is already headed back to Va. She is not sure what happened, but they left around 2 AM, and it sounds like he and GF had a tiff. Young love!

Tom is pretty amazing when it comes to home renovation stuff. I have no clue. He reads up on the internet, talks to people and then he could tackle the world. Our near future plans are to pull down the wood paneling in the family room and fix the sheetrock underneath and paint and then the next big job is to tear down our screen porch (hire someone to rebuild) and demo the concrete patio and then put a paver patio in. We will get lots of help from his Sis, BigMama and BIL, Clark-Kent. They have done alot of work in their home and said they would help us.

Our bathroom is now pretty much gutted...we have the lights to take down and a few more adhesive tiles to rip up. There is also some rotted wood so it was a good thing we are doing this. We also decided to tile the shower instead of an insert. We are shooting to have this done the 2nd - 3rd week of Nov...if not sooner.

Buddy did our bathroom about 10 years ago. It was a nightmare! He had a temper that I had never seen before, almost had a stroke when Dan drilled a hole thru the wall where it should not have been, went deadly silent when the bath and shower enclosure went in a little wrong and he literally watched paint dry :mad:. We decided after that little project that no matter what we wanted done in the house we would pay. We would pay whatever the contractor wanted and we would feed the workers. He would never tackle that kind of job again and I would never mention that it was his idea in the first place.

Well, now I am taking it a little personally. I was fine when Chris and Meghan headed home, I understood that Kim has games at UHart today, I understand that Debbie is exhausted and asked her not to come, but now Donny calls and is wants to work on a project he thought he finished :mad::mad::mad::mad::mad:.

Ladies, I can post WFD for Monday Tuesday and Wednesday. Leftovers all three night!


ETA That now Buddy is going to keep shaking his head! He thinks we had too much and was not buying that I wanted leftovers because I know how much he likes them
 
Hello all. We've had a nice weekend--meaning I haven't had to cook at all so far;) Friday night we had our church small group and someone made to die for Chicken Enchiladas (will have to get her recipe) and a heavenly chocolate cake. Then last night our neighbors invited us for dinner and she made a great jambalaya, not quite as spicy as I like it, but yummy none the less. Tonight will FINALLY be the sausage and peppers I meant to cook last week.

That is what I thought. We are leaving around 5 AM on Thursday and I have a busy week before that so this is going to work out well. My family likes leftovers so I know that Mon and Tues are good to go and I'll worry about Wed when the time comes.

Marisa talked to my sister and she wanted to know if there was anything she needed to bring. Risa told her "containers". :lmao:I can also pack food for my Aunt. Gail and I try to bring her enough meals to make sure that she does not try to cook. She used to rock in the kitchen but at 94 she is a little forgetful so heating in the microwave is enough for her to remember. I think it is getting to be too much to remember at times.
