Lori -- I somehow missed that you were leaving today. I hope you have a great time!

Sheryl -- Good news on the renovation. Does this mean you will be seeing more of Mario? ;)

Wendie -- I hope you have a great time in Bar Harbor and all goes well Monday with your surgery. Have some lobster for me. I didn't get to have any this summer because of Liam's shellfish allergy, but his test results came back negative for lobster this time, so that means I am definitely having some lobster next year! :cool1: I won't give any to him, of course, and I won't cook it in my house, but I think a lobster roll would be safe. :thumbsup2

Dinner tonight is flounder, arctic char, spinach and some sort of starch. I'll also make a sauce for the fish, but I can't decide what I want. I'm not very organized today.

Wendie- Have a great weekend and enjoy the game on Sunday. I am not sure that you will be able to peek in before you go, so take my best wishes with you. I'll be thinking about you and will be waiting to see Kathy's update. Gosh, she is quiet today.

Sheryl- I'll have a good time, I just wish that Buddy could make it. He is going to call as soon as he gets into the yard but he still does not know if he is heading back out. Friday's are a nightmare for him lately and his co worker left early today. He did not expect this becasue he left early last weekend :confused3. Bud is senior man but let it go. There are two other guys who can do the job but his employer is not comfortable if Buddy or his coworker is not there, so what can you do? Now stop and have some of that good food!!!!

I have got to tell you all that I am not in good shape. The therapist gave me some exercises and I bet the rest of me is going to fall apart :confused3 The muscles she wants me to work have been tucked away and not used in way too long! I keep asking myself when it happened :eek: Oh well, no dancing tonight.
 
Now I have to tell y'all I am sold on Ground Turkey! I made Lindsay's Boo Burgers last night ( there on page 25 called Smokey Chicken Patties I think) and they rocked!!! As Lindsay recommended I used Turkey instead of chicken. I also added cumin & used a zester to get the garlic very fine also per her suggestions. The only changes I made, ( come on, y'all know I can't possibly stick exactly to a recipe!) was I used parsley but also added cilantro, added a little more black pepper & about 1/4 cup shredded sharp cheddar cheese. Can I tell you these were delicous!!!

Hey Y'all,

I never left the house today at all, started on the vanity cabinets, then I realized I had to clean out the other bathroom cabinet to put our stuff in there! Right now the whole house is really a mess! There are now 4 large bags to go to Goodwill, a walker, a bedside commode! & 4 large bags of trash sitting in the garage.

A quick hello I have been packing Ross up to go to the inlaws this weekend, and Kris and I to go to Bar Harbor. We will be back on Sunday for Ross football game.
Tonight will be at a fav mexican watering hole on the way. Tomorrow lobster!

My surgery is scheduled for 9:45 Monday morning, I have to be there for 8:15.
Sheryl- I am so glad that things are a GO for the bath renovation!!

Kris will PM Kathy Monday afternoon, and she will let you all know how things went.

Good news is Mario will start the work when we leave for WDW! Bad news is Mario will be starting the work while we are in WDW! ;) :laughing:

More bad news is that the vanity & countertops will take 4 weeks to come in! And they won't be ordered until we have a final planning meeting with Mario & then the cabinet makers. Ugh.

Glynis, Thanks for the tip! After making the Greek patties with turkey, & then Lindsay's Boo burgers, I've realized that turkey is great to use with ethnic strong flavors! When I've tried it in the past, it was just has a lowfat replacement for beef, so your teriyaki burgers sound great!

p.s. I know y'all are probably shaking your heads :sad2: wondering why in the world I waited until the last minute to do all of this cleaning? Me too! I had a long time to get ready for this but NOOO not me! I must be the Queen of Procrastination!:sad1:

I use turkey all of the time. Buddy stopped asking why I don't cook with "real" meat but I would be able to sell tickets if I put water chestnuts in his burgers :lmao::lmao::lmao::lmao::rotfl2:

I never thought about when the turkey worked well as a beef substitute, but you are right. I use it when I am using strong seasonings. Alone it does not satisfy me but it takes seasoning well. I loved the teriyaki burgers minus the chestnuts. I was not brave enough to put them in and watch Buddy crunching and worrying about what I hid in his dinner :rotfl:


Dinner tonight is going to be simple, I just don't know what it is. I spend a few hours every Saturday with my Aunt and I promised myself I would do some work at my Moms. I also have to shop and get a head start on tomorrows dinner. My sister's son, Chris is home and he brought a girl with him. He had told his Mom that he wanted to come for dinner so I want it to be special. He is going to take her to Newgate Prison (he has never in 24 years gone there, but now he is in love) and then come here so I want to be close to ready when they get here. I have to stall dinner, although I am never on time anyway, so that Gail has time to get some sleep. Somewhere in here I have to clean the great room and kitchen.

I am cooking a mini Thanksgiving meal with turkey, ham, stuffing, mashed potatoes and gravy, the pineapple bake, sweet potatoes casserole, a green veggie and corn. I think I'll make a carrot cake and something chocolate, maybe the derby pie. I would make a pumpkin pie but noone will eat mine so I'll pick one up at Costco if I decide to have that.

I have got to stop rambling, on three hours of sleep is showing I make no sense.

We may have to do our downstairs bathroom sooner rather than later. Tom was fixing the leaky faucet and his finger went right through the pipe...I guess another one is leaking too...in the wall. :scared1:

Nancy, Hope you're feeling better...how was the party? Your dinner sounds awesome...all my favs. What time should I be there??? ;)

No cooking here tonight. MIL is coming to stay the night and would like to go out...we are prolly going to try a new Italian place.

Today is lunch and a movie! We are going to the Big River Grill and going to see "The Kingdom." Woo hoo!

Sheryl, so glad you like the Boo Patties! They are awesome aren't they? I actually tweaked the original recipe to make it more to our liking.
 
Good morning everyone! I am soooo tired. I stayed up way too late watching the game, it did not get over until 1 AM! At least I think it was 1 AM, my brain is so foggy.

Anyway, I did not end up making anything I talked about yesterday. Instead, I made some pasta with a broccoli cream sauce:

I also made some crusty bead and some chicken for me which I did not eat.

Today Laura and the kids are coming over and we are going to my parents' house to have an Octoberfest. There will be lots of food, probably too much food, but what else is new around here. On the menu are bratwurst, potato pancakes, schnitzel, spaetzle, sauerkraut, applesauce, and probably some other stuff I am forgetting.

After dinner, we are going to play the new version of Cranium...Cranium WOW. DH got it in the mail the other day. I love board games, esepcially ones like Cranium with all the singing and shouting, so I'm looking forward to this. It's the small things that make life so exciting. :rolleyes:

Up early to start on cleaning out again! SIL is going to come help & then hopefully will be able to hit the fest sometime this evening! So probably sandwiches for lunch & Festing this evening!

Nancy, Talk about working well under pressure! Partying with little sleep & now cleaning & cooking a Thanksgiving style dinner for guests! Whew that wears me out!

Lindsay, The leftovers last night were even yummier! Bob was right it did taste similar to Cajun Hot Sausage, with all our tweaking we've got a hit there!

Becky, I so wish I could come to your Octoberfest!!! Sounds wonderful! One of the things I hoping to get at our local fest this weekend! We have our typical New Orleans style booths but also have a mini Beer Garden but nothing like all the yummy things you're having!! Have Fun!

What the HECK are you people doing up so early on a Saturday? =) Maybe our time zones are really off - LOL.

I have no idea what is for dinner tonight. DH is working until 6pm and we have to take Pixie, the stray dog, to her new house tonight when he gets off. So, we may do the fast food thing on the way to or from the new owners house since that will take up the entire evening.

You have got a busy day ahead of you! I think you should do the derby pie. It's failsafe, and very quick!!! Kids and grownups all like it, too, so that's a plus!

Dinner tonight will be cornbread chicken tenders, corn in a butter sauce (love those frozen green giant things), and rice. I'll be picking up some ice cream later at the store for dessert!

It's been raining here for the last 12 hours, so it's gloomy and cold here! I had to turn my heat on!!! I looked out the window a while ago, and can see snow on the mountains in my backyard! Yikes!!!! I don't want winter, yet!!!
 
Tonight will be Jalapeno Cheese Pie with some leftover rotisserie chicken added in. Gotta love those Friday rotisserie chicken specials! ;)

It is a Southern Living recipe that I haven't tried before, but I have the ingredients on hand so...:idea: I'll have a tossed salad with it.

It was going to be lunch but I need 3 more eggs for a total of 6 and the chickens are still laying in their nests. I used up all I had making egg salad yesterday so until they cooperate, I'm at a standstill. Guess now would be a perfect time to nap. :goodvibes

Tonight I'm making Jerk Chicken Sandwiches.
I make them with grilled pineapple slices and pineapple cream cheese on sourdough bread - delish!

I'm most excited about my dinner tomorrow night - tomorrow morning I'm gonna do my very first Pot Roast - and I'm using Glynis' recipe!
I have a 3 lb beef roast - some carrots - some new potatoes and I'm gonna put it all in the crock pot in the morning and hopefully by dinner tomorrow - I'll have roast!! Then I'll probably make roast sandwiches out of the leftovers.

Good Morning All! I am making a quick dinner tonight of pasta and salad...maybe ravioli.

We went to Home Depot yesterday for some plumbing supplies and decided to totally gut the small downstairs bathroom. We bought the vanity and sink yesterday and will go back today for floor tile, mirror and order a shower...:cool1: :cool1: :cool1: I am thinking to paint a wedgewood type blue and white trim...I will share pics as well...oh, and I picked up some lime green mickey heads...:thumbsup2 :thumbsup2 :thumbsup2

Sorry, I've been MIA lately. Down in the dumps for a while, gotta pull myself up and get back into the swing of things. I probably missed a lot, haven't read back.

Today we are having a bunch of different things. Spicy fried calamari to start, then a fritto misto (cauliflower--we are going to use Kathy's recipe!), mushrooms, eggplant, and zucchini. Then, a plate of italian meats, artichoke salad, and a white bean salad with basil.

Then, for the main course (ha!), we are making a bunch of pizzas. Six different kinds--a margharita, a gorgonzola-fig, a meatball one, a white pizza with prosciutto and truffle oil (DH's favorite!), one topped with arugula and parmesean...and one more that I have not decided on yet. Plus, we are making garlic butter dipped breadsticks!

So, if any of you guys are in the area, feel free to stop by, because we are making enough food to feed an army! One caveat: you can only come if you are a Red Sox fan. ;) :rotfl:
