My poor kids have eaten just for 2 1/2 weeks...They have been microwaving something while I was at the hospital and I have been eating at the hositals Au Bon Pain...Yesterday I managed to get cheesy chicken broccoli in the corck pot before I headed to the hospital..Today I am making a roast, mashed potatoes and spinich with garlic and sun dried tomaotes..

We have cub scouts tonight so I wanted to make something easy for dinner. I have chili in the crockpot. I usually make it with ground beef, but this time I'm using cubes of stew meat instead. I hope it turns out ok. We'll have tortilla chips to dip in the chili and a salad. Before I realized there was a scout meeting tonight I had planned on making individual chocolate lava cakes for dessert. I think I'll make strawberry shortcake instead since I can make that ahead of time.
 
MosMom- So sorry about your grandfather. I hate that you had to push back the funeral because of the weather. I know that makes it even harder for your family not to have the closure of his funeral service.

Lindsay- I think you are a great cook and I haven't ever eaten anything you fix. My family has enjoyed many of your recipes. I think it is great and who knows, maybe a new business for you!?! But you can't forget your friends on the Dis when you become rich and famous.

Theresa- That party sounds like a lot of fun! What a great idea.

Stacy - I hope your aunt continues to do well.

Sorry I haven't posted, but the children are beginning to get sick one by one. Anyway, DH and I are not going out tonight, it's just too hard on a school night. We'll probably go out for dinner Saturday.

Tonight's dinner is Steak and cheese tortellini stir fry with shrimp egg rolls.

Jenny, good to see you back on the dinner thread! I'm glad EdDad is doing better.

Last night I made grilled chicken fajitas with some homemade guacamole, grilled onions and peppers, black beans, etc.

I don't know what I am doing tonight--my office is now closed but I am still here because I am waiting for DH to be able to leave his office. If I get home early enough I might make a chicken pot pie from the remnants of the roast chicken from the other night. The only problem with that plan is that my pie crust STINKS and I don't have my usual backup (frozen puff pastry) in the house.

Hmm...I seem to be eating lots of chicken this week. :scratchin:

Lindsay, what a nice compliment, and what a nice thing for you to do!

My kids have been off school since we've had some snow but more Ice everywhere. I've been working at home, and tried to get ahead on the current project today. My DD (14) said she'd make dinner for valentine's day!

She made spaghetti with meat sauce, cheese garlic biscuits, and jello jogglers. What a sweetie!:love:
 
Tonight we will have leftover spaghetti, salad, and breadsticks :)

The last time I made meatballs & spaghetti I made a double batch of meatballs, so they're coming out of the freezer,sides will be lemon/parmesan broccoli and garlic bread.

Well, DH was supposed to get home this morning, but he's stuck b/c of the snowstorm--so we're expecting him around midnight! Anyway, I guess I"ll make some sort of pasta again tonight.
 
I'm trying out the Ritz Parmesan chicken recipe tonight. Still not sure what we'll have with it.....probably corn and maybe stuffing or some kind of potato. We've already had green beans and broccoli this week so those are out.

DH made dinner last night and it was super yummy. I really enjoy meals that I didn't have to cook. :cool1: He made steaks, shrimp scampi, baked potatoes and broccoli. Yummmmmmmmm
 
No cooking for me tonight. There is a fund raiser for my DGD school.........at Chuck E Cheese! She has been asking Buddy and me to go with them, and it looks like "Pa" is having a rough time saying no, but the thought of her whole school in that place has his blood pressure rising already, and we aren't even there yet.

He weaseled out of furniture shopping last weekend so maybe I'll try to talk him into combining a fun filled trip to Chuckee's and then an exciting trip to the furniture store :rotfl2::rotfl2::rotfl2:.
 
Jenny- if you stop by, I am so sorry that Ed had a setback. I'm sure that the attention he can get in the ICU is better for him, but nerve wracking for you. Your family has a powerful prayer chain surrounding them.

I am having a nutty day...DS had a delayed opening at school, then I had a meeting to attend, then his class Valentine's Party (I am the class Mom) and then taking him to the dentist. This is his first visit to regular dentist since his palate expander. :) All is going well with that torture device in his mouth... I know I am rambling again!!! :) :) :)

We are getting take out again tonight...I won't say what kind so you girls don't have cravings!!!
 
Tonight we're having teriyaki grilled pork chops, rice, broccoli and eggrolls.

Is anyone else eating way too much chocolate? DH got me a big box from a local chocolate shop and I can't stop eating it. :scared1:
 
It's a crock pot kind of day here. We're having swiss steak (made in the crockpot this morning) butter noodles, string beans, applesauce and biskets. Chocolate cake and ice cream for dessert!
 
Glynis, I would love the recipe for "funeral potatoes".

(Boy this post was "everywhere")

Here's the recipe:

Company (funeral) Potatoes

1 can cream of chicken soup
1/2 cube butter, melted
1/2 pint sour cream
1/4 C. chopped onion
3/4 C. grated cheddar cheese (you can use more if you like really cheesy)
1 C. milk
2 24 oz. bags frozen hash browns

Mix everything together. Place in a greased 13 X 9 baking dish. Bake 25 minutes at 350 degrees.

Sorry I didn't post yesterday. Things got really crazy! My wonderful nephew and his wife were told yesterday that they have been chosen for adoption! This is quite a shock as they were only approved 2 weeks ago, and the typical wait is 18 months. So, the girl is 37 weeks along, and could potentially have the baby any day now! Dan's mother and I have been running around with Andrea trying to get a nursery put together, and make sure there's stuff for the baby to come home to! We're all very excited! It's one of the reasons I love living in the same town as my family!

Anyway, dinner last night was awesome! I made a new recipe: Easy Skillet Chicken. And it was so easy! It tasted really good, and even my picky eater liked it. I'll post the recipe in a little while.

Tonight is Chuckwagon BBQ Rice Roundup. It's an easy throw together for my family as I'm going to an "emergency" baby shower for Andrea!
