I haven't posted on this thread in a long time (haven't been cooking much) but last night I made Aunt Martha's Famous Chicken Spaghetti Casserole (p. 167) and it was fabulous!! DH told me at least 3 times how good dinner was. It's pretty easy to make too.

We're happily eating leftovers tonight :)
 
I am off to my mom's house for T-giving around 11:30. There we will have all the T-giving faves. So obviously I'm not cooking today :)

Those Oreo truffles I made ROCKED!!! I will post the recipe later if anyone wants it.

So, I have to confess. There is something about Thanksgiving that just brings out the crazy cook in me. We had this nice, sensible meal planned: Roasted brined turkey, gravy, stuffing and dressing, mashed potatoes, cranberry sauce, roasted root vegetables, and cauliflower gruyere gratin, with apple pie and pumpkin cheesecake for dessert. There are only going to be eight people eating, so that should be plenty of food, right?

Well, I don't know why, but when I got up this morning, I flew out of bed and started cooking all these extra dishes!! So now, in addition to all of the above, we also have spaghetti squash gratin, creamed spinach with fried shallot crust, glazed onions, and broccoli with lemon zest! AND, when I called my Mom, whose house we are eating at, to confess my cooking largesse, she told me she was doing the SAME THING, and had already prepped green beans with buttered almonds, carrots with orange zest and cumin, and roast asparagus!!! For EIGHT people!! There must be something wrong with us.

At least we all like leftovers! :)

We're going to my mom's later. The green bean casserole :rolleyes: is done, but I'm worried about the stuffing. I think my mom told me the wrong amounts of ingredients. I haven't added the bread yet so I'm hoping once everything comes together it will be ok. Right now it's super salty and swimming in butter. I think I will drain some of the butter off before I add the bread. I'm crossing my fingers that it will be edible.
 
Hi all!! Did everyone have a good holiday? Ours was great. I overheard the sweetest compliment about me at my ILs. I took some Paula Deen Pumpkin Gooey Butter Cakes with me and offered some to them. My FIL got himself a big serving. He raved about how much he liked it.

Well later I was chatting with my BIL. My FIL was chatting with my husband. I overheard him saying, "That pumpkin Lindsay brought was the best dessert I've ever had." He paused and said, "I'm so glad she's with us." Talk about Lindsay going :sad: That was so sweet!!

Anyway, we are having leftover's from my family's house tonight. No cooking for me. Also, no shopping for me, except for groceries and buying a new cell phone (hubby dropped his in the toilet. Now we have an excuse to go get new ones, LOL!)

Thanksgiving was good, as good as it was gonna get without dad there. (he passed this past March) Christmas is gonna be hard, he so loved Christmas.

No shopping for me, except for groceries on Sat.

Dinner tonight, either lefovers or frozen pizza.
 
Our Tday was very nice--WAY too much food, so it will be leftovers today. Heading back to the parents to watch the Arkansas football game today, so maybe pizza for a late lunch.

I think I'll head out shopping in a little bit--Late enough to not have to worry about the "crazys" but still early enough to get what I'm looking for.
 
liamsaunt, I did the same thing. I started cooking about 7 am and never stopped until 8 pm. It is not Thanksgiving unless the table is completely covered!

Lindsay, what a nice thing for your FIL to say. It is always a nice thing to be accepted and loved in a family you are not born into. You have to love the ones you a born into, but as the MIL of my beloved DDIL, I know the gift of loving a special daughter of my heart.

No cooking for me today. We have so much left from yesterday that I am all set and taking advantage of the lazy day. Most of my family was among the "crazies" out this morning. I think they left and all met up at 3 AM. Mt DDIL and I are going to my Moms later and visiting qith her. I think I have shopping for my aunt. That's it for me.

Our daughter has some medical issues, so it's been a rough 3 months. Things are finally starting to settle down. I had to have my gallbladder removed about a month after I had her, but now I feel great! Thank you for asking.

We have no leftovers so I'll be cooking something for dinner tonight. Just haven't figured out what yet. We plan to watch the game and put up our tree, so it will have to be something simple.

I'm sorry that your beautiful little girl has had a rough ride. I hope that she will have an easier time, and will add her to my prayers. My DD had gall bladder problems after her DD was born and finally had to have it removed also. I'm glad you are feeling better, it is hard to feel sick and have medical issues with a brand new baby, worries are never supposed to be part of the plan.

I made homemade turkey cranberry ravioli with leftover turkey and leftover cranberry sauce. We ate it with the leftover veggies on the side. The ravioli was heavenly!! It is all gone. I modified Giada de Laurentis' recipe from foodtv slightly so I could make it with leftovers. I will definitely post the recipe later. It might become a yearly tradition - it was *that* good.
 
We are going out with friend's to lunch and a movie today. We are going to a local Greek chain called The Gondolier and then to see "Casino Royale." *pouting* I really wanted to see "The Prestige" but it's not playing anymore (

We will have a snack for dinner tonight.

ETA: LuLu, I saw that episode of Giada's. I wasn't sure if that ravioli would be good or not. Please post how you modified it :)

ETA (again): My next trip report is up and already on the second page :( if anyone wants to read it. It's has some cool pics.
 
We are having hot turkey sandwiches. We didn't get any leftover Thursday from my inlaws but we went to myAunt's house yesterday and she gave me a bunch! Or I might make it into a turkey pie... decisions decisions.... :teeth:
 
Definitely leftovers for us today--we went out for pizza after the ballgame yesterday (Tigerkat and Bengalbelle--congrats on the victory :guilty: ) and the kitchen messed up our pizza order--put jalapenos on the whole pizza (my tummy can't handle it) so we got another pizza for free. SO we got lots of Tday and pizza leftovers to eat!
 
I love reading this thread. I've gotten many reciepes off of here and just wanted to pop in and say hello. We are having roast with cream of mushroom and celery and veggies. They will be slowly cooking in the crockpot all day on low. I can't wait until about 5 p.m. tonight!

I'll be going to work in a few minutes, be home around 2:30 and we will start putting up the Christmas tree. Have a great day! Renae
