The Gumbo is on...

I've never tried it. Don't know if I would like it.
 

I don't think I've ever had gumbo. What exactly is it? For some reason, I always think of guacamole when people say gumbo.
 
Count me in. I love gumbo. Everytime I hear this tune I want some.

Well, first you make a roux (to you northerners, it's flour browned in oil--and mine is bacon grease--until it's a dark chocolate color)...

Then you add a chopped onion, a chopped bell pepper, and a stalk of chopped celery (that's what we call the trinity)...
and cook until they wilt.

Then you add a couple of chopped chicken breasts, a package of okra, a few green onions; chopped, sliced, and browned polska kiolbassa or smoked sausage, and some parsley. Then add a bay leaf.

Simmer on the stovetop for 3-4 hours; serve over cooked rice with some homemade rolls or french bread...yummy...
 
Mine is alittle different

1 whole cut up chicken (makes a big pot) and cover with water, add salt and pepper and about 5-7 bay leaves. Boil till chicken is tender. Take out the chicken and debone when cool to the touch. I add 1 frozen bag of cut okra (16 oz I think), 1 can of rotel tomatoes (I use mild), 1 can of diced tomatoes, medium yellow onion finely chopped, 3 stalks of celery finely chopped and bring to a boil. Make your roux (while your soup is coming to a boil)..the darker the better in flavor, I use real butter and flour. (the size pot you make depends on the about of roux you need). Begin with 1/3 cup of butter and 1/3 cup of all purpose flour, melt butter on med. heat then add your flour whisk continuously until brown. This needs to be on the thin side not pasty..add more butter if needed. Once your acheive your brown color, add to the boiling pot. Be careful, this will splatter at first because the roux is HOT. Mix well to dissolve the roux, turn down the heat to a simmer and add your deboned chicken.

I serve this over rice with crackers or a crusty bread. Served plain is good too...rice just stretches it. This freezes well also.

If you like a thicker soup, make more roux, just keep in mind your soup needs to be boiling when you add the roux.
 
Hmmmm I hate gumbo..... BUT my only knowledge of gumbo is my mom's recipe (sorry mom) of okra and veggies and nohting else and I hate okra, so I hated gumbo. Now I like jambalaya and stuff like that, but NO OKRA!

(I also hate grits...... I'm the only Southerner I think who hate okra and grits!)
 
LOL S4S, it'll be a dark day when I boil and debone a chicken!

In my family, we don't add tomatos to chicken gumbo, only seafood gumbo. Where do you live?

Im originally from the Southern tip of Alabama....but now I live in central FL
