I guess it would be the old "Galaxy Palace Theater" between CoP and Buzz Lightyear? (I'm getting the name from a picture on Google Earth).

I actually didn't realize it did not exist...when I was there in Sept 2010 I heard them doing sound checks for the "Night of Joy" concerts while riding the TTA...so I just assumed the Stage was still back there.
