Hey guys, we have less than 25 pages left on this thread before it's locked. I don't keep track of the pages that closely so I may just start a new one in a few days, what do y'all think?

She works at Animal Kingdom, though I bet she wishes she worked at AKL where it's air conditioned! :rotfl: This summer is slowly killing her.

Y'all, this recipe was DELICIOUS! The hunt for the spice was worth it.

Easy Indian Butter Chicken (from All Recipes)

Rated: 5 out of 5 by 49 members Prep Time: 15 Minutes
Cook Time: 45 Minutes Ready In: 1 Hour
Yields: 4 servings

INGREDIENTS:
1 cup butter, divided
1 onion, minced
1 tablespoon minced garlic
1 (15 ounce) can tomato sauce
3 cups heavy cream
2 teaspoons salt
1 teaspoon cayenne pepper
1 teaspoon garam masala
1 1/2 pounds skinless, boneless chicken breast, cut into bite-sized chunks
2 tablespoons vegetable oil
2 tablespoons tandoori masala

DIRECTIONS:
1. Preheat oven to 375 degrees F (190 degrees C).
2. Melt a few tablespoons of butter in a skillet over medium heat. Stir in onion and garlic, and cook slowly until the onion caramelizes to a dark brown, about 15 minutes.
3. Meanwhile melt the remaining butter in a saucepan over medium-high heat along with the tomato sauce, heavy cream, salt, cayenne pepper, and garam masala. Bring to a simmer, then reduce heat to medium-low; cover, and simmer for 30 minutes, stirring occasionally. Then stir in caramelized onions.
4. While the sauce is simmering, toss cubed chicken breast with vegetable oil until coated, then season with tandoori masala and spread out onto a baking sheet.
5. Bake chicken in preheated oven until no longer pink in the center, about 12 minutes. Once done, add the chicken to the sauce and simmer for 5 minutes before serving.


My changes: I didn't bother with the onion because I don't like onion. I didn't have a big enough saucepan to mix the chicken into the sauce at the end so I just mixed it up in the bowl for each person. I subbed the garam masala with curry powder instead, per some suggestions on All Recipes. I used a red tandoori powder, don't know how similar that is the tandoori masala but it tasted great so I decided it was just fine :laughing:

I served it over Indian rice.

We all agreed it was delicious - since we really don't have any Indian restaurants on my side of town, this hit the spot.

Next, things look all right! The doctor first looked at the spine, and it's straight and perfect, and no spina bifida! Then he started looking for Down's markers; a measurement in the brain, the skin fold on the back of the neck, eye spacing, cleft lip, heart defect, and kidney function. All of those looked really good! No heart defects, no cleft lip, measurements all within normal perameters! The only "soft" marker was the kidney. Peanut's right kidney was a little bit larger than it should be. Right now, it should be measuring 4.0 cm, but it's measuring 4.1 cm. The doctor said it wasn't enough for him to be too concerned about, but with my age, it does put our chances of having a child with Down's at 2%. Those are odds I can live with! He also told us that it's really common, especially with boy babies, for the kidneys to be a bit enlarged at this point. So, I'm not worried!

My DPs are coming over for a BBQ.

WFD- Pita chips with hummus, corn on the cob, tomato & cuke salad, red bliss potato salad (DM is making), and BBQ baby back ribs. I might make corn bread too.

Glynis, I'm so glad everything is fine for both of you. And I know your son is really excited to be having another boy in the house.


I was stopping in to ask for some good thoughts and prayers for my grandaddy. I got a call this morning that he was back in the ER but they didn't know what was wrong with him - I decided to not have my mother tracked down at Animal Kingdom since I didn't have info to tell her. They have opted to admit him to ICU; his blood sugar was over 800 :scared1: They don't know what's wrong yet. His more frequent ER visits are a painful reminder of his age. He's my last grandparent, and the only one I've truly known well (lost the other 3 when I was a child), and I can't bear to think of living without him around.

I'll be praying for all of you. Please keep us posted.

I'm sorry I didn't see your post about your mammogram until it was this late. I hope everything went well and you get a good report.

Today is Pooh's birthday and we are spending the day with friends in Atlanta. We will be eating at The Cheesecake Factory.

Which one? When I went a couple of weeks ago, my mom wanted to go there and we ended up at the one at Perimeter Mall. She loves that place. Not as much as my sister loves Einstein Bagels (just down the road from Perimeter Mall). We had breakfast there every day.

Well ladies, I'm a little bleary eyed this morning thanks to my lovely children. A&P spent last week with their mother and arrived home last night. And you all will never guess what A brought home with her. An ear infection. Actually, an untreated ear infection. Kenny picked them up last night at 7:00 and of course, there were no treatment options available at that time on a Friday night so all we could do was give her something for the discomfort. She was crying by our bed last night around 2 and we staggered back to bed after getting her settled. Then my lovely princess decided that we shouldn't sleep our lives away and got us up at 7:15. Does it sound to you like the children are conspiring or it is my sleep deprivation making me paranoid?

Anyway, Kenny and I had a lovely trip to Biltmore. We stayed on the estate in the Inn there and it was amazing. The room was very comfortable and we had a view of the mountains. The other side of the hotel had a view of the estate house. And the staff was fantastic. The service was amazing and everyone was very nice. We had been there less than an hour when Kenny said "Next time when we come...."

When we arrived, we parked the car and didn't go back to it until we left. The estate shuttle was very nice and very prompt. We toured the estate house but next time Kenny wants to take one of the guided tours since we both felt we were missing some of the important information. It was still beautiful.

The winery was nice and for all of those who haven't been, the tastings are set up first rate. You tour the winery first and then receive a wine host/hostess who helps guide you through the tasting.

There is a small restaurant beside the Winery where we had dinner called the Bistro. The food there was delicious. We shared a crab and brie fondue as an appetizer and for our entrees, Kenny had the duck breast in a blackberry glaze with fingerling potatoes done with a honey flavored sauce/glaze and I had a filet with a lobster sherry sauce served on a pancetta and spring pea risotto. I think the entrees were a tie. Kenny's duck was better than my filet, but my risotto was the best thing on that table.

I'll try to check back in today to tell you more about our horseback ride and our funny story about the couple after us, but I need to get going. Kenny is trying to get A to the doctor this morning and I need to get some things before a party we are supposed to attend tonight.

Not sure whats for dinner tonight. Last night was pizza...I spent extra time at the pool and was too tired to cook when I got home...;)

We are going to start with the window and door trim today in the family room. It has been a while since we have done anything down there. We also have to add the ledge to the cinder block foundation...so I probably will not feel like cooking again. Maybe tonight will be grilled cheese and tomato soup. I found an organic soup that I really love and now I am on a kick.

Kat- how did it go yesterday?

Dinner is once again up int he air. My niece has invited us over to her home and Marisa and Jeff will be going. I have no idea about me, Buddy has help in the field but we have no idea how long they are staying and I generally stay close if they are all in the field. I know nothing about any of this but somehow Buddy feels better if I am a phone call away :confused3

At first when you were talking about A&P I thought of a grocery chain that was around her when I was a young'n.:lmao: Ok yes 3 days of head pain has left me goofy.

Last night I made grilled chicken again this time with an asian butter, rice and snap peas and mushrooms.

Asian butter
1/2 c butter softened 1 tbsp grated lime rind 1 tsp dark sesame oil mix together place mixture on parchment or wax paper. Bring one side of paper over mixture. Hold down bottom paper. Place flat edge of a baking sheet on top paper next to butter. Push baking sheet away from you into base of butter mixture forming a log. chill for at least 4 hours or freeze in a plastic bag up to 1 month

Just thought I'd pass along some Cheesecake Factory information. Wednesday all slices of their cheesecake will be sold for 1.50 cents. It's some anniversary promotion. I heard it on another thread, so check it out. I know that I'm asking Alan to bring me a slice home from work on Wednesday! After a day of driving with a bruised tailbone, I'm going to need some!
 
No cooking for me until Wednesday night! I'm heading to my mother's house!! She's excited to pamper me, and I'm excited to be pampered. I'm taking Jacob, Katie and 2 of Katie's friends to see some shows, as well. I've stocked the car with protein snacks and water bottles, so I'm good to go!

Well I am good to go to Debbie's house for a late lunch early dinner. She is having chicken fruit and salad. I am going to pop a WW cake in the oven.

Don't worry about it. Most of the time I deal with it. This time is was like I was pregnant, headache,dizzy and nausea. Good thing I'm not :worship: I'll enjoy babies from afar.

I read that, too! The nearest one is an hour away so not worth it for me to drive but I wish it was closer...

I think we're eating out tonight. I have a short list of last minute supplies for VBS to buy BUT these are the supplies my intern couldn't track down, so it's not like one run to Walmart will get them all. Who knows how long I'll be running around town buying this stuff.

Dad is still here, just hanging out, and granddad may be moved out of ICU and into a regular room later today. I need to go by and see him today. Thanks for all the prayers.
