Speaking of Chicken, I wanted to post the recipe for how I made my chicken sunday. It got rave reviews!

Smoky Bacon Roasted Chicken

I can't remember who's recipe I used. I think I grabbed a bit from here & a little bit from there. I post it for you in a bit with a old pic, since we are still food porn deprived without Becky around!

What he has is an allergic reaction because........he hasn't been taking his allergy medication. :mad: This is the boy who doesn't want to be reminded because he's "not a child". He had fever because his sinuses are also infected. Also because he hasn't been taking his allergy medication. :mad: In a parenting move that takes him out of the running for Father of the Year, Kenny told P he hoped the medicine took a long time to work and that he would be miserable for days and maybe then he would remember his allergy drugs. Not that he needs to be reminded or anything. :headache:

Thank you for all the kind words regarding parenting a soon to be teenager. I know that this will pass, but some days I'm not sure we're going to let him live. :sad2: I'm cleaning out my freezer just in case. ;)

Tonight we are having country fried steak, rice, and black-eyed peas. With baklava for dessert. I made it one night when I was frustrated with DsS and couldn't sleep. Considering I don't bake really well and it was my first attempt at baklava, it turned out good. However, my DH thinks it tastes better with a scoop or two of vanilla ice cream. And I'm the one with the weight problem. :sad2: Someone explain to me how that is fair?!?

Here's the different recipes I used. Sorry it's so choppy, I literally grabbed from here & there and then just wrote in my changes. I hope you can make sense of this mess!

For the Mango-Avocado Salsa—
Combine:
1 ripe yet firm mango, peeled, diced
1/4 cup red onion, minced
1 T. jalapeño, seeded, minced
1 t. sugar
1/4 t. cumin
Juice of one lime

Before Serving, Stir In:
1 firm yet ripe avocado, pitted, peeled, thinly sliced
2 T. coarsely chopped fresh cilantro

For the Creamy Chipotle Sauce—
Stir Together:
1/4 cup plain lowfat yogurt
1/4 cup reduced-calorie mayonnaise
2 t. sugar
1 -2 chipotle chiles in adobo sauce, minced
Juice of 1/2 lime

(I cheated on the chipotle sauce, I had a bottled one from World Market)

For the Fish Tacos—

4 4 oz. fresh tilapia fillets, halved

Marinate fillets in lime juice about 15 minutes

(I used grouper)

Blend, then Coat Fish in:
3 T. all-purpose flour
3 T. yellow cornmeal
1 t. chili powder
1 t. kosher salt
1/4 t. cayenne

(I used seasoned Zatarain's Crunchy Southern Style Fish Fry)

Instead of deep frying, I pan-fried the fish in olive oil


8 7" corn tortillas

Warm the tortillas. ( I cooked the fish on my gas-grills side burner, so I warmed the tortillas on the grill. You could do them in the oven, a pan or microwave.)

Serve with:
Spicy Cabbage Slaw

1/2 bag cole-slaw
1/4 large onion sliced thin
1/2 pickled jalepeno, diced fine
1/2 lime juiced
salt & pepper to taste

combine ingredients

I changed our ADR from Ohana to Kona since they took the potatoes off the menu I thought Alex wouldn't eat the noodle dish. I wish I could stop fussing with those darn ADR's.

Today, Luke and I are going to another softball game for DN. This one is at home and it generally is a much warmer field. Luke is DN's biggest fan, he loves to clap and yell "go-go and woohoo"!

I don't think there are any regular male posters on this thread right now. Sorry I didn't introduce myself: I'm Laura, SAHM to Liam (9) and Caili (6). My husband is active-duty Army, so he is away a lot. Right now he is in Iraq. That leaves me running around after two very active, busy kids. I love to cook, but sometimes our schedule only allows for a sandwich in the car.

Homemade baklava?? I am impressed. You must be more patient than I am. The last time I worked with phyllo, I was ready to shove the whole batch down the disposal.

We had planned on having it at the wonderful Italian place I work at, but they just officially informed us they will be closing on Sunday. It has been rumored for awhile, and I asked the manager last weekend about it. She was honest, but now, I need to find a new job and a new place for the rehearsal! As if I don't have enough going on!

I told the kids we could go to the pet store this afternoon to pick out two new fish (each) to add to their aquariums. Well, that took a lot longer than I had anticipated. I ended up making black bean and cheese burritos for dinner because that was the only thing I had in the house that would take less than 30 minutes. Caili, who hates burritos, had more of the leftover fried chicken. This is now four days in a row. I don't know what my mom was thinking.

In that case, you make the pesto and I'll make the baklava. I didn't have to use my blender for the baklava. :laughing:


OK- What doesn't taste better with icecream?!? Homemade baklava sounds delicious! How do guys do it? DF can eat junk and is average sized. I really watch what I eat, but iswear the minute I eat junk, I go up 5 lbs!

Don't waste freezer space on a teen boy, they would never know that it is expensive real estate. Just push him under his bed and close the door. There is not a parent in the world who would bat an eye. ;) Seriously, I'm glad that it was a reaction and not CP and I understand Kenny's reaction. Buddy used to stop taking his BP pill because he thought he could "will power" it down. I got fed up and told him that I would walk through fire for him and if he ever got ill I would care for him......but.....if he ever had a stroke I would ask the Dr if he was taking his BP pill. If not, he better warm up to his Mother because I would not lift a finger to help his stubborn hide. He has not missed a day since.

And your Mom sounds like mine. My dad always joked and said if the National Guard convoy broke down in front of our house, Mom would have enough to feed everyone. She is always trying to send us home with leftovers too and always way more than we will eat. But at least you didn't have to run a short order kitchen tonight and cook something different for her.

Ann, If the family is requesting your calzones, you have got to give us your recipe!!!

Nothing real fancy, I am not a huge recipe girl. But I must admit for some reason my pepperoni and cheese calzone comes out better than anyone else's in my family.

I use a 2lb loaf of dough from a local Italian bakery. I roll out dough in a rectangle and then spinkle fillings on top. I then roll like a jellyroll. I use eggwash on the edges to keep them closed and baste the top also. I bake at 350 for about 45 minutes.

I make a pepperoni and mozzarella one. I also make one with hot sausage.
Brown 1lb hot sausage meat out of the casing, with some red pepper diced and some diced onion. Let cool then add one beaten egg to the mixture and mozz. cheese. (the egg in this really binds the filling)

Thanks girls. It does not look infected so I will just keep an eye on it. I keep cleaning it with betadine and put neosporin on it. I am also up to date on my tetanus shot.

I think I should be OK...thanks again. I guess I just needed reassurance. ;)

We won 3-0. It was a close game. They ended up putting my DN in the last two innings. Playoffs start in a little over a week and we are looking for a buy. Right now we are trying to hang on to first place. Last year DN's team won the state championship and she made all-state. Say your prayers for her ladies and cross your fingers...I want her to have as great of a senior year. Shhhh... she is one of my favorites.

I'm not sure if I posted my ADR's. Here goes Kona cafe,LeCellier, Crystal palace, Raglan road, Trail's end, Boma, Coral reef, Cape May and Artist point. I'm nervous about Raglan rd. I think we are going to Yak & Yeti also though the counter service.

The BLT hit the spot I feel human and nice again. It is amazing what "comfort food" does.

I'm sorry that your day was not so great. I love making ADR's and changing them is 1/2 the fun! DD would not agree, she is already sick of hearing about the food. DSIL is my partner here, he and I plan the meals, DD is no fun :headache:

Your little surprise must be a lot of fun for your DN. My niece Debbie is Kady's Godmother and they adore each other. She took Kady to a Men's basketball game her first or second year in college and then took Kady to meet the team. Kady was not all that impressed with those tall guys and announced to them all that she had to go potty:rotfl2:

We make ours next month I think, I have to check. Buddy has not committed to going yet and now I think I know why. Today I was able to upgrade our Daytona 500 tickets to Nextel tower and pretty high up. I wanted to call the guy who has bought them the past few years to tell him an he asked me not to call him yet. I think this is why he keeps asking to go to Disney in February :thumbsup2

I'm trying to wait until the November park hours are published to do lunch ADR's but I'm going to make my Dinner ADR's within the next day or so. We're doing an "all new" trip this year. New resort and all new restaurants.

Dinners - Hopefully a Party for the Senses, Raglan Road, Narcoossee's, Bistro De Paris and Yachtsman Steakhouse.

Lunches - Yak & Yeti, The Plaza & Sci-Fi

Breakfast - Boatwright's

David Cook is my fav too...it just isn't an exciting season for me.

Here is the menu for Charley's. They do not list the prices and if they did, no one would ever go there. It is really expensive but really really good. I cannot remember what else I ate but know I was really happy with everything...that chop was probably 3 inches thick and yummy!
