The All-New What's For Dinner Thread!!(recipe index in OP)

I survived last night's dinner. We had BBQ (Shredded beef in the crockpot served dry and was given A1 to put on it. What the heck??), naked baked potatoes (I just about started the wave 10 minutes into the meal when MIL asked would anyone like salt or pepper for their potato?), and cucumber salad (actually looked pretty good, but cucumbers give me indigestion). I've had a LOT worse at their house. This one was ok, just oddly served (BBQ with A1 sauce, not BBQ sauce?).

We are having pizza tonight.

The extent of my cooking today will be making DH's lunch and supper to take to work with him. Leftover brats and an italian coldcut wrap . Luke and I will be out galavanting with grandma all day.

Not sure what dinner will be...A is going by his Dad and I am just not into cooking, so it may be chicken tenders or pizza from Market Day.

Morning all. TGIF for sure! DH managed to cook the manicotti w/o too much trouble last night. It was really good.

Tonight I'm in charge of the meal for our church small group (which I forgot about until a couple days ago) Anyway, I'm going to make pasta two ways. Kathy's bolognese sauce with spaghetti (found some yummy San Marzano crushed tomatoes at the store yesterday, can't wait to try the sauce with good quality toms) and then a fettucine alfredo. We'll also do garlic bread and salad.

Laura--your visit with your neighbors, sounds a lot like ours. We love our sangria! And now my neighbor has started brewing his own beer--we're the trouble makers in the neighborhood! At least we just have to walk home, right?
 

nucpharm-Stephanie, That chicken recipe sounds good. If it's the one Becky uses for her chicken salad it must be yummy. I have a dumb question though. The major grey chutney is that a mango chutney. I have to admit, I don't think I've ever bought a jar of chutney before. :confused: It's just not used that much down here I guess. I've made chutney like fruit mixes, but have never even noticed a jar of it in the groceries.

Kathy, Lori, Mrs K, Am I suffering from Chutney blindness or what? Can I get that at Winn Dixie or WalMart?

Shovan- The mango chutney (Major Grey) I've been able to find locally is Patak's brand. It's in a squat jelly-type jar (12oz) with a purple label & lid. I used to be able to find it on the International foods aisle usually lumped in with the Thai / Indian foods (near the curries) at my local Associated Grocers stores. However, they've reset the already limited selection, and the only place I've found it recently is @ Whole Foods in the same section. Since Rouses' pulls from AG's warehouse, you might ask that they special order it if it's not already on the shelf.

I need to pick up a few jars - I use it to make a broccoli salad that's very similar to the one listed above. It's an older So. Living recipe that I love.

WFD will be on the road this evening. We have to travel about an hour and a half away for state playoff semi-finals. Kyle is pitching, if we win we go to state in Shreveport next Thursday & Friday. I'm already ready to take a nerve pill.:sad2:
 
It's been slow for me off and on for a couple days now.

So dinner turned out pretty good except I forgot the asparagus. :rolleyes: So I made a little creamed spinach, was very yummy.

Lemon Lime Chicken

1 lb chicken strips
flour to coat
Lemon pepper seasoning
Lime pepper seasoning
Cooking spray

Spray a baking pan with cooking spray. Rinse and pat chicken dry. Sprinkle with seasonings, coat in flour and place in baking pan. Spray chicken lightly with cooking spray. Bake at 400F for 15-20 turning occasionally.

1 C chicken broth
1/2 C lemon juice
1/4 C lime juice
1 T cornstarch
1 T water

Mix the broth and juices in a pan, place on medium high heat. Mix the cornstarch and water. Once the broth and juice starts to heat up slowly pour in the cornstarch/water mix, stirring constantly until thickened.

Place the chicken on your choice of rice or cous cous, top with the lemon lime sauce.


Sounds yummy! I'm gonna try it. :)

Found the Broccoli-Chicken Salad recipe online! Hope it reads OK. It's from the March 2000 So. Living magazine. It's a really good summer recipe.

Broccoli – Chicken Salad
Ingredients
4 skinned and boned chicken breast halves
4 cups water
1/4 cup soy sauce
2 garlic cloves, minced
1 (16-ounce) package fresh broccoli flowerets
4 green onions, chopped
1 medium-size red bell pepper, chopped
1 cup sweetened dried cranberries
Chutney Dressing
  • 1 (9-ounce) jar chutney
  • 1/2 cup mayonnaise
  • 2 garlic cloves, minced
  • 1/4 teaspoon dried crushed red pepper
Stir together all dressing ingredients.
Note: For testing purposes only, we used Major Grey Chutney.​
1/4 cup chopped peanuts

Preparation
Bring first 4 ingredients to a boil in a medium saucepan. Boil 15 minutes or until chicken is done; drain. Cool chicken, and cut into bite-size pieces.
Toss together chicken, broccoli, and next 4 ingredients. Chill 1 hour. Sprinkle with peanuts before serving.
Yield 6 servings

Warning - Mom vent ahead! For all of our new members, about a year ago we polled all the members to find out who had room in their freezer for an aggravating husband. Well ladies, I need to know if anyone has room in their freezer for a relatively small 12 year old boy. I think we are going to just have to kill him if he doesn't kill us first. :headache: His attitude has been on a steep down hill run and his grades have followed. He is on the edge of not passing this grade and doesn't seem to care. :rolleyes1

I feel your pain. All I can tell you is that you will survive and so will he. My son was a lot like this; at 18 we actually kicked him out the house. Now he's 23, married to a wonderful girl and is very responsible, helpful and a good guy all around. Hang in there!:hug: :hug:

WFD is going to be Chili Cheese Fries. Had some chili for lunch that turned out pretty good. Not spice enough, I should have added a little cayenne pepper to it, I used a Tex-Mex chili mix.

Turkey Vegetable Chili

1 lb ground turkey
1 T olive oil
1 onion chopped
1 celery stalk, chopped
1 C carrot- I used already shredded
1 small zucchini chopped
1 small yellow squash chopped
1/2 lb mushrooms chopped
1 can black beans
2 cans diced tomatoes
Chili spice- I used a pre-made Tex-Mex mix, as much as you like


Saute the onion, celery and carrots in the oil on med. high until soft. Add the turkey and cook for about 10 min. until the meat is mostly cooked. Then add the rest of the ingredients, stirring to mix well, reduced heat to med. Cook for about 1 hour stirring occassionally. 15 minutes before the chili is done taste and add more spice if needed.

Serve with oven fries, low fat Mexican style shredded cheese and low fat sour cream.

I went looking for cooking shows on our PBS channels this morning and instead ended up mesmerized by the reality show "Carrier" . I sat & watched a 2 hr show this morning. I have to admit I am totally clueless about life in military families!

So to Laura, Greg, Liam, Caili & All Military families, I just want to say THANK YOU, THANK YOU, from the bottom of my clueless heart!!! We owe so much to so many, who sacrifice for our country.


Greg and I socialized with our neighbors much longer than expected (I made a pitcher of sangria, and my neighbor ended up mixing up two more...we're all so bad!) so I ditched the fish taco idea and just fried up the cod I bought.

Sounds like y'all have great neighbors!

Leftover spinach pie, green giant corn nuggests (don't get them, they're swimming in butter), and left over rice pilaf. I'm debating making Alton Brown's grilled romaine as a salad, but I might wait until tomorrow.

This two weeks flew by! I hope that Greg gets to see Liam at his game today. Please tell your brave husband that he is in my prayers daily and thank him once again for his sacrifice for us. I don't have to words to say how grateful I and my family are for all of you who give so much over and over :grouphug::grouphug:

Isn't it funny what a few years will do? I honestly do not know how marriages survive the teenage years, my MIL said that she thought that they would lose their minds, their sanity and their marriage when my first husband was that age, and I remember thinking I would not get through it in one piece. Then my sister was lamenting about her brood. They are slowly becoming human again, just one more to go.

Does this mean that Alexis will be closer??????? YAY! A house down the street is in foreclosure and I would normally not even look into it, but it was only a few doors down from us. The woman I spoke to said that the family has hired an attorney to try to help them so I did not go any further but we thought that if the price was right it would have been good for Marisa and Jeff. Not that we had any interest in keeping Kady within walking distance from us or anything :rolleyes1:rolleyes1

Merle- the next time I make chili I am going to add the squash. It sounds so good!

I don't think I am going to cook. Marisa and Kady are going to my sisters so I think I am going to take the night ff and just make Buddy a sandwich and I will have eggs or something. BTW- another 100% for Kady on her spelling test :thumbsup2

Tonight we are having pasta (don't know the shape yet) with some chicken sausage. I'm going to try the Trader Joe's marinara. Couldn't beat the price or convenience, just don't know how it tastes yet. It's a chilly, damp day so I thought we would enjoy spaghetti before it gets to warm.

Tonight will be homemade pesto ( return of the aerogarden basil lol!) with cheese and garlic tortellini and sundried tomatoes, garlic bread.
AND for dessert..bread pudding with bananas foster sauce....YUM! Can you all tell its a day off of the diet..NO POINT COUNTING TONIGHT! ;)
