The All-New What's For Dinner Thread!!(recipe index in OP)

How awful and so very sad. This is what frightens me every time Kyle leaves the house. Prayers said.

Thank you. Gail was a FRT on Life Star for 6 years. She had to stop after her oldest got his license, she responded to several crashes involving teens his age. It really was too close to home. To this day every time one of my kids leave I tell them to drive safe. Like you, I pray that they will, although my Mom added all kinds of medals for insurance.

Congrats on the loss!  What is your goal?

I feel callous saying that in the same breath as I offer condolences to your sister and her nephew's family. My prayers for all.

Thank you. I don't know what my goal is  It took all my courage to even get on the scale. I am going to try to lose 35 pounds which will bring my 10 pounds over when I got married.

As for leaving the boards... I left a "section" of the boards and created a new name to avoid being attacked. I've learned (the hard way) that some people LIVE for drama. I don't need it.

My son, was sick with the stomach flu on Friday and sure enough, I came down with it yesterday afternoon. Ick....

I'm glad you stayed on with us. I hope that you and your son feels better soon. Kathy had this the other day, is there a bug going around again?

We are toasty here today. Our high was the mid 90's!

Lucky! We have a frost warning for this evening:headache:

I just want to let all of you know that my beautiful and courageous friend Becky, has now crossed over to the land of our lord. She went with love all around her, and is now with her dear sweet brother, finally cancer free....

I thank all of you for your prayers and thoughts these past few days......ladies please please remember to do your self exams........

hugs to all of you..

 I'm thinking of you today.

Tonight we are having Kathy's Lime chicken

Chicken with Lime Butter

4 skinless boneless breasts
1/2 tsp. salt
1/2 tsp. pepper
2 Tbsp. oil
1 large lime
6 Tbsp. butter
1/2 tsp. dried dill weed
1/2 tsp. dried or fresh chives

Sprinkle chicken with salt & pepper. In skillet over medium heat, in hot oil, cook chicken until browned on both sides. Remove from skillet and keep warm. Squeeze juice from lime into skillet, over low heat, cook until lime juice just begins to bubble. With a wire whisk, stir in butter, 1 Tbsp. at a time; cook, stirring until butter becomes opaque and forms a creamy sauce. (Do not use margarine, or sauce will not be creamy). Stir in the dill weed and chives, return chicken to skillet just to warm through. Serve over angel hair pasta or rice.

Good Morning!

Wendie, My thoughts and prayers are with you and Becky's family.

Nancy, Prayers for Eddie and everyone. Congrats on the weight loss. I need to get back on track.

Aimee, Your enchiladas were really good. I hope you stick aound. I have to admit, I am not really on top of what is going on either. I guess its better that way.

Janice, Loved your enchilada sauce.

I just love this dish and haven't had it in a long time.

Nancy - Continued prayers for Eddie and his family.

I'm off to the dentist this morning to see what's up with this tooth. Not scheduling anything for dinner tonight just in case I'm in pain:eek: .

That sounds good and I can get a good low fat cream cheese too. :thumbsup2

One thing I have discovered since starting back on WW is that spraying Pam on the bread instead of butter works really well. Less greasy and no fat! Comes out nice and crispy and here at work it seems to cook faster in the toaster oven than butter does.
I love using Pam..it saves me alot of Points/calories! :)

That sounds so good ! I bet if i cut out some of the oil it would be completely WW friendly! yum!

WFD: WW recipe sloppy joes and a salad of some sort :)

Gina- Are you guys gonna be at Disneyland on 10/3? I just saw your ticker. We'll be there then!

:grouphug: Nancy, I'm very sorry.

And we're almost September!;) We went the first weekend in October last year and had a blast, so we're going again this year. Glynis gave me some great tips last year on things to not miss. If ya'll make it out there(the same weekend as us would be great!;) ) I'd see if she still had that file. I printed it out and took it to the park with us. Rick threatened to kill me if I said "Glynis says...." one more time!:rolleyes1

Morning Y'all,

Nancy that is sad. Thoughts & Prayers for Eddie & his family.:flower3:

Wendie, Sorry for your loss. Prayers for you & Becky's family.

Lauren, Sorry you had a rough night!

Janice, My house was such a mess, you can't even tell that I spent time trying to clean up yesterday. Actually I did get a lot of laundry done, but spent way too much time trying to de-clutter. Stuff is just taking over this house! So the house still looks a mess & really isn't much better off than it was yesterday. :sad2:

Dinner last night was delicious. The steaks marinated in red wine were "Da Bomb!" I had put them in the marinade on Sunday, it was going to be dinner. But then my stomach started feeling icky, so we just had baked sweet pototoes that night. Anyway they marinated in red wine, garlic, a splash of worchestershire, EVOO, steak seasoning & black pepper. I don't know if I lucked out & had really tender filets or the marinade really really tenderized them. They were like butter & the wine flavor was awesome! Also I think this was the 1st time I roasted mushrooms in the oven, well they were also really good.

I almost forgot to take a pic, so it's not a very good one. We shared one of the steaks, so it's already sliced.

Sorry there is no way, I can cover for Becky while she's away!

Leftovers will probably be dinner tonight, with a salad.

WFD- Nothing low calorie about my dish tonight. I am making boneless pork chops DH's favorite way. Coated with mayo then covered with bread crumbs and baked. (they are tasty!) Sides are going to be roasted broccoli and zuchini. Don't forget the apple sauce or he wont eat the pork!!!

It is so grey and gloomy her today. I had a rough night last night with Luke.
He was up 11-2am screaming, pour little man was constipated...all is well now, his little belly is better. :woohoo:

I hope things go ok.

Thank you. I don't know what my goal is  It took all my courage to even get on the scale. I am going to try to lose 35 pounds which will bring my 10 pounds over when I got married.

Well good luck! I wish I could muster the will power to join you.

I read your other post and I'm terribly sorry. My heart breaks for his poor mother.

:rotfl: :rotfl:

Tonight's dinner is the WW sticky chicken with Teriyaki glazed green beans and carrots. Not to give anyone the impression a diet is taking place in my house, dessert is Lindsay's Better than S * x cake. Which BTW rocks Lindsay, even if I am an idiot and didn't read the directions correctly and used the WHOLE can of sweetened condensed milk. I tasted some that Kenny was eating for breakfast and it was really gooey, but was delicious.

Of course I still have the file!!! Someone has to be the resident DL expert since y'all have WDW taken care of! I'm more than happy to pass along what I've collected to anyone!

Lori - just tell Rick next time you won't quote me...you'll bring me along instead. :rotfl: :rotfl: :rotfl:

Nancy and Wendie - My thoughts and prayers are going out to Eddie and Becky's families. I'm so sorry for the loss of these 2 people!

No cooking for me tonight. Hope of America is taking place, so we're running through McDonald's for a snack wrap.

Dinner last night was really good! The hoisin chicken was so tasty!! I'll post the recipe in a little while. Got to run to the store really quickly, then I'll be back.

My planter/dove nest is empty this morning. :sad1:

Here's the pic I took of them yesterday afternoon,

Hey everyone. Made a really good recipe the other night with eggplant and grape tomatoes--will post it when I get a chance. Not sure about tonight, might be Indian spiced tofu with almond rice or Curried chicken wraps. We'll see both sound good right now.

Wendie and Nancy--thoughts and prayers going out to both!

Calling ALL Cooks....has anyone oven roasted zuchini?
Just wondering if it is good or I should stick with my usually saute method.

TIA,
Ann

I have oven roasted zucchini & summer (yellow) squash. It's good but not outstanding. Now throw some mushrooms & onions in there with the zucchini and you might really have a yummy dish. Maybe try it with a little bit of balsamic vinegar too. The veggies I did like that last night were yummy.
