The All-New What's For Dinner Thread!!(recipe index in OP)

guys, my finger is bruised, swollen, sore and I cannot bend it even to 90 degrees...is this normal? its not a big cut but deep.

if i knew how to post pics i would...wierd. i dont wanna ask tom cuz then he'll start with his finger. he already said i am being punished since i laughed at his staple incident.

Lauren, Does it look excessively red? It's too late for stitches now, even if you needed it. It's probably swollen because it's bruised. As long as it's not really red & doesn't look infected it will probably be fine. But I'm not a dr. ! But I do cut myself quite often!

When I cut my finger about 2 years ago. I was fixing dinner (soon after getting my new henckels knives) Chris had just come in to pick up Alexis. It was small but deep & she thought it would be fine. But after a 1/2 hr it continued to bleed. She took me to the hospital, I needed 2 stiches I think. It was swollen for quite a while & I couldn't bend it.

Here is the Olive Garden Soup recipe, it's a copycat, but tastes exact to me

1 lb. hot italian sausage, casing removed
1/2 lb. bacon or pancetta, chopped
1 quart water
2 14.5oz cans chicken broth (I just use one of the boxes, I think 32 oz)
2 large potatoes, cubed (I use more)
2 garlic cloves, minced
1 med. onion, diced
2 cups kale, chopped (I use most of the bunch-don't know what else to do with it)
1 cup heavy cream
salt and pepper (I don't usually add salt, doesn't need it w/ the sausage)

Brown sausage, drain, set aside. Brown bacon, drain, set aside
In a large pot, add water, broth, potatoes, garlic, and onion. Simmer over medium heat until potatoes are tender.
Add sausage and bacon, simmer 10 minutes.
Add kale and cream, heat through.

Reheat any leftovers slowly so it doesn't separate.

This sounds delicious!!! :thumbsup2 Thanks for posting it. It's similar to the ribolitta soup I fix but with potatoes instead of beans & the addition of cream! That's got to make it even yummier!

I'm no expert, but that doesn't sound too good. Can you call your doctor?

Thanks girls. It does not look infected so I will just keep an eye on it. I keep cleaning it with betadine and put neosporin on it. I am also up to date on my tetanus shot.

I think I should be OK...thanks again. I guess I just needed reassurance. ;)

It did stop bleeding, right? I think you'll be fine. Try to keep it dry & covered & keep putting the neosporin on it. That's what I would do anyway. But I also have 2 nurses (Chris & my Son-in-law Josh) who I bug with questions with all my injuries & illnesses.

I think I'm fixing cajun style butter beans tonight. I asked DH if he felt like lite diet food or fill em up food. His reply "beans with brown rice"! This is a true oxymoron diet cajun food!

Do you guys like brown rice? What kind do you use? I tried some once a while back and both of my guys gagged.:sad2:

Kathy, DH really likes it more than I do. I like it just fine when I serve it with something NON-southern like curries or a rice pilaf. To me the brown rice & beans is just not the real deal. You know what I mean? But Bob actually likes the nutty flavor of brown rice. I add about a 1/2 to 1 cup more water than usual & cook it longer to get the rice more tender.

I usually buy Mahatma, the instructions on that are:

Cooking Directions - On the Stove
In a saucepan, bring 2 1/2 cups of water to a boil. Add tub margarine and salt, if desired. Stir in 1 cup rice. Cover, reduce heat and simmer for 45 minutes or until all water is absorbed.

But I add another 1/2 cup of water & cook it until the water is absorbed.

So it's 1 cup of water more than white rice, 1/2 cup more than the brown rice package instructions.

If you're trying to get them to eat a little healthier, you might also want to try Minute brand instant brown rice. It comes out softer, but it has more fiber than white rice.

Hi, Ladies (you are all ladies, right?;) )!

I am a female, does that count? ;) Not to sure about the "lady" part. :rotfl:

A couple years ago I pulled a boneheaded move and cut myself on one of our big kitchen knives. I was using it to get something out of a high cabinet and I dropped it. I hit the blade to keep it from falling on the floor on my bare toes and cut my hand right below my pointer finger. I should have gotten stitches but I just put a band-aid on it and went to work. It hurt and was very sensative for a long time after.

I think as long as you keep it clean it shouldn't get infected but if you cut a nerve you might feel that for a while.

Hi All! I am so far behind today, I know I'll miss someone!

Lauren- I think your finger will be fine, it is going to hurt a while though. I generally cut myself for every special occasion and the cut gets very dark red. If it is too close to a knuckle it is hard to bend. The last time my BIL had to bring his glue. Like Sheryl, I take advantage of the PA in my family.

Try to be kind to that cut for a while...that means don't help the mason!

Rogue- Your DH is truly a brave man! Feel free to give him Kudos here anytime!

Kathy- Buddy will not touch brown rice. He is not fond of rice on a good day, he gagged when I gave him brown. The girls and I like it though.

Paintnolish-it sounds like you are pretty hectic lately! The last few weeks of school always seem overwhelming to me adn I only have a granddaughter. I cannot figure out anyone gets to the end of June in one piece.

Piglet- I missed you yesterday, but I wanted to say I was glad that your party went so well. I always have a lot left too, I have this fear of running out. I think that is why I go to WW now :rotfl:, I always tried to eat the leftovers, I should have just gotten a dog ;)

Ann- you have a busy next few weeks as well! I can just picture your little guy cheering his cousin, he has got to be so cute.

No cooking here tonight. We are going to Ruby Tuesday for dinner to celebrate Mother's Day with my MIL. DH is going to his cousins do do more yard work. I hope she takes pity on him and feeds him.

Hi, Ladies (you are all ladies, right?;) )! My WFDs are probably going to be pretty boring for the next few weeks! I am trying to cokk anything involved! I had a nice big salad with tons of veggies (I am a big time veggie eater!), the kids had a frozen pizza, and df had several bowls of cereal and some cookies (NOT a veggie eater-pretty sure his body rejects anything remotely healthy).
Piglet843- Stuffed shells are one of ds' fave things! He had me make them for his bday! I make a few with spinach and onion for myself, otherwise it is ch or sausage! I also made a garlic bread thing that is like monkey bread (chopped up biscuits, but rolled in garlic, butter, and parm, then baked in a bundt pan).

Ok - That sounds good!! I'm gonna try that next time I make Garlic Bread!
I think there is a male or two on here occassionally - but after any male bashing - I think they hide for a while :rotfl:

Gina, We will forgive you this time! But next big bash, we MUST have pictures!!! ;)

I had never had, seen or heard of fish tacos, until everyone here starting chatting about them. I had to make them myself just to see what all the hoorah was about! Definitely worth taking the time to fix! Yuuummy!

I'm not sure WFD, I'm not feeling inspired yet. Need more coffee!

I have Becky's recipe and Heresy's recipe for fish tacos. Do you use theirs - or do you need to be posting your version for me? ;)

As far as dinner - Seems like everyone is having chicken lately. I'm glad I have almost all the recipes from the very beginning of this thread saved. I just fish through that doc when I need inspiration. Good luck!

Here is the Olive Garden Soup recipe, it's a copycat, but tastes exact to me

Thanks for posting - I can't wait to try it!

I hope you feel better! Take care of that finger!

Nancy - Wouldn't that be a great diet secret! Get a Dog and share with him!! A Great way to practice Portion Control :thumbsup2

Speaking of Chicken, I wanted to post the recipe for how I made my chicken sunday. It got rave reviews!

Smoky Bacon Roasted Chicken

1 (4 lb) Whole chicken
1/2 lb bacon, cooked (I used pepper bacon)
2 Tablespoons Paprika
4-6 cloves minced garlic
1 Lemon - quartered
1 Sprig fresh Rosemary
1 Sprig fresh Thyme
Salt and Pepper to taste

Cook bacon according to package, drain on paper towels and set aside.
Clean your chicken, removing the inards and any extra fat or skin. Dry completely. With gentle hands - run your fingers between the skin and the meat to seperate and make a pocket.
In a food processor, combine the bacon, Paprika, garlic, and salt and pepper. Process into a paste.
Rub the paste under the skin of the chicken - pressing to evenly distribute.
Fill the cavity with the lemon, rosemary, thyme and more salt and pepper.
Cover the chicken and put in the fridge for at least 4 hours - preferably overnight (which is what I did).
*Note - everyone roasts their chickens at different temps for different amounts of times. Do what you know/trust here - but this is how I did it. **
Set the chicken out to begin coming up to room temp. Preheat oven to 425 degrees. Put chicken on a V-shaped Roasting pan - sprinkle outside skin with more salt and pepper. Put some water or chicken broth - or even wine in the roasting pan underneath. Bake in the oven uncovered for about 1 1/2 hours - or until internal temp in the thickest part of the breast is 180 degrees.
If its browning too quickly - lightly lay a piece of foil on top.
When chicken is done - pull it from the oven and let it rest - up to 20 minutes - before carving.

Thank you to Laura for some great tips that helped!! You'll recognize that I utilized them!! :worship:

I think I have decided - based on my new craving for garlic bread (thanks paintnolish!!!) - I am going to make spaghetti and GB for dinner.
Simple - and one of DH's classic faves.

Ya'll have a good day
Toodles :hippie:

OH!!!! We don't have a local one here but last week in Shreveport I made it to one...I LOVE their salad bar....I pigged out on it!!!:worship:

Lauren, I hope your finger gets better quickly. And tell Tom that I don't think you are being punished for laughing at his staple incident. If that were the case, I'd have hurt my finger too, 'cause I laughed til I thought I would fall out of my chair. Especially when he asked if you thought he had chipped the bone. My DH is the same way. Every ache, pain or case of the sniffles is the precursor to something horrible and previously unknown by medical science.

Do you guys like brown rice? What kind do you use? I tried some once a while back and both of my guys gagged.:sad2:

:rotfl: I thought that was just my family. I have to schedule the really healthy stuff for nights when I can bribe them with dessert.

:lmao: :lmao: Nancy, that just cracks me up! Maybe because I am the same way. Being wasteful was a sin in my parent's house, so I'm sure "batting clean-up" is a large part of my weight problem.

Just a quick run-through. Sorry to all I missed, old and new.

P does NOT have chicken pox. What he has is an allergic reaction because........he hasn't been taking his allergy medication. This is the boy who doesn't want to be reminded because he's "not a child". He had fever because his sinuses are also infected. Also because he hasn't been taking his allergy medication. In a parenting move that takes him out of the running for Father of the Year, Kenny told P he hoped the medicine took a long time to work and that he would be miserable for days and maybe then he would remember his allergy drugs. Not that he needs to be reminded or anything. :headache:

Thank you for all the kind words regarding parenting a soon to be teenager. I know that this will pass, but some days I'm not sure we're going to let him live. :sad2: I'm cleaning out my freezer just in case. ;)

Tonight we are having country fried steak, rice, and black-eyed peas. With baklava for dessert. I made it one night when I was frustrated with DsS and couldn't sleep. Considering I don't bake really well and it was my first attempt at baklava, it turned out good. However, my DH thinks it tastes better with a scoop or two of vanilla ice cream. And I'm the one with the weight problem. :sad2: Someone explain to me how that is fair?!?

I'm so happy to hear it wasn't chicken pox. I'll keep you guys in my prayers as the pre-teen year and early teen years are so very tough.

I AM SO IMPRESSED with you making baklava.:thumbsup2 I tried it once, many years ago and I swore I'd never attempt it again and to this day I have not.

Rogue- Thanks for the recipe. I might have to omit the onion- one of my "kids" can spot them a mile away and won't touch them. Oh, he's the one I am marrying at the end of the month, btw!
OK- What doesn't taste better with icecream?!? Homemade baklava sounds delicious! How do guys do it? DF can eat junk and is average sized. I really watch what I eat, but iswear the minute I eat junk, I go up 5 lbs!
Tiger- There are worse things to pig out on than a salad bar! DF is not even allowed to mention the local Chinese buffet until after the wedding!

I ate a late lunch and haven't decided if I feel like making a real dinner or not. We need to go to a local place and try it out, since we are considering having our rehearsal dinner there. And, yes, the rehearsal dinner is very soon. We had planned on having it at the wonderful Italian place I work at, but they just officially informed us they will be closing on Sunday. It has been rumored for awhile, and I asked the manager last weekend about it. She was honest, but now, I need to find a new job and a new place for the rehearsal! As if I don't have enough going on!

Smoky Bacon Roasted Chicken

This one is going into my file, it sounds so gooooood!

Kathy- that is why we chose it tonight. Marisa and I are really trying to stay on our program and I know that the salad is a safe bet. Their fish is good as well so I think we will be all set.

Don't waste freezer space on a teen boy, they would never know that it is expensive real estate. Just push him under his bed and close the door. There is not a parent in the world who would bat an eye. ;) Seriously, I'm glad that it was a reaction and not CP and I understand Kenny's reaction. Buddy used to stop taking his BP pill because he thought he could "will power" it down. I got fed up and told him that I would walk through fire for him and if he ever got ill I would care for him......but.....if he ever had a stroke I would ask the Dr if he was taking his BP pill. If not, he better warm up to his Mother because I would not lift a finger to help his stubborn hide. He has not missed a day since.

Planning a wedding does not leave room for any glitches added onto the rest of the details. I hope that all works out.

Oh yes, did any of us ever mention that we . uh....we kind of enjoy wedding details????????????? Just in case you want to share a few, um....we would never mind.......

Laura- Hey say HI to Becky for me!!!!!!!!!!!!!!!! I miss her!

What a bummer!

I have a dress rehearsal tonight so I'm eating the other half of my ahi tuna sandwich from lunch and some chips at my desk. DH is on his own.

lots of good recipes lately.

i started WW again on my own yesterday...so far so good. i just had an orange and shared with Riley the dog. he got groomed today and they said he needs to lose weight too...so we both can share and that will be our diet secret too! :lmao: ;) ...but now i want garlic "monkey" bread!!!

i love ruby tues salad bar...may have to go this weekend. never had the fish...gotta try that.

the fireplace guys need one more day...it took them longer to hang the mantel...I must say the mantel shelf that we made looks pretty good. :thumbsup2

OK babble over...sorry if I missed something...it rots typing with 9 fingers!
Nancy - I responded to you on the POFQ thread, check it out....:lmao:
