The All-New What's For Dinner Thread!!(recipe index in OP)

Good Morning All! I hope everyone had a nice Mother's Day. I enjoyed mine. Buddy and I worked in the yard. He got started early and took out all of the black paper that was under the mulch. I hate that I let the landscaper put in in the areas that I don't plant. I have about 18 inches of mulch framing the outside of the retaining wall in front of the house so in the fall I can plant tulips and daffies to outline it.

I made some CORE salads for dinner and headed out too. We had burgers and salad and Donny brought ribs. YUMMMMMMM> I made a berry crisp that was CORE WW. It was one expensive bust. We are going to stick to fruit salad for dessert from now on I think.

Tonight is leftovers.

Last night we went to Flat Top (make your own stir-fry) for Mother's Day. We had big 'ol stir-fries and a "triple chocolate storm" for dessert (aka brownie ala mode). Then the kids got home from xh's and made me a cake! What's a mom to do? I had to eat a piece?!?
Hope all of your Mom's Days were nice, too!
 
Laura- The American Dolls are cute but they cannot beat the real thing
Caili is the real "American Doll" :thumbsup2 Kady just had to have one for Christmas, she did not realize that the doll she got in Disney was one, so Santa brought her a "just like me" doll and for Holidays she has been getting clothes for them. They dress like twins, but honestly she does not play with them. They get dressed and then they look pretty. That's it.

Sheryl- I would have loved to see your little Cutie all dressed up in her finery for her fancy meal out. I am a sucker for "girly" girls as we never had one in the family before Kady.Of course it is hard to picture her that way when she was perched on top of a mountain of dirt and grass that was in her Pa's dump truck, leaping over the gate into the mulch :eek: I thought that Marisa was going to have a heart attack.....there is a reason she cringes when Pa takes Kady away without adult (think Marisa) supervision :rotfl2:

Kathy- Don't think we are going to get tires of pictures of our Kyle! Keep sharing them, and I think this one is a fierce signature!

Ann- I'm sorry that the next two days are going to be long ones, but have fun at the game! The girls play from the heart.

My big event went off without any problems. All my food turned out really good. I'd like to thank you guys for that. Your recipes and advice helped me make it a special dinner for my family. So thank you!

As I figured I would - I made way too much food. Everyone took some home and I still have a fridge full. So todays lunch and tonight's dinner is leftovers for me.
DH doesn't do leftovers so its up to me to consume them. And its up to him to make his own non leftover dinner :thumbsup2

Between cleaning house and cookin all weekend, I'm absolutely pooped today. I hope its an easy day here at work - I can get out on time - then crash my behind on the sofa with my leftovers tonight.

Ya'll have a good monday. I'll be glad when mine is over!

Nancy, Funny you should ask how I'm feeling. I'm only awake now because my neck was hurting. The dr. found bone spurs pinching the spinal column in several spots in my neck. He gave me a cortisone type injection on Thurs, hoping we could control the pain with that. But the injection hurt:scared1: & my neck still does too.:confused3 That was the rheumatologist, he said surgery may or may not be neccesary. I think I'm going to go ahead & schedule an appt. with one of the better neuro's in the city & see what they have to say.

Hi Everyone!

I just have time for a quick check in this morning, but I wanted to say a quick hello and say I'm really going to try and read through what I've missed. Really I am. But I'm not sure I'm going to be able to catch up on everything.

My life has been nuts the last couple of weeks. Between dealing with my darling 12 year old step son who is being quite a monster and who also will tell you his father and I are the meanest parents on the planet, and helping my parents get all the financials for their business together to list it for sale, there has been almost no time for me. I'm still not caught up on preparing the financial information my parents need, but hope to finish the last items this week. Then it may slow down until it sells and the due diligence period begins.

My roof is still not completed, although it is very, very close. Or so the roof guy keeps telling me. So I hosted Mother's Day with shingles stacked in my yard. Oh well.

Oh. And I'm waiting on Kenny to call me this morning when he gets out of the doctor's office with said step son who may or may not have chicken pox!

I think we are having some kind of chicken tonight, but I'm not sure yet. I am sure, however, that there will be a vodka/tonic in my evening plans.

I'm off to try and catch up now.

Funny you should say Caili looks like a doll. More than one skater at her ice rink has commented on how the new American Girl figure skating doll looks like Caili. :laughing:

Weather here is dreary nasty! It's been rainy pretty steadily since yesterday afternoon and there's lot's of flooding in the area. Thankfully tomorrow is going to be nice, I'm going to a baseball game.:yay:

Tonight for dinner will be one of two things, chicken or egg rolls. :confused: I had planned chicken but my DM wants to make Vietnamese egg rolls. Depends on if she goes through with it. If it's chicken I am going to kind of make a recipe I saw Giada make on FoodTv this weekend. If it's the egg rolls I will wait until tomorrow night.

Giada made this pan seared salmon and put it on a bed of whole wheat spaghetti. She just cooked the spaghetti and put it in a bowl with minced garlic, lemon juice, capers and basil. I am going to make it with chicken and lime juice instead, I have limes I need to use.

I hope everyone had a great day yesterday. We saw my Mom on Friday so yesterday was just me, Tom and Andrew. :love: The only thing I wanted to do was go to the gun range. We have taken up target shooting and I absolutely love it!

Thanks! I ordered the wicks off of ebay. I have to go by some more oil, I have LOTS of wine & liquor bottles to fill! :laughing: Unfortunately, I'll need more citronella if we are going to continue to try to eat outside in the evenings. We were almost carried off by the mosquitos the other night. And the smell of citronella certainly doesn't enhance the taste of my meals!

Nancy, I'm really mad at myself for forgetting to take pictures yesterday!:mad: Alexis & Kady sound very much alike. She begs for the dolls but hardly plays with them. Sometimes she is such a girly thing, but then she loves bugs, fishing & riding the 4-wheeler in the woods with her Daddy! I feel Marissa's pain, I hate even hearing about some of the stuff they get into, the thought of it, just makes me cringe!

Alexis also does the same thing with the doll clothes. Whatever fits one doll, she decides has to go on another doll or animal that it really doesn't even fit. :confused:

On the fish, I used a stainless pan with holes in it, meant for grill cooking. I oiled & sprayed it a bunch, that really made it easier for me than just cooking it on the cast iron grate. No matter how much I oil that, the fish is going to be stuck. :confused3



Dinner will be leftover halibut, although I'm sure it will be eaten very late & not enjoyed nearly as much as the other night. DH has a very difficult meeting at 6 & he could use some prayers today. Some family business, I can't share much about, with a city hearing this evening, about some inherited property.

Hi Tracy! I am Lauren (37) and SAHM to Andrew 10. I got married last June to Tom. We are in the middle of a major renovation on the downstairs of our house, doing alot ourselves so I have been a witch lately. ;)

We would love to hear about your wedding...the girls here were my sounding board for alot of the ideas I had. We had more cake than we needed too so had cake boxes for everyone to take some home.

We will be in Disney for out first anniversary! :cool1:

I thought I would hate it...Tom and I may try a husband/wife competition in the near future in PA. Its pistol and rifle...I am not too great on the rifle...Andrew is a great shot too so we may look into him competing too.

Funny thing is, Tom is so careful and makes sure we are careful too (of course)...he goes and shoots a 1/2 " staple right into his finger yesterday. My gosh, he wouldn't stop complaining about it yesterday. "Do you think its broke"? "Do you think I chipped a bone"? Blah Blah Blah!

Here's some food porn for y'all from Saturday evening's dinner. The pics not great because it was getting dark.

I had some super fresh and expensive halibut, so we decided to make it a special evening.

The halibut was marinated with lemon & dill. I grilled it & the garlic bread. ( I'm trying Laura! I used an extra grill pan to keep it from sticking to the grates.)

The salad was really good too! Arugula with tomato, vidalia onion, fresh mozzarella, basil dressed with olive oil. The champagne was extra yummy!

Question for the experienced cooks: I bought some orange roughy at the store. I've never cooked it at home before that I remember. What is your favorite way to serve it? Any recipes you like? Thanks!

On the fish, you can do anything with roughy. That's a firm, mild & flaky fish, so anything would be good. Mmmm, fish tacos!

Alexis & her Daddy go fresh-water & saltwater fishing. She likes the fresh water fishing the best. I think it's because she loves to come & tell me all about playing with the worms & seeing the expression on my face! :laughing:

Aimee, On the tacos, I used a cornmeal batter & it was so good. I think what makes it, is the combo of the salty, sweet & spicy. I made it a mango-avocado salsa & an already prepared chipotle sauce.

And speaking of mango. I finally found the mango chutney at new grocery that just opened near my house. :banana: It was in the ethnic food section. It was the Patak's brands that I think Stephanie mentioned. I bought the Major Grey one she recommended for her curried chicken wraps.

Was that the same recipe Becky uses for chicken salad?

Last night I was going to make the olive garden soup (I think someone asked for the recipe, I'll post when I find it) but I ended up making manicotti. It came out really good, and the best part- enough leftovers for another meal. After dinner I choked down the cake my husband and daughter made me. Apparently he didn't know you have to grease the pan, or how to wash the dishes. They tried their best but I don't like cake to begin with, let alone a mix.
I don't know what's for dinner tonight, I have some chicken legs in the fridge but I wanted to portion them up and freeze them for in the summer when there is to much traffic to go to the store. I don't know-I'll figure something out.
