Good Afternoon all,

Last night was steak with sauteed onions and mushrooms. Yummy! I made a corn noodle casserole to go with it that I don't think that I will be making again anytime soon, Probably my fault as I added a "liitle" extra cheese (can never have to much right?) WRONG!

Tonight is venison with green beans and potatoes, done experimenting for a day or two.

Thank you all for your prayers. My DH called this morning to tell me that he passed on during the night. I have tried to reach Debbie but have not been able to yet. I just cannot imagine how his parents and GM survive this :sad2:

Calling ALL Cooks....has anyone oven roasted zuchini?
Just wondering if it is good or I should stick with my usually saute method.

I agree with Sheryl, not great alone, I add onions and cherry tomatoes, that's really good.:thumbsup2

Back from the dentist, good news for now. He messed up a little on the filling and thinks that may have been the problem, BUT if the pain continues or gets worse then we're talking root canal.

I just want to let all of you know that my beautiful and courageous friend Becky, has now crossed over to the land of our lord. She went with love all around her, and is now with her dear sweet brother, finally cancer free....

I thank all of you for your prayers and thoughts these past few days......ladies please please remember to do your self exams........

Tonight's dinner is the WW sticky chicken with Teriyaki glazed green beans and carrots. Not to give anyone the impression a diet is taking place in my house, dessert is Lindsay's Better than S * x cake. Which BTW rocks Lindsay, even if I am an idiot and didn't read the directions correctly and used the WHOLE can of sweetened condensed milk. I tasted some that Kenny was eating for breakfast and it was really gooey, but was delicious.

I made that for Easter and it was SO good.


This is the chili recipe I made Sun night. DH loved it and ate two bowls - then told me it made up for the last chili recipe I made :sad2: THe last one was delicious but it had chocolate in it and tasted similar to a mole sauce. He hated it.

This one is from Rachael Ray magazine.

Tex-Mex Corn Chip Chili
SERVES 6
Prep Time: 10 min (plus standing)
Cook Time: 35 min


2 tablespoons extra-virgin olive oil

1 pound lean ground beef

1/2 sweet onion, finely chopped (about 1 cup)

1 clove garlic, finely chopped

1 tablespoon chili powder

1 teaspoon ground cumin

One 15-ounce can black beans

One 15-ounce can pinto beans

One 10-ounce can tomatoes with green chiles

Salt and pepper

1/2 cup chopped cilantro

12 ounces pepper jack cheese, shredded (about 3 cups)

One bag (about 10 ounces) corn chips, such as Fritos

1. In a Dutch oven, heat the olive oil over medium-high heat. Add the beef and cook for 7 minutes. Add the onion, garlic, chili powder and cumin and cook over mediumlow heat for 5 minutes. Add the beans, with their liquid, and the tomatoes; bring to a simmer. Cook, stirring occasionally, until thick, about 15 minutes. Season with salt and pepper.

2. Stir in the cilantro, then top with the cheese, cover and let stand until the cheese melts, 5 to 10 minutes. Place a handful of corn chips in each of 4 bowls. Top with the chili and serve.

Tonight is burritos - YUM!

I have lots of times. I just coat with olive oil and salt and pepper it.

He didn't redo it, there was just a spot he missed. I'm mot hurting at all right now, but he did give me pain meds just in case.

I hope whatever he did helps & you stop hurting. And that you WON'T need a root canal!:hug:
 
Aimee, I want the recipe for the one your DH hated! with the mole sauce, that sounds delish! Is it posted already?

I can't remember if I posted it - it was a huge flop because I made it for my ILs on New Years and my FIL hated it, too. It's got a similar flavor of a mole sauce, I think because of the chocolate.

Chili with Chipotle and Chocolate

Ingredients
Cooking spray
2 cups diced onion (about 1 large)
1 cup chopped red bell pepper
1 teaspoon minced garlic
1 1/4 pounds ground turkey breast
3 tablespoons brown sugar
2 tablespoons ancho chile powder
1 tablespoon unsweetened cocoa
1 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
2 (15-ounce) cans pinto beans, rinsed and drained
2 (14.5-ounce) cans diced tomatoes, undrained
1 (14-ounce) can fat-free, less-sodium chicken broth
2 chipotle chiles, canned in adobo sauce, minced
2 ounces unsweetened chocolate, chopped
1/2 cup light sour cream
Chopped green onions (optional)


Preparation
Heat a Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion, bell pepper, garlic, and turkey to pan; sauté 8 minutes or until turkey is browned and vegetables are tender. Add sugar and next 9 ingredients (through chipotle) to pan, stirring to blend; bring to a boil. Reduce heat; simmer 15 minutes or until slightly thickened, stirring occasionally. Add chocolate, stirring to melt. Ladle 1 1/4 cups chili in each of 8 bowls; top each serving with 1 tablespoon sour cream. Garnish with green onions.

WFD tonight, I have no idea. I am going to a dinner.

And I have to tell you my dessert disaster last night. So I put frozen strawberries, cherries and fresh blackberries in a pan with a lemon juice and Splenda. I decided to cook it because of using frozen fruit and it was late.

So I put the pan on the stove, put a lid on it and put it on medium heat. Now USUALLY at this level it just simmers lightly, well not last night. :eek: I went downstairs for about 15 minutes and when I come back the juice is flying. :scared1:

It was in a full boil and there was juice splattered everywhere and running down the sides of the pan. Now the strange thing is that although there is juice on the burner it is not smoking at all. :confused: Well as I am cleaning up I realize that juice has pooled in the burner pan and under it inside the stove. :sad2:

It turned out good but boy what a mess.

Sheryl -- That steak looked great. I loved the bird picture too. I saw a rabbit in my neighbor's yard for the first time this spring this morning. Last year, we had baby bunnies born in our front yard. Caili was so excited, so I am hoping they come back this year. I am sure Caili will be leaving carrots for them as enticement. :)

Kathy -- I hope your tooth is better now.

We're having dinner early because of Caili's skating practice. I am doing something with gnocchi, but I'm not sure what. Greg and Liam are watching the first Harry Potter movie while Caili and I are gone. Liam is really into the series now. He started reading the first book when vacation began last week, and he is already more than halfway through the third book. He has been reading rather than playing his Nintendo DS. :yay:

That's how my stove started doing just before I gave up on it. I got to the point I would have to watch all pots and lift them from the burners before they would boil over. It was all or none with my old stove.

I hope your rebate check comes soon so you can get a new stove.

AAAHH, I just typed up a whole recipe and then my post got lost in computer world--lets try again

Chicken in a Fresh Tomato and Eggplant Sauce with Spaghetti

Coarse Salt
1 lb spaghetti
5 tbsp EVOO
3 baby eggplants or 1 small, firm eggplant cut into a 1/2 inch dice
1 1/3 lbs chicken tenders cut into bite sized pieces
1 medium yellow onion, chopped
4 garlic cloves, chopped
Black pepper
1 tsp crushed red pepper flakes
1/2 cup dry white wine
1 1/2 cups chicken stock
1 pt. cherry or grape tomatoes
1 cup fresh flat leaf parsley leafs chopped
1 cup grated Parmigiano-Reggiano

Cook spaghetti al dente, reserving 1/2 cup pasta water

Preheat large skillet over med-high heat with 3 tbsp of EVOO. Add the eggplant and cook, stirring occasionally, until brown, about 5-6 minutes. Remove the eggplant to a plate and cover with aluminum foil, return the skillet to the stove. Add the remaining 2 tbsp EVOO and cook the chicken till lightly browned.

Add the onion, garlic and return the eggplant to the skillet. Season with salt, pepper, and red pepper flakes. Continue to cook for 3-4 minutes. Add the wine and stock and bring to a simmer. Cook for 3-4 more minutes. Add the cherry tomatoes and reserved pasta water and cook until the tomatoes begin to burst. Add the parsley and cooked pasta, toss to coat, and cook for 1-2 minutes more, or until the sauce tightens up around the pasta. Turn the heat off and add hte parmigiano. Toss to coat

It's not official as Kyle has not signed anything but it looks like Kyle's and our dream may be coming true. We have a local Junior College, Delgado, that has an excellent baseball program and it's just across the river(maybe a 20 minute drive). Kyle has always dreamed of being able to play here in NOLA. The Delgado baseball coach approached Johnny at the Shaw play-off game today and said he wants to meet with us as soon as our playoff season is over, he REALLY wants Kyle for his program and is ready to talk $$$ and make an offer but he doesn't want this to be a distraction while we're still playing for state championship. Needless to say we are ecstatic and he'll be staying home, ya know Mama likes that.:goodvibes

Aimee, Thanks for the recipe! It still sounds good to me, so I might have to give it a try & see what we think. Maybe it was too much chocolate. Or I might just make a chili using an already prepared mole sauce.
