Lauren-glad you are feeling better!

Last night's bbq was yummy. Will post the bbq recipe and corn salad recipe in a bit. I used the fresh blueberries in the blueberry dump cake recipe from our old thread. Super yummo, especially with vanilla bean ice cream! Today will more than likely be leftovers. I have to work a few hours at the gym this afternoon and won't home til almost 6
 
--this recipe was in this month's Bon Apetit--it is an orzo and creamed corn dish. The first local corn was out at the farmers market yesterday and I had to buy some:

Tonight will be the pork chops that we didn't have last night.

We decided to have a movie night with my neighbors we made chicken quesidallas, rice and salad then watched National treasure 2.
The zoo turned out really good. There was a couple of hours were there was no rain. We lunched at Ruby Tuesday and ate way to much.

I need to recapture my yard from the weed monster. I know there a flowers in there somewhere!:rotfl2:

Oh I know. I do this with a vegetable soup that I make. I chop the chicken into bite-size pieces, add them into the soup, and put it on low. I usually set the table, get the bread ready, etc. while it's cooking.
 

Here's a couple recipes I used last night

Simple BBQ Sauce
1 bottle (24 ounces) ketchup
1 cup cider vinegar
1/2 cup unsulfured molasses
2 tbsp Worcestershire sauce
1 cup water
1 tbsp paprika
1 tbsp onion powder
1 tbsp mustard powder
1 tsp garlic powder
1/2 tsp ground black pepper
1/4-1/2 tsp cayenne pepper

Combine all ingredients in a medium saucepan. Bring to a boil; reduce heat to medium and simmer until sauce is thickened and reduced by a third, about 30 minutes. Let cool to room temp before using. To store, refrigerate, upto 2 weeks.

Charred Corn Relish

4 ears shucked corn
Cooking spray
1/2 cup diced red bell pepper
1/2 cup halved grape tomatoes
2 tbsp finely chopped red onion
2 tbsp thinly sliced green onions
1/2-1 chipotle chile, canned in adobo, minced
1 tbsp fresh lime juice
2 tsp canola oil
1/4 tsp sugar
1/4 tsp kosher salt
1/4 tsp ground cumin

Lightly coat corn with cooking spray. Place corn on grill rack; grill 20 minutes, turning occasionally. Cool completely. Cut kernels from ears of corn; place in a medium bowl. Discard cobs

Add bell pepper, tomatoes, onions, and chipotle chile to bowl. Toss well. Combine juice and remaining ingredients in a small bowl, stirring with a whisk. Drizzle juice mix over corn mixture, toss well. cover and chill at least 30 min.

Kyle will be home this afternoon then he heads out tomorrow morning for Cincinnati.... going to grill up some chicken and use one of the "gourmet" bbq sauces Lauren sent me for my birthday. Also making Becky's Bacon Wrapped Scallops with Chipotle Lime Aioli, veggie kabobs and mac & cheese for the guys.
 
I am at work until 4pmish today, then I race home to change clothes and go to a SS pool party from 4-7. Food will be there so that is dinner.

Hey y'all, Sorry to have missed so much the past couple of days. DH has been trying to figure out why our computer has been running so slow.

Wendie, Sorry I missed your quest. about DD a while back. She is doing much better! She was really hurting for about three wks, but it finally subsided with meds, chiropractor. But what I think really helped her, was vacation! She thinks it's caused from sitting at her desk for long periods at work. She's making sure she takes more breaks & stretching. So far it seems to be working. Thanks for your concern!:goodvibes .

Mom is trying accupuncture for pain management today so please keep the prayers coming.

I hope it helps her! Let me know how she does with that, it's something I've considered, since I've tried everything else.

We had pancakes and bacon for dinner tonight, with strawberries and blueberries on the side. We went out for ice cream earlier this afternoon, and then I took the kids to the playground. All of this was unannounced, so Liam said, "Thank you, Mom, for the most surprising day ever!" Back to the dungeons tomorrow, I guess. :laughing:

Stephanie, I was reading about the new rest. in the Contemporary & thought you might be interested. It's The Wave, they have an emphasis on organic & local grown foods. The bar menu also sounds very good, it's not the new standardized menu they have everywher else! Here's a link to the menu & there's another link on there to check Kevin's (podcast) review.

I'm trying to figure out how to fit it in on our next trip. Started making some ADR's yesterday. We're not booking too much with hopes of doing a lot of F& W events. But so far, we have Artist Point, Brown Derby, Teppan Edo, breakfast with Princesses at Akershus, breakfast at Cape May & Boma.


Here's the pics from the grilled lamb dinner. We had tomato vidalia salad & I tried the watermelon salad that Becky had fixed a while back. Bob was so afraid but he tried it & liked it!

Oh this wine, if any of you like a smooth SUPER fruity red, look for this one. It's Brancott, South Island Pinot Noir, from New Zealand. Really nice.

I think we're going out for a late lunch today.
 
SHOVAN ~ she has been to accupunture 3 times and so far so good. She even drove in her car yesterday for a total of 10 minutes, which seems like nothing but based on her staring at the ceiling for 3 weeks we are going in the right direction.
I'm still concerned about her mood & sadness, I really have to stay on top of that.
I love the Mickey wine cork, we have the same but have never had to use it!:drinking1

WFD - DH is ordering in a pizza & I will tear open a box of Nutri System goodness:rotfl:

Tomorrow I'm going to try the charred corn relish it sounds so good! What shellfish besides shrimp do you think would be best with it?

I saw that folks want the orzo recipe. I will post it, but I am not sure where the magazine is right now. It's SOMEWHERE in the house, I'm just not sure where.

So, yesterday.

Fish skewers. These are tuna and swordfish. It's the same recipe from Mario Batali Italian Grill that I showed you a couple of weeks ago. It is SO good. I served the fish on the leftover grilled veggies from the day before, and some spinach:

Then we had another recipe from the same book: "Corn as Italians would Eat It." It's grilled corn, rolled in olive oil and balsamic vinegar, then parmesean, topped with red pepper flakes and mint:

We also had crusty bread. Later last night, we got hungry, so I put together this cheese plate. That chutney in the back is my all time favorite!:

Well, now my back is out...it happened this am (I can't remember how) but I really really wanted to go to the fundraiser so I hobbled about. I am in so much pain and trying not to take anything but wound up taking some tylenol...:sad1:

Today's food:

Laura made the guacamole today. It tasted good, but I guess she likes her guacamole smoother than I do. I like the big chunky guacamole the best:

I made some "fiesta rice." I just kind of made this up. My stomach was REALLY bothering me (lactose issues, those who are in my boat will understand) while prepping dinner for the group so I did not pay much attention but I thought it came out OK:

AND, here is the salad that, according to my Mom, made this meal "trilogy diet acceptable." Seriously, has ANYONE heard of the trilogy diet? Because yesterday I stopped by when they were fixing dinner and it was hamburgers on great big fluffy white bread buns. I just don't get it! "Miracle" salad:

Hey y'all I found some Major Grey's Chutney in the store today and bought it. I remember we were discussing something about it but don't remember what.....help this old broad with CRS out..:laughing:
 
Sheryl--We're actually trying the Wave in August (yes, another trip this year) We're taking my dsis (the one going through the divorce) and my dniece for dniece's bday. And since we're paying for the trip, Dsis offered to babysit for us one night--so we thought we'd give the Wave a try. Your dinner looks awesome!

Becky--Pics are amazing as usual!

Well, had leftovers for lunch and Chili's takeout for dinner. My parents gave us a gift card they weren't going to use, so it was free, and actually not too bad!
 
Happy belated birthday to Marissa! If she is the grill master, I am sure she didn't mind cooking for her birthday dinner. I am sure she would rather do the grilling, than try to eat poorly grilled food. (At least this is what my brother would think, and he is the grill master at my parents' house.)

The lbs. aren't coming off quite as fast as I'd like but I have lost two inches in the tummy area in the last 10 days.

Kathy, that is awesome! It is the inches that matter right now, not the pounds. The weight will come off eventually too.

ETA one more time: how would it be if I used orzo instead of rice? Hmmmm..........

I like orzo. You would just have to adjust the cooking time because orzo take less time to cook than rice.

Lauren, I hope you feel better. My mom's prescription for back pain is ice for 20 minutes, rest for 20 minutes, ice for 20 minutes, rest for 20 minutes. After the first day, this turns to alternating heat and rest.

It tasted good, but I guess she likes her guacamole smoother than I do.

I like all kinds of guacamole! My guacamole is usually chunkier as well, but Beck has a different masher than I do.

Dinner was good though...not sure how fried fish fits into the mysterious Trilogy diet :confused3 , but I am not going to ask...and I am planning to eat the leftover guacamole shortly.

Tomorrow Liam starts baseball camp and Caili starts a ballet workshop leaving me with an estimated 2 1/2 hours on my own each day. I'm going to try to reclaim my house from the chaos that has reigned since the kids came home from school.

Kathy -- The Major Grey's is in the curried chicken salad Beck and I made this week, and I believe Sheryl used it in her Jamaican chicken wraps.

You're right, the inches are more important right now, it's just hard to see the scale at the same weight.
