Hello all! I just had the most wonderful stuff at a luncheon for work. It is called Texas Caviar. I have never had this before...it was wonderful. So delicious I had to share it.
Texas Caviar
(Everything "chopped" is diced in rather small squares, just FYI)
1 can black eyed peas
1 can black beans
1 can white corn
1 cup chopped celery
1 orange pepper, chopped
1 red pepper, chopped
1 yellow pepper, chopped
3 jalapeno peppers, chopped
1 bunch green onions, chopped
Cilantro to taste
Salt to taste
Pepper to taste
In small saucepan combine
1 cup olive oil
1/2 cup cider vinegar
1 cup sugar
Heat to dissolve and bring to boil; simmer for 5 minutes. Pour over
bean mixture and allow to marinade at least 1 hour. Pour off marinade
before serving. Best served with Tostitos Scoops. Enjoy!!
