Ten pounds of overdone ham - what to do?

My local megamart had spiral cut hams on special this week for 99c a pound. Great deal!! So I bought one and baked it yesterday....... but DH didn't take it out of the oven while I was at church sooooo........ after the bone FELL out of the ham, we have about ten pounds of very overdone.... not burnt... ham. My idea was sandwiches for the week and dinners but the ham is so done it won't stay in slices for sandwiches. It just shreds.

By the way, it really is delicious...but falling apart!! We had it last night for dinner and this morning in omelets and for dinner on pizza.......

Anyone have any recipes to use this much ham?

Soup?
Make a basic soup with carrotts, celery, onions and cabbage, cut up or shredd the ham and add some.

Ham Salad?
Cut up some ham mix with mayo and a small amount of relish.

Pea Soup?

Fried eggs and ham?

As you can tell I don't measure when I cook, sorry about that.
 
You could put pieces into scalloped potatoes. It may be perfect for making ham salad or deviled ham spread for sandwiches.
 
Crock pot bean soup. Let it cook all day with a bag of dried beans, some chicken stock, carrots, onions.
MMMM I just made this yesterday.
 
We look forward to having ham on the holidays for the delicious split pea soup that it makes afterward. Get a bag of dried split peas...Goya has a delicious recipe on the bag of peas.....but, add much more ham then the recipe calls for. (It really is what makes the soup!)
 
I had this same problem just a week ago. I found a recipe for ham loaf on the web. I threw the ham in a chopper added a 1/2 pound of ground pork, egg, allspice, bread crumbs & threw a few pineapple slices on top & made like a syrup of honey & pineapple juice so it wouldn't be too dry.
I had enough to make 2 loaves so I stuck one in the freezer. We happened to eat the frozen one last night & it was wonderful. So it freezes well.

(You could add spices to your own taste. I have had the loaf with mustard & chopped onion & celery also.)
 
Sandwiches. Just use pitas or wraps. I personally love shredded chicken on a roll with just a little mayo to keep it together.
 
Boxed scallop potatos with ham chunks,

Ham bone with onions (DRY and soaked) split peas, or navy beans, simmer add the meat to heat.

Take some bread dough (you can buy it frozen at the supermarket and thaw it), cut it into sandwich size portions ( I usually get about 4-6 serving per loaf, roll out, put chopped up ham, cheese and anything else you want (brocolli, veggies etc) on half, fold it over and put an egg wash over it, cook till nice and golden. Makes a great sandwich and my kids LOVE it.
 
If you are having problems deciding what to do, I would freeze the leftover ham until you are ready to use it. If I fix something more than once per week, my family compains, so that would allow me some extra time to figure out what I'm going to do with it.
 
See thats how we always fix ours until it shreds off the bone. We put it in the crockpot with one cup of water and let it cooks until it just falls off.
Then we bake some Sister Shuberts yeast rolls and make ham rolls with some mashed potatoes and peas or green beens.

The ham is just Wonderful fixed like that.
 
I just made quiche with ham: small cubes, plus the veggies you like and wow!

A big yes to ham and split pea soup. That is darn easy to make but cook for a few hours. Add sauted onions, peppers (if you like them) and carrots.

My boys gobble that up!
 
I made Ham and Cheese Bow Tie pasta with some of our leftover spiral ham - YUM. I froze the rest for a later date as I didn't want my family to get sick of it. ;)
 
I love ham salad. Just throw some of the ham in a food processor until chopped fine. Add mayo, celery, sweet pickle relish and onions. Yummy!!!
