Tell me about your meals at the Fort!

Ok, so we are going for the second time at the Fort and I am trying to plan some meals. So far:

Filet mignon on grill, baked potato in crock pot, and a salad
Crabs, trying to find out where I can purchase a bushel
Grilled chicken, rice, corn on the cob, and broccoli
Pasta with sauteed shrimp and salad


Hmm..what else can you add for ideas..I would love to hear them.

We have a popup with a microwave.

So the first full day/night camping I usually grill a bunch of meats all at one time (burgers, dogs, steaks, chicken) and put it in a ziplock quart size bag or two. Then we nuke something each night and serve it with some side (potato salad from the Winn Dixie deli, pasta salad, instant mash, rice aroni, etc).

We also get a fish or shrimp something and eat that the night we cook on the grill because of course it doesn't keep as well.

At the Fort our arrival night has traditionally been a GAG.

I love cooking anything I can in the slow cooker.

Whole Chicken, Taco meat, Sloppy Joes, Roasts

I love grilling too!!

Steaks, Burgers and our new found favorite Portabella Mushrooms!!
 
Crock pot cooking is my favorite! Chicken n rice, pork roasts, spaghetti sauce. Ready when we return and minimal time to get it on the table for my hungry campers!
 

Great ideas here. This will be our first time cooking at the fort. We have always done the dining plans. With 13 to 15 of us we can use all of these suggestions.
 
Some of our favorite easy camping foods...

Walking tacos...individual frito or dorito bags, cut the top off, throw some cooked taco meat on top with your favorite toppings (cheese, lettuce, sour cream, salsa etc.).

Foil meals...chicken or beef wrapped up with your favorite veggies in a foil packet over the fire.

Kabobs...beef, veggie, beef, veggie, beef, veggie (you get the idea)

Crockpot meals are also great, we do pulled pork bbq sandwichs a lot or roast and veggies.

Or use pie irons...tacos, grilled cheese, hot ham and cheese, toasted pbj.
 
We have a popup and it has a pretty small refrigerator, so we have to limit the amount of food we can store in it. We buy a ham and slice off as much as need for breakfast, lunch, or dinner. We take powered soup mixes (Bear Creek) to have. We have made Chili in our small crock pot. We have used the leftover chili and made chilidogs. We have grilled hotdogs, hamburgers, steak, pork tenderloin, etc. We are also thinking about taking a fondue pot to heat oil and cook steak and chicken…or regular cheese fondue. We also take canned vegetables. We’ve even baked cookies in our toaster oven. Recently we found dehydrated hash browns in our local supermarket and will be using them as well. The sky is the limit and you can make just about anything you would make at home in a campsite.

I gave up on that as we never seem to make it back to the site for dinner at WDW. However there are some great ideas here for other trips.
 
We did the obligatory grilled burgers and dogs. The best meals we did we our crock pot meals. Taco soup, and dump over scoops/tortilla scoops, or just tortilla's. Crock pot lasgana and a salade. I threw it together in the mornings as DH cleaned up from breakfast, returned from the parks in the evening with dinner done. WONDERFUL!! :)
Do a search on either this board or the camping community board for crock pot meals. That's where I got several of my recipes for our trip last summer. YUMMY meals and desserts...
 
I use the Crock pot most nights. Some of our favorites are:
Ham and potatoes casserole, lemon chicken served with rice. Chicken and mushroms, I make a big batch of taco meat a freeze it in baggies then I make a taco salad one night and taco/quesadillas another night. Lasagna in the crock came out really good too! Also a pork loin with BBQ sauce makes great pulled pork sammies!

I love having a home cooked meal ready for us when we return for our afternoon break.

I always use the crockpot liners so clean-up is a breeze.

This!!:thumbsup2 The linears are a must! I now use them @ home everytime I use my crockpot!! The clean-up is so much easier!!

After that we pretty much grill out every night or every other night making plenty for leftovers for lunches and/or off nights. Crockpot Chili made with a couple extra charcoal-grilled-burgers from the night before is sooo much better.

I see where a couple of you mentioned seafood. You can run to publix and ask for shrimp or crablegs and they will steam them with or without seasoning for you so they are ready to eat as soon as you get back to the campsite. Delicious and easy!!!:woohoo:
 
Mexican Crockpot chicken


4 -5 boneless skinless chicken breasts
1 (15 1/2 ounce) can black beans , drained
1 (15 ounce) can corn , drained
1 (15 ounce) jar salsa
4 ounces fat free cream cheese
4 ounces nonfat sour cream
Directions:
1 Place all ingredients except cream cheese and sour cream in crock pot.
2 Cook on low 6 hours or on high 4 hours.
3 Last 45 minutes add sour cream and cream cheese.

personally, I'd love to cook lobster, but it's so expensive, that when I have it, we usually go to Boston Lobster Feast in Orlando so that I can have an "all you can eat" lobster meal,,,,,,,

we usually have the same old same old hamburgers, hotdogs, maybe a london broil,,,,,,,,,,

blergh. We are boring

I just tried these for the first time and I'm hooked!!! It is a must I agree!

Sorry it took me so long to post, I've been on the cruise forum, and forgot to check back.
This is the recipe I've been using, found it here last year and tweaked it a bit. Hope you enjoy it!:goodvibes

Crock Pot Lasagna

Favorite Spaghetti Sauce (I like Hunt’s canned, traditional, meat or mushroom)
Lasagna Noodles
Ricotta Cheese (get the big size and use about 3/4 to just about all)
Bagged Shredded Mozzarella (Or Italian Blend) I usually get two 2 cup bags and use 1/2 the second bag as the topping
Grated Parm

Pour enough sauce in the bottom of the crock pot to coat.
Break up Lasagna noodles to fit and cover bottom of crock-pot in 1 layer.
Mix together ricotta, mozzarella and a hand full or so of parm cheese. Reserving some of the mozzarella.
Smooth out a layer of the cheese mixture on first layer of noodles.
Cover with sauce
repeat---noodles---cheese---sauce
then for the top, just noodles then a good layer of sauce.

Cook on low 3 1/2 - 4 1/2 hours.
( I have a new crockpot and do either the 8 hour or 10 hour depending on the time I start it and time I think I'm going to eat. Also a few weeks ago I put it together the night before, and started cooking the next morning. I think the noodles got soggy because of doing that, just an FYI.

sprinkle top with a good layer of the remaining mozzarella cheese
cook for an additional 1/2 hour or until cheese is melted

DISH UP...
If you want you can also brown some meat (some prefer ground sweet Italian sausage) and add the sauce to it and then use this mixture for the sauce layer.
 
OK, so new question regarding the whole "food sanitation" end of things... Has anyone ever had issues with the FL heat and cooking in a crockpot? I'm guessing its not an issue, but hubby has some reservations... :)

We didn't last summer. But if your crockpot has the time
(4, 6, 8, 10 hr) setting, you can set it to cook faster or slower depending on your schedule. Also if you're in a camper it wouldn't be any different than using a crockpot at home.

If you're speaking of cooking meats with vegetables, once again should be no problems if everything is cooked thoroughly (sp?), this is where you need to plan your timing.

For us, with our food, everything stays in the camper. We use a pop-up. We camped at Disney last june for 10 days. In 2010 we camped at Myrtle Beach for a week in july/aug.(just as hot and humid as Fla in june IMO). We've never had a problems.
