I’m sailing in a few days with my parents who aren’t big drinkers but are interested in the Mojito and Caipirinha tasting. If they only book for one of them for the tasting can they share drinks with each other or do they both have to book in order to attend?

Plenty of people just tase the drinks and don't finish them all. It is a tasting, after all!

They do both have to book, but it’s not a requirement that you consume all of the drinks!

We booked a cognac tasting once and there was a family group of 6 (3 couples) who attended with us. They all booked and paid but one of them clearly did not like any of the drinks at all. She'd take a sip, wrinkle her nose and say "ick" and then pass it to one of her companions. After the first one she made it a competition as to who got it (her husband got the first one). They were a very lively bunch! She didn't seem to mind at all that she had to pay but didn't really drink and did say that she enjoyed the history and information about it. The rest of her family certainly didn't mind :)
