Lordie, where do I start? Let's do the Magic Kingdom first.

Stitch's Great Escape- Everyone has an opinion about this attraction- either you love it or you hate it. I personally loved it, but the "chili dog" scent was wayyyyy over the top. It's not totally dark inside, just dimly lit, and this is definitely a far cry from Alien Encounter, the totally freaky previous tenant. Stitch is an adorable little guy, even if mischevious, but the shoulder restraints are somewhat painfully lowered, so sit up straight, they'll stop when they hit you. He bounces on your shoulders, plays with your hair, and (ugh) spits on you, jabbering all the while in his childish pidgin. It's cute, but if your kids are scared of the dark, give it a miss.
Mickey's PhilharMagic- OK, I know what you're thinking... but this is possibly the one 3-D movie that won't make your kids wig out. Donald goes chasing the Sorceror's Hat through classic Disney movies. You do get sprayed with water in the Fantasia sequence. The effects are quite realistic and there's rarely a long wait.
Pirates of the Caribbean -The classic ride is even better now that Jack Sparrow has been added. Once again, almost never a wait. Er... a long wait, I mean.

Epcot!

Imagination ride- This is a neat little attraction, with Eric Idle starring as Dr. Nigel Channing. But his face on the moon? Creepy.
Test Track Very, very cool. The pavilion's interior is loaded with hidden mickeys, and the final straightaway is awesome. But this ride shouldn't put anyone off; it's actually pretty tame.
Mission: Space- A neat ride. The centrifuge version is actually much less intense than Disney would have you believe. But if you have a weak stomach, go for Green Team, or the simulator version.
Soarin'- Ho hum. Very tame, and while a neat feeling to be "flying", it's not visually interesting.

MGM!

Rock 'n' Roller Coaster- Exhilarating! The corkscrew is awesome, and I'd say this is the baddest coaster in Florida.
Tower of Terror- The 5th Dimension part is neat, but the drop is heavily hyped. Wrongly so, I think, because it's just a drop.
Sounds Dangerous- Drew Carey is always funny. This attraction features noises in the dark...scary.

Animal Kingdom!

Primeval Whirl- A neat little coaster. Mild and wild at the same time.
Dinosaur- Aaah! Scary! Rough! Bumpy! Too brief! Etc.!
Tough to be a Bug- a startling 3-D show. Keep kids well away.
Expedition Everest-Intriguing. Pretty tame in itself, but the Yeti looks scary. Goes backwards.

Disneyland!

Space Mountain- Rumor has it that this ride could take on a theme like that of the RnRC- this one taking you to the hottest concert in the galaxy. The simple flight-through-space version is still a hit.
Matterhorn- There's a new Yeti ride in Disney's collection, and it puts this one to shame. Lines often stretch all the way to Tommorrowland. This one needs FASTPASS.
Indiana Jones Adventure- Not heavily marketed, but this is probably the most cutting-edge ride in Disneyland. Obviously not a kiddie ride. Note that the line is often long enough to scare Indy himself.
20,000 Leagues Under the Sea- Remember this one? It's resurfacing (groan) in late 2007 as the Finding Nemo Submarine Adventure.

And finally, California Adventure!

California Screamin' - Lives up to its name. Quite a rush, but over too soon.
Grizzly River Run- A better ride than Kali River Rapids at AK. More visually interesting, besides which you run the chance of getting completely drenched.
Mullholland Madness- Neat coaster. It looks like you'll drive over the edge, then... swerve!
Maliboomer- the shortest ride at DL or DCA is also the tallest in either park, edging out Matterhorn and ToT. Lasts 40 seconds in its entirety.

Thanks for your review. I love hearing how some people don't like something and then another member comes on and it appeals to them. I guess that is why WDW is a great destination. There is something for everyone.
