Taking Adult Kids/Boyfriends - Bonnet Creek or Windsor Hills?

We are a traveling family of 7. We've taken our 3 daughters to Disney many times over the years - stayed both onsite & off (it's been over 5 years since we've all went). Now 2 are bringing longtime boyfriends with (who have never been to WDW). We need space, so I'm planning offsite the 2nd week of January. I can get a 4 bedroom at Windsor Hills much cheaper than a 3 bedroom at Bonnet Creek. If we get a 3 bedroom, that means our college student gets the pull out sofa in the living room. We plan to rent a van. My questions are;
Is Bonnet Creek worth it?
Are all the pools & things open late at Bonnet Creek in January (we will be at the parks during the day, so I want to be sure there are options at night)?
Can they Uber back to Windsor Hills (they'd have to pay for a Bonnet Creek shuttle anyhow)?
I've always used VRBO to book condos.. are there better ways to book these?

I have never stayed at Bonnet Creek so I can't comment on it. We have stayed at Windsor Hills 3 times and enjoy it there. With your large group I would think the more room the better so I would choose Windsor Hills.

I have stayed at both with largish groups. I would say if you are spending all day in the parks, go to Windsor Hills. I love Wyndham Bonnet Creek so much - but if you don’t anticipate spending much time there, you might as well go with the cheaper option!
 

Although I enjoy the nice timeshare resorts more than a lovely Windsor Hills home, in your situation I would do the house. I have a 23 year old and look for accommodations where he has a real bed even if it is just him and us (too many times those pull out beds just aren't that comfy and a common area that is available for early risers and those up late is heavenly). And if he is bringing a significant other, we want them to have their own bedroom/bathroom to use, not share with us. Uber and Lyft are easy/peasy anywhere in Orlando.
 
I've stayed in the 4 bdrm at WBC. I highly recommend it. I rented mine thru ebay. Check prices at vacation strategy as well. The number one reason I enjoyed WBC with a large party is the BATHROOMS. 4 Bathrooms!!! There were 9 of us and it made getting ready soooo much easier. Every sister had their own bathroom to share with s/o and/or child. It worked out great!!!! Our family is totally against anyone sleeping on a pullout sofa if it's more than one night. Everyone agrees to pay extra for a real bed.

The 4 bdrm at WBC is HUGE around 2000sqft. It's more like a 4 bdrm luxurious penthouse condo with a HUGE balcony the length of the condo. Plenty of room and privacy for the couples.
 
Another vote for Windsor Hills. Try www.welcometowindsorhills.com. That is the resort's website with links directly to the owners. VRBO has become nothing but a money grab for the company. You will get the same properties but pay way more in fees and get nothing in return.

No not really. Trip insurance is a separate fee. They only act as a gateway between you and the owner. They can't make the owner do anything or give you anything or force a refund, etc. They charge a percentage of the rental to the customer as a fee. It works out to being something like what you would pay for an additional night's stay. They put no more due diligence into vetting an owner than you would by communicating with them online or by phone.
 
I like Bonnet Creek much better than Windsor Hills, but since it comes down to a sofa bed versus a real bed, I would pick Windsor Hills.
