Taking a Two Year Old on Rides... Questions

Sorry if this has been asked and answered already. If it has can someone please point me in the correct direction.
We are heading down in early January and our daughter will be 2 at the time. For the rides without height limits that only have two seats, will she be allowed to sit on one of our laps or squeeze between us? At her most recent checkup she measured ~38" tall, which opens up some opportunities for some other rides as well. Although I am doubtful she will be interested in them, but we shall see how it goes. I would imagine anything with a height requirement would mean, you would be required to sit in a designated seat.
I know each child varies, but if you have recommendations of things that went well with your little ones I am interested in hearing about it.

What rides do you have in mind? If it is a molded seat then they will most likely not let her sit on your lap. If it is a bench type seat like Haunted Mansion, Little Mermaid, Nemo, etc then yes they can sit on your lap.

So rides like Peter Pans Flight and Toy Story Midway Mania are a no go if I remember correctly. Thanks for the info! For some reason I forgot about this when planning out our days in the parks.

Peter Pans flight is fine as it is a bench seat.

Toy Story Midway Mania is fine. I saw 4 shoved into one side of a car this weekend. 2 adults each with a Toddler right next to them. The problem is the kids or the adults don't get to play.
 

I had DD, who was 13mo at the time, on my lap for Toy Story Mania. On a previous trip we brought DS, who was ~18mo at the time. Didn't have any problems with them on rides. I wouldn't worry about it. I remember DS sat beside me on a few rides - most notably Dumbo and the Magic Carpet ride.
 
I wouldn't be too concerned.

We are a family of 5 and ride 3 and 2 on almost everything. The only attractions I can think of that are absolutely only two are rides with height requirements (Everest, RnRollercoaster, etc). Some are designed for two (like Buzz, Toy Story, Spaceship Earth), but three are allowed to ride in one row.
 
Our 2-year-old sat on someone's lap on most rides on our August trip and it was fine on all the rides without a height requirement. She was tall enough for Barnstormer but we didn't try it, mostly because we knew she wouldn't sit in the seat. Since your DD is 38" she is tall enough for Barnstormer, Mine Train, and Kali Rapids - if you decide to do any of those, she will be required to sit in her own seat with the restraint on.
