Where is a good place to sit and have an adult beverage in all the parks, excpet Epcot (I've got that one covered!)?

You won't be able to do that at all the parks...MK is alcohol-free.

For the MK part we hopped on the monorail over to the poly and had drinks in the Tambu Lounge. Here is a drink menu from all ears: http://www.allearsnet.com/menu/men_tbl.htm

In MGM 50's Prime Time has bar we like. AK there's DAWA Bar in Africa or you could always visit the bar at Rainforest Cafe. We like the Outer Rim in the Contemporary (4th floor) nice view. Actually for MK any of the three hotels on the monorail have nice bars.

At AK we use the bar in africa, it is a nice quiet place. (Might be really quiet if Tusker house is closed then.)
