My original plan for DGSs birthday was dinner at Teppan Edo but, at least currently, it is not going to be open. Afraid Morimoto might be a little too upscale for him šŸ¤·ā€ā™€ļø Any other sushi choices?

The sushi at Morimoto is very good (as is all the food) and while the restaurant is very beautiful its also very comfortable. We've taken our daughter and there are always lots of kids in there.

Another option though would be Kona Cafe in the Polynesian. Their sushi is pretty standard, but good.

I’ve only been to Morimoto once when it first opened so my memories are fuzzy. Perhaps a better solution than I thought

And he is 8, not yet a sushi connoisseur nor do I think we can get a reservation at a hotel at which we are not staying at this point.

I think you can still do ADRs at other resorts/hotels, even if you're not staying there.
