Haven't done this for years I think I'd 3/4 fill the glass with soda, gently add the scoop of ice-cream and maybe trickle a little extra soda if needed.
But like I said my kids are not enthused by the idea so I've not done it in a loooooong while (like, since I was a teenager)
I tilt the glass and add the soda against the inside of the glass. This way, the soda dribbles down the side instead of hitting the ice cream. It is somewhat less messy.
