I have to bring a dessert to a bbq tomorrow. There will already be a fruit salad so fruit it out, but I need a good summer dessert.

What are your favorites?

klondike bars (or other frozen treats)
 
Jello fluff - but it does have pineapple and oranges in it, so that might be out? You can vary the flavor of jello to suit you (I like orange better). You can serve this immediately or make it a day ahead.

1 cup sour cream
1 3 oz. box lemon flavored jello
1 12 oz. container of Cool Whip, thawed
2 cans (11 oz. each) mandarin oranges, drained
1 can (21 oz.) pineapple tidbits, drained

Place sour cream in a bowl. Sprinkle with gelatin and stir until blended. Fold in the oranges, pineapple and whipped topping. Yield: 8 servings.

Blueberry/Pineapple Creamcheese Pie:

This is basically a refrigerator pie. Normal pie dough. Baked and cooled. You will cream one brick of cream cheese with some sugar, a little milk, and crushed pineapple. Spread that on the pie crust and refrigerate to harden. You make a blueberry pielike filling with canned blueberries, their juice, the juice from the pineapples. Thicken that in a saucepan, once it cools to room temp, pour it over the creamcheese filling and refrigerate again. OMG. It's the best. It's from the old red betty crocker cook book.

ANY crumble or crust or cobbler with Vanilla Ice Cream.

Whatever fruit is in season where you are. Bake it with either an oat based crumble thing or biscuit like cobbler things and serve with real vanilla ice cream. It's easy and always a winner.

2 containers of Cool Whip

Bottle of magic Shell


In a 9x11 tin, place ice cream sandwiches side by side to cover the whole tin...you may have to cut some in half. Then spread a layer od Cool whip over them, another layer of sandwiches and then more Cool Whip. Pour the Magic Shell over the top and move the tin around so it spreads over the whole top. Let it harden for about 5-7 minutes, cover with tinfoil and then put in freezer for about 8 hours or until you are ready to serve. It's so easy and such a hit:thumbsup2
 
Eclair Pie

1 Box honey graham crackers
1 large box or 2 small prepared instant french vanilla pudding (1/2 the milk it calls for, then fold in small tub cool whip)
Tub chocolate fudge icing

In pan put 1 layer crackers, then pudding, repeat, ending with crackers on top when you run out of pudding. Nuke the icing about 15 seconds, stir and spread over top of final graham layer. Chill in fridge at least 2 hours. Graham crackers need to soften a bit. Yummy!

The best thing is you can change all ingredient to the fat or sugar free versions and it still tastes good.
 
I was going to suggest lemon bars too. :) I've done lemon & blueberry bars before, they are extremely good but I don't have a recipe, I just do a search for lemon/blueberry bars. :)

Last weekend I took this to two places and it was a hit each place and all was bought at Costco for less than $20 with enough for both parties with 4-6 adults and numerous children.

Strawberries
Raspberries
Madelines--cake like butter cookies
Whipping cream with a little Vanilla

I just whipped up some cream added some Vanilla, and put the rest on a plate.
It kept really well in our cooler too for the picnic day

People could take what they wanted. Sort of like Shortcake, but sort of not depending on what you choose.
 
last weekend we had a cookout. I baked a brownie in a pizza pan. Mixed one container of cool whip with a pkg of cream cheese and once cup of powder sugar. Spread on top of brownie. We then covered it with blueberries, Raspberries and sliced strawberries. It was a big hit and super Yummy !
 
Strawberry Trifle.....

1 lrg box of vanilla pudding
1 lrg container of cool whip
1 can 14 oz crushed pineapple
1/2 cup of coconut
1 pkg strawberries
1 angel food cake

In large bowl empty can of crushed pineapple with juice...add vanilla pudding dry mix and stir. Then fold in the coconut and cool whip. Cut the angel food cake into cubes, slice strawberries and in a large clear glass bowl start layering...first angel food cake, then cool whip mix then strawberries and repeat. It's yummy and looks pretty in a glass bowl, I actually use an oversized brandy glass bowl.
 
Root Beer Float Cake - a huge hit! :thumbsup2

Root Beer Float Cake

1 package (18 1/4oz.) white cake mix
1 and 3/4 cups COLD root beer - divided
1/4 cup vegetable oil
2 eggs
1 envelope whipped topping mix (like Dream Whip)

Pre-heat oven to 350 degrees. Grease a 13"x9"x2" baking pan.


In mixing bowl combine dry cake mix, 1 and 1/4 cup of the root beer, the vegetable oil, and the eggs. Beat on low speed for 2 minutes. Pour into a greased 13"x9"x2" baking pan. Bake at 350 degrees for 30 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on a wire rack.

In a small mixing bowl, combine the whipped topping mix and 1/2 cup of root beer. Beat with electric mixer until soft peaks form. Frost cooled cake.

**Store in refrigerator.

Serves 12 to 16

You could probably try just about any flavor of soda you would like instead of root beer soda is that's not a favorite of yours..
