Sugar Cookies from Jersey Girl.......sounds easy to me

1 1/2 cups powdered sugar
1 cup margarine at room temperature
1 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cream of tartar

Mix together powdered sugar, margarine, vanilla, almond extract and egg. Sift together flour, baking soda and cream of tartar, stir into powdered
sugar mixture. Form into a log, wrap with plastic.

Chill in refrigerator for three hours. Remove plastic wrap. Cut 1/4 inch slices. Sprinkle with granulated sugar before baking. Bake at 375° for 7-8
minutes on a lightly greased cookie sheet.
 
This sounds like what I was looking for, but we don't like almond extract very much. Would it be a problem to substitute vanilla?

I see an experiment coming on -- dividing the dough in 1/2 and making some with vanilla and some with almond. Then I will have a taste test to see the difference. I love both flavors.
