We are going in a year and are planning a trip for two, adults, as a celebration of our anniversary and retirement. We both enjoy Disney immersion but are not sure whether this character dining would be a good fit for us. Since it is pretty expensive we want to be sure it is worth it.

We went for the first time in January and the characters were great. The food was hit and miss. If you don't care about the character dining aspect of it my recommendation would be skip it. Unless they change the menu entirely it's a one and done for us.

Two childless adults here as well, and we loved it. We were there in February.

I'll throw a wrench in your plans. We were 4 adults (2 in our 40s, 2 in their 70s) and we did Topolino's for brunch and it was fantastic! Highly recommend. The food was excellent, the character experiences were great, and we never felt weird or out of place for being there without kids.

All that said, if you think you would enjoy the food at Storybook, then go for it. And if you're not sure, then consider Topolino's for breakfast/brunch one day.
