WOW!! You guys are way ahead of me and I go to WDW weeks before you! We have kind of the same dilemma, too many restaurants, too little time. But I really wanted to add my thoughts to your list!
Emeril's - haven't been there, can't comment
Boma - for breakfast, excellent choice, yum yum food, just steer away from it for dinner! Earl is very yummy and such a steal - very good value for money! Tell Mark to get the breadpudding -
CP - we are returning there because of you - so I guess that says it all
Plaza is the same!
Kona for breakfast - yes, really good!
Via Napoli - if you remember my dining review - it is SUCH a hit! You NEED to put it on your list!
Captain's Grill - very quiet, but nice restaurant, good food and reasonable! Easy to access from Epcot
Ohana (for dinner...don't like Stitch so we won't do breakfast) has been hit or miss for us lately and I don't think we'll return any time soon. Best part of the meal for us - breadpudding and you can ask for it at Kona!
Tusker House for the Nemo seating, haven't been, haven't given it much thought, so can't comment
Wolfgang Puck Express, is the one restaurant I will not comment on as you know what we think of it!!!

Hm, now that I think of it, that looks like kind of a comment! Mama Melrose - always loved the food and never had bad service. Once we had a server who must have been a teacher - the way she looked at us ..... 50's Prime Time - never been
LeCellier - always a favourite for us, but remember it is going to be 2 credits for dinner come March!
