Am I correct to assume the prices increase the week preceeding Easter and the week after? From my research the price seem to jump a thousand or 2.

Yes, but it's not as bad an increase as Christmas or New Year's.

Good news to me ;) my kids school takes spring break the first week of April, in 2019 Easter is the 21st. So hopefully our cruise will be a lot cheaper, here's to hoping!

It should be less than the week's before/after Easter but it is still Spring Break for many in the US and DCL knows this. Try to book the cruise as soon as it is released for the lowest price.

That is my plan KristiMc. :) we went on a spring break cruise in 2016, great weather. Plus we booked it early, then they announced the Star Wars day at sea, then the prices almost doubled. Perfect timing

You are absolutely correct. Another thing about when Easter falls the week before or after a cruise, is that they are typically block out dates so no discount.
