If you stay at more than one resort it needs to be two different reservations. You can't do a single split stay package. This means that you would have to do two down payments. If you want dining on both packages you would have to purchase at least one day park ticket on both reservations. This would make it kind of inefficient pricewise. One thing to consider is only doing dining on one part of the split stay and eating OOP for the rest. For park tickets you can get one for the full amount of days you want to go to parks, put it on the first reservation and it won't expire when your first stay ends - just 14 days after first use if you don't have the unlimited option.
Your idea is one excellent reason for doing a split stay. You can save a little money on a cheaper resort when you are doing intense park days then splurge a little at a deluxe when you want to relax a little.
