Split Stay Questions

Hi there! My apologies if this is the wrong board, but I'm looking for some help understanding an upcoming split stay my DH and I are planning for November 2018.

Here are the potential trip details:
November 22nd - Fly in and stay with in-laws at their house near the parks
November 23rd - Stay at POR Riverside (hopefully with a ROD)
November 24th - Stay at POR Riverside (hopefully with a ROD)
November 25th - Switch to Pop Century - the goal is to get the Free Dining Package (if we can and if these dates are eligible) and get the 6-night/7-day room and park hopper package with a 7-day Park Hopper.
November 25th-December 1st - Stay at Pop Century
December 1st - Fly home

If these are the eligible dates for FD, we'll need to have the tickets added to the second part of our split stay. However, does this mean we won't be able to use our park tickets on the 23rd or 24th? We'd likely do Disney Springs on the 23rd, but would like to go the parks on the 24th. I feel like it'd be pretty expensive to get a 1-day park hopper for just that day and cut the package down to a 6-day park hopper. How will this split affect any FP+ reservations? Any advice or thoughts on this would be immensely helpful!

Is there anything else I'm missing here? It's my 1st time trying to figure out Free Dining...there's so much to think about? And the first time together to WDW we did Split Stays, but we didn't really pay attention because we were so happy to be at Disney!

You are able to activate your package tickets up to 10 days early HOWEVER you cannot book fastpasses for any day until your package starts so you’d be at the mercy of what’s left the same day.

Ok, that is great! We were planning on one day of just kind of leisurely park hopping and/or one day of mainly strolling the Epcot World Showcase. If we can at least get into the park that's awesome. Thank you!
