split day at animal kingdom and epcot

so on our trip it will be me my mom my husband my brother and my 3 year old what we are considering doing is because we got the 4 day military salute tickets is taking one of our days and splitting it between animal kingdom and Epcot has anyone done this with any success also do you think its possible to really enjoy both parks in one day I'm considering making all of our Fast Pass for Epcot in the eveningand getting to Animal Kingdom rope drop to do the Expedition Everest Kali river rapids and the Safari those are the top three on our list I would also like to see nemo while we were there but that's about it for what we want to do in animal kingdom and Epcot I'm not even sure what I should make our Fastpass reservations for that evening does anybody have any suggestions to help with that as well I appreciate it
 
At Animal Kingdom you may want check out Festival of the Lion King.

For Epcot FP, since you have a little one you may want to get the Illuminations Fastpass. Most people take Soarin or Test Track because they are always busy but it's unlikely the 3 year old will be able to ride those.
 
I'm not familiar with your park tickets, can you hop parks?

If so... combining two parks is not a bad plan, either AK and Epcot or AK and HS. AK is usually a half day park for my family (or less). That gives you an extra day at MK.

At Epcot I would make FP for Test Track, Soarin and one other, could be Spaceship Earth, Living with the Land, Mission Space... depends on what your adults want to ride on. You may need to utilize rider swap with your 3yo for some of the bigger rides. Your child might like the boat ride in the Mexico pavilion it has a little Donald Duck in the mix. Also the Living Seas Pavilion is nice for kids, there is a Nemo ride there and Turtle Talk with Crush in addition to the big aquarium and manatees.

I love Epcot, make a dinner ADR for a fun dinner in one of the countries to soak up some atmosphere, many are really good. With your young one perhaps pizza at Via Napoli? Dining outside at Rose and Crown is nice too if you are going in warm weather. You might need a stroller when you get to Epcot too, it is a lot of walking.
