We are planning to go to Disney World from January 25th to February 1st, 7 nights / 8 days. There are 5 of us.

Initially I was thinking of getting 7 day tickets instead of 8 because on Feb 1st we leave Orlando at 1pm. This would mean we would leave the resort probably around 9:30 or 10am, not leaving anytime on that day for any park.

However, the difference in the overall cost is $50 from a 7 day to an 8 day ticket with dining. This would provide an additional 5 QS/TS/Snacks to use. I was thinking we could utilize the TS credits for CRT since that takes 2 credits per person, but then I am still left with 5 QS credits, which would be used for breakfast at the resort the day we leave would be my guess.

Would this be worthwhile since CRT costs $$$$ for a family of 5?

Dining credits are based on the number of nights of your stay. I don't believe it's at all based on the number of days on your park ticket.

^^ This is correct. The number of credits you receive on the dining plan will be based on the number of nights you stay at the resort. It won't matter if you have 7 day tickets, 8 day tickets, 2 day tickets, 32768 day tickets. If you're at the resort for 7 nights, you'll have credits for 7 nights.

Nights stayed at a resort NOT day of tickets, example 6 nights regular dinning plan will get you 6 table service 6 counter service 6 snack credits one drink mug per person on the dinning plan, every one over the age of 3 must have dinning plan that is staying in your room.. All credits are pooled together... lets say you have 2 adults and 3 kids that means when you check into the resort you have all credits to use on first day of your stay if you decide to use all 30 snack credits on first day you can.
