We just found out that DD has several allergies (including a class IV wheat allergy, class III egg, I peanut and I soybean) and we will more than likely be bringing quite a bit of her food/snacks for our trip.
Is this usually a problem, do I need a doctor's note or anything to bring it in?

There's no problem bringing food into the parks. You don't need a note from the doctor. If you plan on dining at any of the table service restaurants, have the allergies noted on your ADRs. When you arrive at the restaurant, the chef will come to your table and discuss safe food options. You'll also be given phone numbers for the various restaurants if you'd like to call a few days ahead of your ADR to discuss dietary requests. They can even make something special if there isn't anything safe on the regular menu. At counter service restaurants there is a binder with ingredient lists of the various menu items. Just ask the cashier for it. Contact Brenda Bennett at Disney Dining (brenda.bennett@disney.com) for a list of ingredients at CS and snack carts to help you plan ahead. Disney is terrific about helping people with allergies and other dietary restrictions have a happy and safe time at their dining establishments. :goodvibes

Besides what was already posted, if you check out the disABILITIES FAQs you will find several links to past threads about food allergies that should be helpful.
