My family travels to Disney May 14th and 15th. We are doing Animal Kingdom the 14th and Magic Kingdom the 15th. There will be 7 adults and 7 kids (ages 5, 5, 3, 2, 1, 9 mo, and 7 mo). On the days that we are traveling the crowd level is predicted at a 2 out of 10 level. My main question. How much pre-planning do we really need to do on a crowd rating of two with so many kids that are so young? We had planned on making dinner reservations and naps are a must. So far those are the only two definite plans that we have made.
Our dining plan includes one table service, one quick service and one snack.
Any recommendations on where to eat? To fast pass? If so and what?
None of us have a "type A" personality... disney planning has gotten a bit intense!

If the little ones are not afraid of characters, then eating at the Crystal Palace in Magic Kingdom might be fun for them. The have character meals for breakfast, lunch and dinner. The kids would get to meet Winnie the Pooh and friends. As for fast passes I'd go with Peter Pan, It's A Small World, Dumbo. At Animal Kingdom they have a Character Breakfast and I think Lunch too with Donald at the Tusker House. I'm not sure about rides at AK for them but they might enjoy the Nemo and Friends Show and perhaps the Kilamanjaro Safari Ride (sorry about the spelling).
 
With the crowd levels that low, you probably don't have to plan as much as otherwise, but I'd definitely get TS reservations and take advantage of FP+.

For AK, I'd do flame tree bbq for QS lunch. I'd do dinner at one of the hotels. Maybe at Animal Kingdom Lodge - Sanaa or Boma? Maybe use FP for the Mickey/Minnie meet and the Kilimanjaro Safari? The third would depend on whether your whole group is staying together or not. For the kids, there probably aren't others that are worth fastpass, so you could pick randomly or let the adults use them for Everest or Dinosaur.

For MK, I have TS at the Contemporary or Ohana at the Polynesian. QS at any of the places in MK. For FP, I would just pick any three of your must-dos that are generally popular (Peter Pan, Jungle Cruise, Buzz Lightyear, Splash Mtn, Big Thunder Mtn, or one of the character meets would all reasonable). Put them in the afternoon or evening. Even on light crowd days those get lines late in the day. Why stand in line for longer than you have to...

Have a great trip. I hope the crow predictions are right!
 

I'm not sure what crowd calendar you looked at but easywdw is showing those two days as 5 out of 10 and they are pretty accurate. That said I would get fast passes. With the age of everyone in your party saying what fp to get depends on who will ride what rides, does everyone ride the coasters things like that. As for food if you want to eat in the parks Tusker house is a nice ts character buffet that has something for everyone. My family like pizzafari for a cs. at mk crystal palace or liberty tree tavern are good ts, while columbia house is a nice cs that has an upstairs that is quiet for a nice get away from the craziness of the parks for a bit.
