Machacado con huevo is my husband’s favorite Mexican breakfast. I don’t make it too often because of the salt content.

Yep, the eggs and beef together are just a perfect combo…!!!!!
Breakfast tacos of just chopped beef and scrambled eggs from Rudy’s are a close second, but nothin’ beats the machacado…!!!
