Because everything is good with baconWe’ve made it a couple of times and everyone just eats the crispy onions and leaves behind the beans. I went back to our traditional green beans cooked in bacon grease and they get devoured. So I stopped bothering with the casserole. Maybe it would be different if it had been a family tradition from either of our childhoods?

Fresh beans are almost impossible for me to come by now but I do love the colour they add to the table so I use flash-frozen uncut ones (green and yellow together) sautéed in olive oil and garlic with a few cherry tomatoes thrown in until they blister. Very nice!
The casserole used to be a tradition inherited from my DH's family and we enjoyed it for many years. But now we have to make very plain side dishes to keep everyone safe.
