I don't really make a big deal over celebrities, especially if they are just out and about and not at a publicity event. I have met a couple of them, mostly minor, local folks. I feel like a knowing nod and smile is enough for the most part. I did once get to speak with Stan Lee on the phone, and also once had him sign a poster at a trade show. I also saw Adam West at that trade show, but the line for signatures was too long byt the time I got to him. I just remember the guy next to me gave me a look and said, "Dude, it's Batman!" Yes, indeed it was.
 
My family has a pretty high geek-factor, so I've been pretty lucky to have met a few celebrities over the years. In one of our hobbies, we attended and worked for national conventions where celebrities were invited. One of my favorite people we met was Buzz Aldrin. Even though he was older, he was still so excited to talk about space. My kids freaked out over Sgt Slaughter and Roddy Piper when they were younger, and have met a few other wrestlers over the years. I also attended an English teachers' convention with my daughter once and got to meet some great authors, such as Rick Riordan and Laurie Halse Anderson. Our family has attended several comic cons where we've meet a lot of old and new actors. DH loved meeting Adam West and Lee Meriwether. When Adam West greeted him with "Hello, citizen!" with Bat-man's voice, I thought he was going to collapse. DH also wanted to meet Elvira; however, I'm the one who talked to her the whole time. DH still says I stole his moment. I loved meeting Jason Momoa (even though he was pretty hung over at the time). David Tennant and Rose Tyler were really cool and had a blast meeting people. The most humble and down to earth actor EVER was Alan Tudyk. He was such a nice guy and made you feel like the celebrity as you talked to him. Michael Rooker is really fun and personable too. And... William Shatner is ALWAYS there! :) Comic cons are a lot of fun and it's so cool to see celebrities who really enjoy meeting their fans.

We've seen a few celebrities at Disney, but we've never approached them. Seth Rollins did notice our kids recognize him and smiled as we were like "No! He's here with his friends!"
 
Met many celebrities over the years in my work. For most of my career "selfies" were not a thing so taking a picture was not the norm. Got a few autographs.
Met Raymond Burr, Olivia Newton John, Dr. Joyce Brothers, Alison Arngrim, Lou Ferrigno, Jimmy Carter, Ronald Reagan, Jerry Brown, Rob Schnieder, Jay Leno to name a few off the top of my head.
 
Lots of Rock stars from the 70s/80s/90s, got some photos but I'm not sure where they are (here in a box somewhere.)

I've never met anyone in the wild. Everyone was via a meet & greet/convention type setup that was planned with the intention to meet them etc. The favorite was probably Patty Duke when she came to my town in the 90s to discuss one of her books and had a signing. Photo with Robert England is another favorite too. One of my class projects was on my collection of auto graphs.
I did meet the author Avi in 5th grade for something like this -- he spoke to our elementary school reading class. He'd only written 6-7 books by then, and no one had heard of him.

Also went to a Garrison Keillor book signing.
 
Stood in line to get Mick Schmidt’s autograph.

While in St. Thomas, Tom and I went on a snorkeling excursion. During that time I was chatting with a husband, a wife and their two children. The wife and I had many interests in common and I really enjoyed our talk.When we were leaving, the husband took me aside and told me that his wife would never mention it but she was Eileen Collins a pilot and an astronaut.

I don’t know how many. I used to go to a lot of concerts. And if baseball players count, that drives the number up farther.

Making sure I have my info correct... I meet the man attributed to the quote... HOWEVER !!!! 2014 somewhere they FOUND history that Andy Warhol did not make the comment

Similar to as mentioned above by @slo, @WDWEPCOT and @hertamaniac I have had a lot of encounters with auto racing celebrities, specifically in NHRA drag racing. That's a big part of going to watch those races, the ability to meet the drivers. Two of my really 'treasured' meetups were with the 'king and queen' of drag racing, Don Garlits and Shirley Muldowney. Anybody who follows auto racing, and NHRA in specific, know those two. And right up there in that 'league' of driver, John Force, no picture though. Like @WDWEPCOT, have met and chatted a bit with Antron Brown along with many others over many years.

And then going back to the late 1980's, the firm I was with sponsored the MLB 'Old Timers Series'. The firm managed the MLB pension fund. The Series played an 'old timers (all retired, mostly Hall of Fame players) once in each stadium during the year. When they came to Chicago, (twice, Cubs and Sox), about a month or so apart, the players would come into town on Saturday and stay at a Downtown hotel. There would be a real fancy dinner for the old timers, some spouses that maybe came along and some people from my firm, me included. Vince was about 10-12 at that time and played Little League (good player too, if I may say so, ha). We got to sit at one of the dinner tables and schmooze with the players. I was awe struck, Vince not as much, he didn't really know wo these guys were.

Then on Sunday morning, at the same hotel, a very fancy brunch for the players. Vince and I went to that also. Same thing, schmoozing. Then the players went to the park on a bus, we drove to the park. We were able to stay in one of the skyboxes for the game, after being on the field during batting practice.

We were able to do both Cubs and Sox each year for 4 years in a row, until they discontinued the program. After many years now, Vince realizes who those players were and looks back on those 4 years with a smile.

Lastly, over the past 25 years, I've met up with many folks from here on the DIS, at WDW, DL and lots of DIS meets. To me, they're all celebrities.

I forgot to add... Carleton Fisk. I was the editor of my community college newspaper and one of my professors lived next door to Fisk. We went to his house to interview him after the 1975 World Series. People say he can be pretty brusque, but he was quite nice to us. Here's a picture of him in the 12th inning of game 6, waving his hit "fair" and winning the game for the Red Sox! It was pretty awesome, and is still remembered as one of the top World Series games!

Never really met anyone super famous. But I've met a lot of musicians. Some are from smaller bands. The ones I've met the most would Ok Go and Rooney. (One member of Rooney has done a little acting, most notably in Disney's The Princess Diaries.) Went to so many of shows in the early 2000s. Hung around before/after the shows. Helped pass out CDs. Stuff like that. Good times.

OK, if this helps, my meetups include: Paul McCartney, Ringo Starr, Elton John, Rolling Stones, Aerosmith, Tina Turner, Pete Townshend, Joe Walsh, Billy Preston, Billy Joel, Harry Chapin, KC (of the Sunshine Band), Gwen Stefani. Any of those names ring a bell? ;)

I saw Fisk at a restaurant in Chicago when he was with the white sox. I apologized for interrupting him just saying hello. He not only was a jerk but denied being Carleton Fisk.
 
I walked into John Travolta while rushing to get to school one day (filming was going on near where I went to college) and then saw him again later that day when my class was at the hotel he was staying at (he confirmed to my teacher that I was trying to get to class quickly), which got a laugh from my teacher.

My husband saw from a distance Betty White, Ryan Reynolds, Sandra Bullock while they were filming The Proposal.

While he was flying, he also got a glimpse of Jeffrey Dean Morgan filming a scene for the Walking Dead spinoff.

The Garlits museum is VERY close to where I live. It's a treasure trove of drag racing history. The engines section(s) is truly remarkable.

I think Big Daddy used to live at the home out front. I only went once, but spent a whole day there in admiration of the ingenuity and engineering marvel. I really should go back given the proximity.

My son was classmates in school for a couple years with LeBron (Bronny) James Jr. We saw LeBron Sr at a few events and his mom, Savannah, dropped him off at our house one night for a sleepover.

Very neat. I've never been there but have seen many pictures over the years and several fairly in-depth video tours of the museum. He syre was an innovator over the many years, akwsys willing to try something new, to go faster, to go quicker.
